Abstract

Octopus cyanea is widespread in the waters of East Nusa Tenggara, is sold in traditional markets, and is exported to Europe. O. cyanea is traded for consumption, however, there is no adequate nutritional information related to this organism in East Nusa Tenggara. This study aimed to determine the main nutritional content of O. cyanea in the form of water, carbohydrates, fat, protein, ash, and crude fiber. Octopus samples were obtained from fishermen's catches in Kupang Bay anchored in Pasir Panjang, Kupang City, and from Perumaan-Nangahale waters, Sikka Regency. Three samples were collected from different fishing trips at each location. Eight tentacles from each sample were cut, mixed, and crushed for nutrient content analysis. Proximate analysis included fat content using the Soxhlet method, protein content using the Kjeldahl method, and determination of water content, ash content, and crude fiber referring to AOAC. The results showed that the largest components of O. cyanea were water 70.79-74.36%, protein 13.55-18.41%, carbohydrates 5.44-6.37%, ash 2.23-3.43%, fat 2.20-2.22%, and crude fiber 1.51-2.54%. This information can be used by consumers to estimate the risk to certain health conditions. Additionally, it would be beneficial to foster preventive measures against quality degradation.

Abstract

Gracilaria sp. is a widely produced red alga that can be cultivated. Yoghurt is a healthy food fermented by Lactobacillus plantarum and Streptococcus thermophilus, but currently, there are many ways to produce yoghurt with a combination of several ingredients from another animal source. This study aimed to determine the effect of Gracilaria sp. addition to the characteristics of seaweed yoghurt fermented by L. plantarum and S. thermophilus bacteria. The research used a completely randomized design (CRD) with the addition of Gracilaria sp. at different concentrations (30%, 40%, and 50%). The results showed that the addition of different Gracilaria sp. concentrations affect protein content, fat content, total titratable acidity value, pH value, total LAB, and hedonic value. The best concentration in Gracilaria sp. addition was 30%, because it had a total LAB 6.29 Log (cfu/mL) and hedonic test preferred by consumers in the interval 6.50<µ<6.55.

Abstract

Mackerel fish is commonly used in the manufacturing of otak-otak. Authentication of fish-based food products by visual method is not possible so counterfeiting or mislabeling in these products is very likely to occur. Suckermouth catfish meat can also be used as a raw material for fish-based products because it contains high protein content. However, the source of suckermouth catfish taken from the Ciliwung River has the potential to contain heavy metals such as Pb, Cd, Hg, Sn, and As. The purpose of this study was to analyze the content of mackerel and suckermouth catfish in otak-otak, and identify the presence of heavy metal content in otak-otak samples containing suckermouth catfish. Nineteen otak-otak samples analyzed with 3 samples wrote the description of mackerel on the packaging. DNA analysis of suckermouth catfish and mackerel in otak-otak using Polymerase Chain Reaction (PCR) methods that use a specific primer. Analysis of heavy metals using the Atomic Absorption Spectrophotometry (AAS) method. Twelve of the nineteen samples identified a 423 bp band in the electrophoresis gel. The band was confirmed belonging to the suckermouth catfish species after analysis using sanger sequencing methods. Nine of the nineteen samples showed a 238 bp band that corresponded to mackerel. A total of 12 otak-otak samples were identified as containing suckermouth catfish, 11 of which contained Pb metal with a concentration of <0.034 mg/kg and 1 sample containing Pb metal with a concentration of 0.34 mg/kg. The presence of heavy metal content in the otak-otak samples whose concentration exceeds the maximum limit makes this otak-otak can’t halalan thayyiban for consumption.

Abstract

Glucosamines belong to the group of amino sugars and act as a precursor for the biosynthesis of glycosylated proteins and lipids in the body. The chemical, biological, and fermented extraction of glucosamine has not yet yielded optimal results. Pressurized hydrolysis treatment is needed to increase the yield of glucosamine. This study aimed to determine the characteristics of pressurized acid glucosamine extract from vannamei shrimp shell. The characteristics observed included the chemical composition, yield, degree of deacetylation, spectrum of functional groups, heavy metal contamination, and appearance. The chemical and heavy metal composition indicate the quality of shrimp shell are of standard allowed. Chitosan had a moisture content of 4.62%, ash content of 0.31%, protein content of 3.03%, deacetylation degree of 78.44%, viscosity of 222 cPs, flaky appearance, brownish-white color, and odorless. Pressurized acid extraction yielded white brownish glucosamine powder. The highest glucosamine yield was found in the 5% HCl acid extraction treatment at a pressure of 0.45 atm. The best glucosamine was obtained from the combined treatment of acid and pressure with the yield and degree of deacetylation that complied with the quality requirements of glucosamine.

Abstract

Kapal bouke ami adalah salah satu kapal yang beroperasi di Pelabuhan Perikanan Samudera (PPS) Nizam Zachman dengan durasi pengoperasian yang lama di laut. Permasalahan yang dihadapi oleh kapal dengan durasi trip panjang adalah ketersediaan palka sebagai fasilitas penanganan ikan di kapal sesuai standar yang sudah ditetapkan untuk menjaga kesegaran ikan di atas kapal. Penelitian ini bertujuan untuk mengidentifikasi indikator sebagai acuan standar palka yang diatur secara legal oleh pemerintah dan mengkaji kesesuaian kondisi palka kapal bouke ami terhadap indikator acuan standar palka yang ditetapkan secara legal di Indonesia, khususnya pada kapal bouke ami yang berbasis di PPSNZ Jakarta. Metode yang digunakan yaitu studi literatur terhadap peraturan mengenai palka sebagai fasilitas penanganan di atas kapal yang diatur oleh pemerintah melalui Kementerian Kelautan dan Perikanan dan melalui Badan Standardisasi Nasional serta observasi terhadap 30 unit kapal bouke ami. Hasil penelitian menunjukkan indikator yang digunakan dalam penetapan standar fasilitas penanganan di atas kapal adalah material, desain, dan instrumen pelengkap yang diatur melalui Permen KP No. 7 tahun 2019, No. 33 tahun 2021, SNI 01-4872.1-2006, SNI 2729:2013, dan SNI 4110:2014. Terdapat beberapa indikator yang tidak sesuai dengan standar pada palka kapal bouke ami antara lain material masih terbuat dari besi yang dapat menyebabkan korosif, desain palka tidak memungkinkan untuk dilakukan sistem penyimpanan first in first out, serta ketersediaan instrumen pelengkap yaitu pengukur suhu, tempat sampah serta ketersediaan fasilitas higienis untuk ABK masih kurang diperhatikan

Abstract

Southeast Maluku Regency in Maluku Province has not effectively harnessed the potential of feather clams, which are marine organisms that are rich in nutritional content. The primary objective of this study was to assess the proximate, morphometric, yield, and amino acid composition of feather clam meat and to conduct a comprehensive battery of tests, including proximate analysis, morphometry, and amino acid content analysis using high-performance liquid chromatography (HPLC).). The purpose of these experiments was to acquire a more comprehensive knowledge of the properties of the samples.The specific values of feather clams are as follows: water content, 77.79%; protein, 13.08%; fat, 5.33%; ash, 1.82%; and carbohydrates, 1.98%.The typical measurement for shellfish is 5.25 cm for length, 4.58 cm for width, and 3.48 cm for height, with an average weight of 46.81 g and a yield of 2.53%. Amino acids can be grouped into 18 different types, nine of which are essential amino acids and the remaining nine are non-essential. Lysine, at a concentration of 5.03%, is the most abundant essential amino acid.

Abstract

The Indonesian government aims to reduce its stunting rate by 2024, with the specific target decreasing to 14%. Therefore, the development of a high-nutrition food formulation is essential to address this issue, including the introduction of a fish-flour-based snack bar. The objective of this study was to establish an optimal formulation of snack bar substitution with mackerel tuna powder using a mixture design. The independent variables within the ingredient formula were the concentrations of oat granola, wheat flour, and mackerel fish flour. The formula deemed to have the highest level of acceptability by the panelists is identified as the selected formula. The parameters were analyzed using proximate, microbiological, and organoleptic tests. The data were statistically analyzed using the Kruskal-Wallis test and paired sample t-test using the SPSS application. The snack bar was chosen based on its hedonic response to the most preferred parameters of appearance, smell, taste, and texture, which included a snack bar formula consisting of 80% granola, 15% wheat flour, and 5% cob fish flour. The nutritional value data for the snack bar products has been determined, including their protein content of 8.37%, carbohydrate content (by difference) of 76.32%, fat content of 0.75%, moisture content of 12.27%, ash content of 2.45%, and the absence of contaminants such as ALT <102 col/g, E. coli <3.0 APM/g, negative Salmonella, negative Staphylococcus aureus and mold <104 col/g. Snack bars, owing to their nutritional content, are an appropriate alternative to healthy snacks as they contain complex nutrients.

Abstract

Pengasapan merupakan perpaduan teknik pengeringan serta penambahan senyawa kimia hasil pembakaran kayu guna mempertahankan daya awet ikan. Tujuan penelitian ini adalah menentukan profil kimia dan keamanan pangan ikan tandipang asap dengan perbedaan konsentrasi dan lama perendaman asap cair. Metode yang digunakan adalah eksperimental dengan rancangan percobaan yang digunakan yakni rancangan acak kelompok faktorial (RAK) dengan 3 kali ulangan. Variabel yang diamati adalah konsentrasi asap cair (1, 3, dan 5%) dan lama perendaman (15, 30, 45, dan 60 menit). Parameter yang diuji yaitu proksimat, fenol, formaldehida, PAHs dan TPC. Hasil proksimat ikan tandipang asap cair menunjukkan kadar air 8,61-28,89%; abu 4,37-6,20%; lemak 1,91-6,75%; dan protein 62,21-81,56%. Perlakuan terpilih berdasarkan hasil uji hedonik (kesukaan) dengan nilai tertinggi pada atribut rasa untuk ikan asap dengan perlakuan konsentrasi asap cair 3% dan lama perendaman 45 menit dengan nilai 7,2. Profil kimia ikan tandipang asap terpilih yaitu pada perlakuan konsentrasi asap cair 3% dengan lama waktu perendaman selama 45 menit memiliki kadar air 23,77%; abu 5,64%; lemak 4,99%; protein 76,33; fenol 0,356 %; PAHs < 0,1 ppb; dan formaldehid < 0,003%.

Abstract

Toddler nutritional problems are directly influenced by nutritional intake and infectious diseases. Protein, as an important intake, is indispensable for the growth of toddlers. Indonesia has merged with a maritime country rich in marine products, but its use is not typical. This study aimed to explore the potential of local fish populations in Bengkulu Province as a protein source for stunting toddlers. In general, fish are only fried or cooked with coconut milk in the family, so toddlers are never given it, considering that fish spines can harm the digestive system. This study uses a quality approach to determine the habit of toddler mothers to use fish on the menu of the place of residence. After obtaining an overview of the types of local fish that are easily accessible, namely Thryssa sp., the laboratory analysis of nutrients was continued. Protein and iron can only be obtained from expensive foods, which is not always true. Every 100 g of Thryssa sp. groundfish contains 153 kcal of energy, 18.75 g of protein, 1.13 g of fat, 0.19 g of carbohydrates, and 1.71 mg of Fe.

Abstract

Alga cokelat Padina sp. memiliki komponen fitokimia yang berpotensi sebagai antifungal. Penelitian ini bertujuan untuk menentukan pelarut terbaik berdasarkan komponen senyawa aktif dan aktivitas antifungal ekstrak Padina sp. terhadap Aspergillus flavus. Ekstraksi dilakukan dengan metode berbantu gelombang ultrasonik melalui 3 jenis pelarut, yaitu etanol, metanol, dan etil asetat. Parameter yang dianalisis meliputi persentase rendemen, fitokimia, dan aktivitas antifungal. Skrining fitokimia dilakukan secara kualitatif dan pengujian aktivitas antifungal terhadap A. flavus menggunakan metode difusi sumuran agar. Perairan Pulau Panggang menjadi lokasi pengambilan sampel Padina sp. dengan pH 9, suhu 28,1-28,9°C, salinitas 31-32 ppm, dan oksigen terlarut (DO) 6,5 ppm. Rendemen ekstrak etanol 20,98±1,54%, metanol 13,71±5,94%, dan etil asetat 6,67±3,30%. Senyawa fitokimia yang terkandung dalam ekstrak Padina sp. dengan 3 jenis pelarut tersebut meliputi alkaloid, saponin, steroid, dan fenol. Aktivitas antifungal tertinggi diperoleh dari ekstrak metanol dengan konsentrasi 30% ditunjukkan dengan diameter zona hambat sebesar 7,21±0,41 mm dan diameter zona hambat paling kecil diperoleh dari ekstrak etil asetat dengan konsentrasi 10% sebesar 1,17±0,09 mm. Ekstrak Padina sp. dari Perairan Pulau Panggang memiliki 4 jenis senyawa fitokimia dengan aktivitas antifungal terhadap A. flavus dengan kategori cukup kuat.
