Abstract

This study aims to was used to analyze the effect of substitution of Moringa oleifera and milkfish bones on the sensory evaluation and nutritional content of instant noodles with the best formula. This study design was Eksperimental with a Completely Randomized Design (CRD). There are four (4) comparative concentration treatments (control, 3:1, 2:2, and 1:3) which were carried out by hedonic tests of untrained panelists and children, then the best formula instant noodles are tested for nutritional content in the laboratory. The sampling technique used simple random sampling as many as 30 mothers of children under five and their toddlers who met the inclusion criteria. Analysis of sensory evaluation data used the statistical Kruskal-Wallis test with the further test Mann-Whitney, while the analysis of the nutrient content data used a different test (T-Test for carbohydrates, protein, calcium, iron, water, and Mann-Whitney for fat). Overall the results of the hedonic test of the parameters of color, flavor, taste, texture, and acceptance of instant noodles as a whole had a real or significant difference between the control and substitution formulas with a significant value of p≤0.05. The best formula from the hedonic test results was the F2 formula (substitution of Moringa oleifera and milkfish bones 2:2). The test results for the nutritional content of carbohydrates, protein, fat, calcium, iron, and water content also differed significantly between the control formula and the best formula (F2) with a significant value of p≤0.05. The conclusion of this study is there was an effect of substitution of Moringa oleifera and milkfish bones on sensory evaluation and nutritional content of instant noodles.

Abstract

Introduction : Stunting is a condition of growth disorders in children which is characterized by the child's height being lower or shorter (dwarf) than the standard age (TB/U). Stunting is a health problem that occurs when children do not get adequate nutrition for a long time (chronic). The purpose of this study was to determine the mother's knowledge about nutrition, to know the mother's feeding pattern for toddlers, and to prove the relationship between mother's knowledge and feeding patterns with the incidence of stunting and the incidence of stunting. Methods: The type of research used is analytic observational research/analytical survey. The research design used is cross-sectional. The population in this study were mothers who had toddlers in the working area of ​​the Dapet Health Center as many as 90 people (mothers of toddlers). Respondents in this study were 74 respondents, which were taken by purposive sampling technique. The independent variables in this study were mother's knowledge and feeding patterns. The dependent variable in this study is stunting. Data was collected using a questionnaire and children's height was measured using a microtoise and converted into a standardized value (z-score). The data were analyzed using the Spearman Rank Correlation test with a significance of < 0.05. Results: The results showed that there was a significant relationship between mother's knowledge and the incidence of stunting in toddlers aged 2-5 years (p=0.003), and there was also a relationship between feeding patterns and the incidence of stunting in toddlers aged 2-5 years (P=0.013). Conclusion: There is a relationship between knowledge and feeding patterns with the incidence of stunting in toddlers aged 2-5 years in the working area of ​​the Dapet Health Center.

Abstract

Background: Indonesia has three burdens of nutritional problems (triple burden), especially in adolescents, namely stunting, wasting and obesity as well as micronutrient deficiencies. East Java Province, the prevalence of obese adolescents aged 13-15 years is 13.3% and aged 16-18 years is 11.3%. Especially in Gresik Regency, the prevalence of thin adolescents aged 16-18 years is 9.41%, fat adolescents are 15.74% and obese adolescents are 7.47%. The problem of undernutrition and overnutrition, especially in adolescents can have a very bad impact on the sufferer. Objective: To analyze the level of nutritional knowledge, physical activity and nutrient intake with adolescents nutritional status of high school in Gresik District. Method: This research is a purposive sampling research with cluster sampling design. Respondents as many as 98. Data on respondent identity, knowledge of nutrition, physical activity and nutrient intake were taken through interviews with a questionnaire guide (Nutrition Knowledge, GPAQ and Recall). Antropometric data obtained through direct measurements. Statistical analysis was carried out bivariately with the Spearman Rank test ang multivariate with the Multiple Discriminant test. Result: The result of BMI/U are 73.5% good nutrition and 17.3% over nutrition. There is no relationship between nutritional knowledge and nutritional status (p value 0.323 > 0.05), there is no relationship between physical activity and nutritional status (p value 0.772 > 0.05), there is no relationship between nutrient intake and nutritional status (p value > 0.05). There is no relationship between knowledge of nutrition, physical activity, nutrient intake and nutritional status because the sig. value in the multiple discriminant test is > 0.05. Conclusions: There is no relationship between nutritional knowledge and nutritional status, there is no relationship between physical activity and nutritional status, there is no relationship between nutrient intake and nutritional status and there is no relationship between knowledge of nutrition, physical activity, nutrient intake and nutritional status.

Abstract

Food waste is still a problem in several hospitals in Indonesia because it is quite high, namely >20%. This causes the patient's food intake to be inadequate, resulting in length of hospitalization and increased patient morbidity and mortality. The purpose of this study was to determine the food waste in RSUD Ibnu Sina Gresik and its causal factors. This research uses descriptive analysis method with cross sectional study. The research subjects were 28 inpatients who were taken using simple random sampling technique. Data processing uses a visual estimation method (visual comstock) with a 6-point scale. The results showed that the most food waste of inpatients at Ibnu Sina Hospital, Gresik Regency was breakfast time with the most contributors being vegetables (>52%). The causative factors include in terms of food quality including a taste that is too salty, too sweet, bland, and an unattractive appearance. So it can be concluded that food waste is still relatively high and it is necessary to modify recipes or menus to increase the patient's preference for food.

Abstract

Adolescents are a group that is vulnerable to health problems and nutrition, especially in adolescent girls. The emergence of nutritional problems in adolescent girls can be caused by: by a extreem diet, physical activity, knowledge of nutrition, poor eating habits and lifestyle ( life style ) such as body image ( body image ). Besides that in the view of the young women a good body is a slim body so that many teenagers feel dissatisfied and not confident if the body is not slim then, this body image is the trigger level the emergence of eating disorders in adolescents. This study aims to identify and analyze the relationship between nutritional knowledge, perception of body image and disorders eating with nutritional status of adolescent girls in vocational high schools in Gresik Regency. This research is an Analytical Observational study with a Cluster Random design Sampling with respondents as many as 87 respondents who were selected by purposive sampling. The instrument used in this study was a nutritional knowledge questionnaire, questionnaire BSQ-34, EAT-26 questionnaire and food recall questionnaire 1 x 24 hours as additional data intake respondent energy. Data analysis using Chi-Square test and spearman test. The results shows that most of the respondents have good nutritional status (82.2%), there are (65.6%) respondents have sufficient knowledge of nutrition, there are (40.2%) respondents feel dissatisfied with their body image, there are (41.4%) respondents at risk of having eating disorders and eating disorders most of the respondents experienced a severe energy deficit with an average energy of 776 kcal. Test statistics between nutritional knowledge and nutritional status (p= 0.000), body image and nutritional status (p= 0.129) and eating disorders with nutritional status (p = 0.465). The conclusion, there is a relationship knowledge of nutrition with nutritional status of adolescent girls and there is no relationship body image, eating disorders with nutritional status of adolescent girls in Gresik Regency.
