Abstract

This paper concerns the synthesis of structured triglycerides containing different proportions and positions from medium- (M) and long-chain (L) fatty acids on a glycerol backbone. Structured triglycerides of MLM type were synthesized by utilizing canarium oil and incorporating caprylic acid (C8:0) as a source for the medium chain (M) fatty acids. Synthesis was performed through a two-step enzymatic reaction, with ethanolysis as the first step and esterification as the second step. Both reactions use the sn-1,3 specific lipase as a catalyst, which has specific activity at positions sn-1 and sn-3 of the triglyceride structure. The results from high-performance liquid chromatography showed that the stereospecific distribution of fatty acids in the structured triglyceride was 29.52±0.59 and 44.28±0.88 mol% of caprylic acid in the positions of sn-1,2,3 and sn-1,3, respectively. Furthermore, analysis of the physicochemical properties of both the native canarium oil and the structured triglycerides using an independent-sample t-test at p < 0.05 indicated that the two samples were significantly different for saponification number, iodium number, and average molecular weight. The results of this study showed that canarium oil can be exploited as a starting material for functional food application.

Abstract

Keberadaan depot air minum isi ulang terus meningkat, hal ini sejalan dengan dinamika keperluan masyarakat terhadap air minum yang bermutu dan aman untuk dikonsumsi. Salah satu syarat kualitas air minum secara kimiawi adalah batasan kandungan  nitrat dan nitrit. Menurut  PP No. 20 Tahun 1990 kadar maksimum untuk nitrat 10 mg/l dan nitrit 1 mg/l.Penelitian ini bertujuan untuk mengetahui kandungan nitrat dan nitrit dalam air minum isi ulang dapat dianalisis dengan pereaksi Gries serta mengetahui kandungan nitrat dan nitrit dalam air minum isi ulang di daerah Cibiru, Bandung.  Nitrit dalam suasana asam akan bereaksi dengan sulfanilamid  dan naftil etilendiamin dihidroklorida membentuk senyawa azo yang berwarna merah keunguan yang dapat menyerap pada l 535 nm. Sedangkan analisis nitrat didasarkan pada reaksi reduksi nitrat menjadi nitrit oleh granul Zn dan nitrit yang terbentuk bereaksi dengan pereaksi yang sama.  Dari hasil penelitian diperoleh  linieritas yang baik dengan nilai r  = 0,998, BD 0,09 bpj dan BK 0,29 bpj untuk nitrit, sedangkan untuk nitrat menunjukan nilai r = 0,998, BD 1,62 bpj, dan BK 5,39 bpj. Nilai akurasi dan presisi nitrit menunjukan nilai perolehan kembali 99,9% dengan koefisien variasi 2,6%, sedangkan untuk nitrat menunjukan nilai perolehan kembali 99,7% dengan koefisien variasi 2,7%. Hasil pengukuran sampel diperoleh kadar tertinggi nitrit (0,49 bpj) dan nitrat (7,60 bpj) yaitu pada sampel ke-10. Pereaksi gries dapat digunakan untuk analisis nitrat dan nitrit dalam air minum isi ulang serta semua sampel yang dianalisis mengandung nitrat dan nitrit tetapi tidak melebihi ambang batas yang telah ditentukan.
