Abstract

Teknik deboning pada karkas unggas menghasilkan daging yang relatif kecil dan tidak beraturan. Perlu teknologiuntuk meminimalkan kerusakan kualitas daging unggas tersebut. Teknologi restrukturisasi daging merupakanteknologi untuk memperbaiki kualitas daging yang berukur kecil-kecil dan tidak beraturan dengan melekatkankemabali menjadi ukuran yang lebih besar dan produk tersebut sering dikenal dengan nama nugget. Tujuan penelitianini adalah untuk mengkaji kualitas produk nugget hasil restrukturisasi berbagai daging unggas dan sekaligusingin diketahui pengaruh jenis daging unggas (itik, entok dan tiktok) terhadap kualitas nugget. Metode penelitianmenggunakan rancangan acak lengkap (RAL) dengan 3 perlakukan yakni T1 = nugget itik, T2 = nugget entok danT3 = nugget tiktok, dengan pengulangan masing-masing perlakuan sebanyak 4 kali. Hasil penelitian menunjukkanbahwa hasil restrukturisasi daging menjadi nugget menghasilkan kualitas fisik (pH dan DIA) yang berbeda nyata(P<0,05), sementara nilai aw tidak nyata perbedaannya dan berkisar antara 0,893-0,913. Nilai pH T1 paling tinggidiikuti T2 dan T3 (berturut-turut 6,39; 6,26; dan 6,01). DIA pada T2 (82,81%), T3 (82,29) dan T1 (81,81). Kualitaskimia nugget menghasilkan kadar air paling tinggi pada T2 (60,24%) (P<0,05), diikuti T3 (59,24%) dan T1 (58,32%). Kajian terhadap kadar protein nugget hasil restrukturisasi daging itik, entok dan tiktok menunjukkan hasilyang sama dengan kisaran antara 18,49 %-19,51 %. Kadar lemak secara keseluruhan diantara masing-masing perlakuanberbeda nyata (P<0,05), berturut-turut, 8,79%; 6,59% dan 5,66%. Kajian produk nugget terhadap penilaianpanelis menyangkut warna dan citarasa, nugget itik berbeda nyata (P<0,05) dengan perlakuan lainnya. Warnanugget yang diberikan panelis berkisar antara 5,30-6,30 sementara kisaran citarasa antara 5,05-6,20. Tekstur nuggetsecara keseluruhan diantara masing-masing perlakuan berbeda nyata (P<0,05), berturut-turut, 5,00; 5,85 dan6,45. Kesimpulan hasil penelitian ini bahwa restrukturisai berbagai daging unggas menjadi produk nugget memberikanpengaruh berbeda pada kualitas fisik (khususnya pH dan DIA serta nilai aw tidak terpengaruh), kualitaskimia (hanya kadar protein yang tidak terpengaruh) dan penilaian organoleptik nugget (tekstur nugget paling nyataterpengaruh).

Abstract

Protection systems play an important role to maintain the reliability of distribution line. Over current relay (OCR) is one of the equipments used as a protection line of 20 kV distribution. Feeder of Bukit Jati is equipped over current protection relay equipment installed in Recloser of Banda and relay in the substation feeder. Based on the data of PT. PLN (Persero) APD Bali, there are 5 time-short circuit disorders which one of them tripped the Bukit Jati feeder. Problems over current relay coordination failures can be overcome by analyzing the coordination of protection systems in the feeder of Bukit Jati. The analysis was done by recalculating the over current relay setting and create the coordination curve of the existing setting and compared it with the coordination curve setting according to the calculation result. The results of the calculation of instant recloser recycling settings obtained by 1.246 A with time multiple setting (Tms) of 0.11 while the value of the instant current setting of the feeder of 2.992 A with Tms of 0.38. Based on the simulation result using ETAP program, it is known that over current relay coordination has worked according to the protection zone when the noise occurrence behind the recloser bus did not result in a trip feeder.

Abstract

A study aimed at studying the performance and production of Balinese duck carcasses that were given rations containing biosupplement-based waste of rumen content, conducted in the village of Peguyangan, Denpasar, Bali, for 3 months. Four biosupplements produced in this study were 1) BR0 = biosupplement with fermented rumen based waste without bacterial isolates, 2) BR1 = biosupplement with fermented rumen based waste with superior 1 cellulolytic bacteria inoculant (BR3.5), 3) BR2 = biosupplement with fermented rumen based waste with superior 2 cellulolytic bacterial inoculants (BR3.3), 4) BRmix = biosupplement with fermented rumen based waste with combination of superior cellulolytic bacteria 1 and 2 (BR3.5 and BR3.3), The study was carried out with Completely Randomized Sampling/CR Design with 5 treatments and 3 repetitions, in which each repetition consisted of 5 Balinese ducklings aged 2 weeks. The treatment given was to ducks given supplemented ration with BR0; BR1; BR2; BRmix, respectively for the treatment of R1; R2; R3; and R4, as well as ducks that were given basal rations without supplementation (R5). The results showed that the performance of duck that received treatment of R2 was significantly better (P<0,05) than R1, R3, R4 and R5, while the carcass butching weight and fat weight were not significantly different (P>0,05) . Based on the results obtained, it can be concluded; 1) the performance of Balinese ducks receiving ration biosupplement of R2 is better compared to R1, R3, R4 and R5; 2) Meat production/ducks carcasses to the weight of butchery, carcass production, non-carcass parts and body fats are not significantly real between all treatments.
