Abstract

Tujuan penelitian ini adalah untuk mengetahui karakteristik organoleptik nugget dari daging itik jantan yang yang diberikan perlakuan curing nanokapsul jus kunyit konsentrasi 3% dibandingkan dengan kontrol. Daging itik yang digunakan terbagi menjadi dua, yaitu daging itik jantan kontrol dan daging itik fungsional (hasil pemeliharaan dengan ditambahkan 4% nanokapsul jus kunyit dalam pakan). Kedua jenis daging ini dibuat olahan nugget itik jantan dengan dua perlakuan : (P1) nugget itik jantan tanpa curing dan (P2) nugget itik jantan dengan perlakuan curring nanokapsul jus kunyit sebanyak 3%. Selanjutnya diuji organoleptik dengan menggunakan 25 orang panelis semi terlatih dengan parameter: rasa, aroma, tekstur, warna dan keseluruhan. Data yang diperoleh di uji dengan t-test menghasilkan perbedaan yang nyata (P < 0,05) pada variabel rasa , aroma, warna dan kesukaan keseluruhan nugget serta berbeda tidak nyata (P > 0,05) pada variabel tekstur. Berdasarkan hasil dan pembahasan maka dapat disimpulkan bahwa penambahan nanokapsul jus kunyit sebesar 3% sebagai bahan curing dalam pembuatan nugget itik dapat meningkatkan kualitas organoleptik meliputi rasa, aroma dan warna nugget itik.

Abstract

The purpose of the study was to determine the level of understanding of dairy farmers towards cases of Mouth and Hoof Disease (FMD) which includes knowledge, attitudes, and performance of farmers. The research method used is the survey method. The samples used in this study were 50 dairy farmers in Lembang District, Bandung Barat Regency who had at least 3 years of farming experience. The collected data is tabulated and analyzed in a quantitative descriptive manner. The results showed that farmers' knowledge of FMD disease that does not understan and Lack of Understanding as much as 0%, quite understand 18%, understand 42% and understand very well 34% ,and perfect as much as 6%. The prevention attitude carried out by farmers shows Not Good as much as 8%, Less Good 20%, enough as much as 46%, good as much as 26%, and Very Good 0%. The performance of farmers in handling FMD disease is not interested 0%, lack of interest 6%,  the same 10%, Interest 26%, very interested 50%, deepening interest 8,% and very deepening as much as 0%. It is concluded that, the level of understanding of dairy farmers which includes knowledge, prevention, and handling attitudes in Lembang District, Bandung Barat Regency is quite good.

Abstract

This study aims to determine the effect of litter size and mother weight on dairy goat milk production. The research method uses the survey method, data collection is carried out by purposive sampling with the criteria of Kaligesing dairy goats that have been lactation as many as 100 tail. The variables analyzed were the identity of the farmer, litter size, milk production and mother weight. Data analysis was carried out with descriptive analysis and simple correlation analysis. The results showed that the average litter size was 2.04 heads, milk production was 896 ml or 0.9 liters and the parent weight was 44.77 kg. The results of the correlation analysis showed a value of 0.662 or there was a strong relationship between the litter size and the weight of the mother to goat milk production. It can be concluded that the litter size and mother weight have a strong influence on the milk yield of dairy goats.
