Abstract

The aimed of this research was to investigate the best fish meal for triger thematuration of male Trichogaster pectoralis Regan. Male fishes were reared infloating cages (1m x 1m x 1m) that were placed in fish ponds, 8 females and 8males/ cage, 3 repititions. The fish were reared for 56 days and were feed ondifferent types of meal, P1 ( Tubifex sp), P2 (shrimp) and P3 (Vit E + shrinp).Parameters measured were maturity level, semen volume, spermatozoaconcentration, spermatozoa viability and spermatozoa motility. The best resultwas achieved at P3 (shrinp + vit E) as 16 fishes achieved 4th maturity level, semenvolume was 0,214 ml, spermatozoa concentration was 19,543 x 10 9 sel/ml,spermatozoa viability was 83,455 % and spermatozoa motility was 79,750 %.Keywords :Trichogaster pectoralis, semen volume, spermatozoa cooncentration, spermatozoa viability and spermatozoa motility

Abstract

The research was conducted to observe the consumer acceptance on thesmoke flavoured fish Selais (Cryptoperus bicirchis). The fresh fish was preparedby eviscerated and washed it with clean freshwater. The fish was soaked in liquidsmoke solution at the concentration of 2%, 4%, 6%, or 8% for 30, 60, or 90minutes. Then, the fish was dried in the artificial dryer at temperature 50 – 60 0Cuntil the weight was reduced up to 70% of the initial weight. The smoke flavoredfish yielded was evaluated by determining their consumer acceptance, pH value, content of total acid and content of total phenol. The result showed that the fishsoaked in the liquid smoke at the concentration of 6% for 60 minutes is the mostlyaccepted by consumers, indicated on the highest value of consistence, texture, odor and flavor. The pH value, content of total acid and content of total phenol are6,40, 0,269%, and 0,84%, respectively. Keywords: consumer acceptance, Cryptoperus bicirchis, liquid smoke, andsmoke flavoured fish

Abstract

This research was conducted in the Laboratory of Fisheries Technology,Food Microbiology and Food Chemistry, Faculty of Fisheries and Marine ScienceUniversity of Riau, Pekanbaru. The objective of this study was to evaluate theeffect of Andaliman fruit on quality of smoked catfish stored at room temperature.About 5 kg catfish weighing 700-800 g each was taken from a fish culture inKampar. The fish was hot-smoked in the smoke room for 10-16 hour. Fourgroups of smoked fish were treated with andaliman fruit liquid by snobing theliquid on the fish surface by 10%, 20%, and 30% of the fish might respectualy. The smoked fish then was oven-dried at 50-60°C for 6 hours. The smoked fishwas stored at room temperature for 45 days. Fish quality was evaluated forsensory quality, moisture, and peroxide value, at 0, 15, 30, and 45 days of storage. The result showed that the smoked fish treated with 30% andaliman liquid was thesuperior in sensory quality, and the product was still aceptable up to 45 days ofstorage. The moisture and peroxide value of the product at the end of the storagewere 18,06%, and 0,86 meq/g respectualy. Keywords: Andaliman fruits, quality, smoked catfish, room temperature

Abstract

To preserve feed with enough energy has become important inaquaculture industry. A functional feed hold promises in replacing antibiotic toincrease feed efficiency. Prebiotic is one of functional feed which enhance the gutmicrobes. It was widely known that gut microflora hold an important position asexogenous enzyme producers to the host. This study accomplished with fourpellet treatments which contains feed with antibiotic and prebiotics. Themicroflora population were determined by MRSA (in Vivo) and the fish werereared for 6 weeks. The major parameter were gut microflora population (cfu/ml)andlipid deposition as the form of feed energy. The result showed that pellet withprebiotic has high performance on gut microflora and lipid deposition, whichconcluded has better feed efficiency.

Abstract

The objective of this research was to determine the quality changes ofpangasius catfish dendeng packaged in a plastic bag of high density polyethylene(HDPE), low density polyethylene (LDPE) and aluminum foil during roomtemperature storage. Pangasius catfish weighing 250 – 300 each was taken from afish market in Pekanbaru. The fish was processed for dendeng; and the fishdendeng was packaged in a plastic bag of HDPE, LDPE and alumunium foil; andstored at room temperature for 35 days. The fish dendeng was evaluated forsensory value, moisture, fat and total mould every 0, 7, 14, 21, 28 and 35 days. The results showed that the quality of fish dendeng packaged in HDPE and LDPEdecreased faster than that packaged in aluminum foil. Sensory value packaged inHDPE, LDPE and alumunium foil at initial to the end of stroage was 6,85 – 5,89;6,88 – 5,64; 7,26 – 5,92. Moisture content, fat and total mould of fish dendengpackaged in aluminum foil during storage was 6,60 -11,40 %; 7,30 – 1,70 %;4,0 x103 – 5,9 x 104 respectively; dendeng packaged in HDPE was 6,90 - 11,70 %;9,60 – 1,80 %; 4,1 x 102 – 7,2 x 104 respectively; and dendeng packed in LDPEwas 7,60 - 11,90 %;6,90 – 1,90 %; 3,8 x 102 – 3,9 x 105 respectively. Keywords : Pangasius catfish dendeng, high density polyethylene, low density polyethylene and aluminum foil, sensory evaluation, moisture, fat, mould.
