Abstract

Ketersediaan pangan yang cukup dapat mempengaruhi konsumsi dan kecukupan gizi masyarakat. Wilayah dengan tingkat ketersediaan pangan tinggi, cenderung memberikan situasi konsumsi pangan dengan kecukupan gizi yang lebih baik dan lebih beragam. Kurangnya asupan gizi terutama yang bersumber dari pangan hewani merupakan salah satu penyebab langsung meningkatnya masalah gizi di suatu wilayah. Tujuan penelitian ini adalah menganalisis ketersediaan serta situasi dan kebutuhan konsumsi pangan hewani Kabupaten Pangandaran. Desain penelitian ini adalah descriptive explanatory dan prospective study dengan menggunakan data sekunder yang berasal dari dinas terkait di Kabupaten Pangandaran. Hasil penelitian menunjukkan bahwa Kabupaten Pangandaran pada tahun 2019 memiliki ketersediaan dari produksi pangan hewani sebesar 46,5 g/kap/hari. Kontribusi Tingkat Kecukupan Energi (TKE) ketersediaan dari produksi pangan hewani sebesar 29,4% dan kontribusi Tingkat Kecukupan Protein (TKP) ketersediaan dari produksi pangan hewani sebesar 42,6%. Adapun TKE dan TKP konsumsi pangan hewani penduduk pada tahun 2019 berturut-turut sebesar 107% dan 167,4% dengan skor PPH mencapai 24 poin. Konsumsi pangan hewani penduduk pada tahun 2020-2024 diharapkan memiliki laju pertumbuhan yang menurun sebesar 1,25% per tahun dalam rangka mencapai skor PPH ideal. Pemenuhan sasaran konsumsi tersebut, memerlukan laju pertumbuhan pemenuhan kebutuhan konsumsi pangan hewani pada periode yang sama sebesar -0,25% per tahun. Jika kebutuhan konsumsi pangan hewani penduduk hanya dipenuhi dari produksi, maka masih terdapat gap kekurangan pemenuhan kebutuhan konsumsi pangan hewani sekitar 32,9 kg/kap/tahun atau 14,53 ribu ton/tahun.

Abstract

The incidence of anemia in Indonesia is still quite high. Based on Riskesdas 2018, the prevalence of anemia in adolescents is 32%, meaning that 3-4 out of 10 adolescents suffer from anemia. Efforts that can be made to overcome the problem of anemia in school children are by consuming foods rich in iron. In adolescent girls who are anemic, 70–89% are found who do not to comply with the consumption of iron tablets. The objectives of this research are to analyze the correlation between iron, vitamin C intake and other factors with the prevalence of anemia in adolescent girls at SMP IT Majmaul Bahrain Tenjolaya Bogor. This study used a cross-sectional design. The minimum samples are 95 people of adolescent girls taken by consecutive sampling. The research variables were iron, vitamin C intake, compliance with iron suplementation tablet consumption and knowledge about anemia. Data collection using a questionnaire with interview techniques. Statistical analysis using the Chi-square test. The prevalence of anemia in adolescent girls in SMP IT Majmaul Bahrain is 54.7%. Most of the respondents have a low iron intake category (54.7%). Vitamin C intake was less (51.6%), as many as 62.3% of respondents are categorized as non-compliant in consuming iron tablets and 61.1% of respondents were in the knowledge-less category. Iron intake, vitamin C intake, adherence to iron supplementation tablet consumption and knowledge relate to prevalence of anemia in adolescent girls in SMP IT Majmaul Bahrain Tenjolaya Bogor.

Abstract

This research aims to develop a functional drink made from ginger and cinnamon which is high in flavonoids. This study was an experimental study using a completely randomized design (CRD) with three repetitions. The research consisted of making ginger and cinnamon powder, then the selected powders used in the manufacture of beverage formulations with 3 ratios of ginger and cinnamon (g), namely F1, F2, and F3 respectively 1:1, 1:2, and 2:1. The chemical test used in this study was the qualitative and quantitative test for flavonoids. Data analysis uses the ANOVA test, if there is a significant difference then proceed with the test Duncan Multiple Range Test (DMRT). The data tested are flavonoids. The results showed that each beverage formulation (1:1, 1:2, 2:1) was positive for flavonoids based on the qualitative test, while the quantitative test showed that each beverage formulation had a significant effect on the total flavonoid test results with a p-value<0.05. Total flavonoids in F1, F2 and F3 respectively were 70.88%, 57.86% and 82.96%. The selected functional drink formulation obtained from this study was F3 with the highest total flavonoid value.

Abstract

Era globalisasi memberikan dampak yang sangat besar dalam perkembangan di segala aspek kehidupan dan mengakibatkan perubahan gaya hidup dan kebiasaan makan masyarakat yang cenderung kurang sehat. Kebiasaan makan seseorang dipengaruhi oleh pengetahuan gizi dan sikap. Penelitian ini bertujuan menganalisis hubungan pengetahuan gizi, sikap dan konsumsi fast food, serta asupan serat dengan status gizi siswa SMA Kornita. Desain penelitian ini adalah cross sectional study yang melibatkan 62 subjek yang dipilih dengan metode insidental sampling. Pengumpulan data dilakukan dengan instrument kuesioner google form, wawancara via telepon, dan pengukuran antropometri dilakukan secara langsung. Hasil penelitian menunjukkan bahwa 71,1% subjek memiliki pengetahuan gizi baik dan 72,6% subjek memiliki sikap netral terhadap konsumsi fast food. Tidak terdapat hubungan yang signifikan antara variabel pengetahuan gizi dengan frekuensi konsumsi fast food secara keseluruhan, tradisional, maupun modern. Hasil analisis uji korelasi terdapat hubungan yang tidak signifikan (p>0,05) antara sikap terhadap fast food dengan frekuensi konsumsi fast food secara keseluruhan, tradisional, maupun modern. Terdapat hubungan yang signifikan positif antara konsumsi fast food secara keseluruhan (p=0,050; r=0,250) dan modern (p=0,025; r=0,285) dengan status gizi. Tidak terdapat hubungan yang signifikan antara asupan serat dengan status gizi (p=0,354; r=-0,0120).

Abstract

The Covid-19 pandemic has caused restrictions on activities outside the home including online learning which affects academic stress and food consumption. This study aims to analyze the correlation factors of stress levels and food consumption quality of high school adolescents with overweight and normal nutritional status during a pandemic. The design of this study was comparative cross sectional study of 41 adolescents with normal nutritional status and 41 overweight adolescents selected by purposive sampling. Data was collected through questionnaires and interviews. Based on the results of the Mann-Whitney difference test and Independent Sample T-test, there were significant differences (p<0.05) in the online activity time variable (p=0.41), energy adequacy level (p=0.040), frequency of consumption of staple food (p=0.004), protein vegetable (p=0.021), and drinks (p=0,003) between normal and overweight subjects. The results of the Spearman correlation test showed that there was a significant positive relationship (p<0.05) between the level of adequacy of energy, protein, fat, carbohydrates, and vitamin C with the quality of food consumption. Gender variable has a significant relationship (p<0.05) with stress levels. Based on the Spearman correlation test, there is no significant relationship (p>0.05) between stress levels and the quality of food consumption with nutritional status.

Abstract

This study aims to develop a food composition that can meet the nutritional needs of school-age children at minimal cost and still consider the quality of consumption. This research design is a descriptive study. The sample size was 45 households with school-age children in Babakan Village. The results showed that the average school-age child had not met the 90% energy requirement. Food consumption cost minimization using linear programming. The recommendation model developed can increase the energy intake of school-age children to 93.4% of the energy adequacy level, 108.5% of protein adequacy level, 90.4% of fat adequacy level, and 95.3% of the carbohydrate adequacy level. The cost is Rp19,363 per child per day and the Desirable Dietary Pattern score is 90.7. With costs that are approximately equal to actual expenditures and utilizing food sources that are easily obtained around Babakan Village, it turns out that the food consumption of school-age children can be optimized and remain of high quality, marked by an adequate Desirable Dietary Pattern score.

Abstract

During pregnancy, there is an increase in the need for nutrients to support the process of fetal growth and development. Sausage is a type of processed food which is popular and has high demand by the consumer. The purpose of this study was to develop sausage from mackerel fish and moringa leaf flour as protein and iron source for pregnant women. This study used completely randomized design with three formulas consisting of different combinations of mackerel and moringa leaf, namely F1 (100:0), F2 (90:10), and F3 (80:20). The samples were analyzed with sensory test (rating preference test and attribute difference test), physical analysis (texture and color) and nutrient analysis (proximate, calcium and iron). The results of this study indicated that an increase in moringa leaf flour used in the sausage formulation could reduce panelists’ acceptance for the attributes of color, aroma, texture, taste and overall acceptance. The increased use of moringa leaf flour also resulted in increased ash, protein, and carbohydrate contents and decreased water and fat contents. The selected formula was F2 with 10% moringa leaf flour which contained 17.80 g protein, 100.84 mg calcium and 6.52 mg iron per 100 g. One serving size of the sausage (74 g) contributes 7.8-8.2 of energy needs based on the Indonesian Recommended Dietary Allowance for pregnant women in the 1st to 3rd trimesters and it qualifies for the protein source and iron source claims.

Abstract

Status gizi kurang dan lebih merupakan salah satu masalah gizi yang banyak dihadapi pada usia anak sekolah dasar. Status gizi dapat dipengaruhi oleh berbagai faktor seperti pengetahuan gizi, aktivitas fisik, kebugaran, dan kebiasaan makan. Tujuan penelitian ini adalah menganalisis hubungan kebiasaan konsumsi sayur dan buah serta aktivitas fisik dengan status gizi dan kebugaran jasmani siswa di SDN 1 Cijeungjing. Penelitian ini dilaksanakan pada bulan Oktober-November 2022 pada 58 subjek dengan desain cross sectional study. Pengambilan data dilakukan melalui pengukuran tinggi badan dan berat badan, wawancara, Harvard step test, dan pengisian kuesioner yang meliputi karakteristik subjek dan keluarga, PAQ-C, dan FFQ. Sebagian besar subjek berjenis kelamin laki-laki (72,4%) dengan status gizi normal (79,3%). Siswa SDN 1 Cijeungjing memiliki kebiasaan mengonsumsi sayur dan buah sebanyak 1-2 kali per minggu. Mayoritas subjek memiliki aktivitas fisik yang tergolong rendah dan kebugaran jasmani yang baik sekali. Hasil analisis menunjukkan terdapat hubungan yang signifikan (p<0,05) antara kebiasaan konsumsi sayur dan buah dengan aktivitas fisik. Terdapat hubungan yang signifikan (p<0,05) antara aktivitas fisik dengan kebugaran jasmani. Namun, tidak terdapat hubungan yang signifikan antara kebiasaan konsumsi sayur dan buah dengan status gizi dan kebugaran jasmani. Tidak terdapat hubungan yang signifikan antara aktivitas fisik dengan status gizi.

Abstract

The fisheries sector has a role in food security, sovereignty, and self-sufficiency. Fish as an animal food has the potential for nutritional content that can reduce nutritional problems. North Sumatra has abundant fishing resources. The aim of this research is to forecast the amount of fish production by fulfilling animal protein needs in the population in North Sumatra. The method used is a descriptive quantitative and time series approach using secondary data analysis (ADS). The research was conducted in April–May 2023. The population used in the study was all time series data on fish production, both marine and inland, in North Sumatra for 2010–2022, and data on Indonesia's population for 2010–2022. The projected results of fishery production in 2022–2025 look to be fluctuating but tend to increase. The projected average fishery production is 585.761 tons. The average protein sourced from fish production in North Sumatra still fulfills 31% of the daily protein adequacy rate. Population projections that continue to increase show that the availability of fish has not fulfilled the daily consumption of the people of North Sumatra.

Abstract

Mukbang merupakan konten video yang menampilkan kegiatan makan dengan porsi yang besar dan menggugah selera. Tujuan utama penelitian ini adalah untuk menganalisis hubungan kebiasaan menonton video mukbang dengan kecukupan gizi mahasiswa non gizi IPB. Desain penelitian ini adalah cross sectional study dengan 65 subjek yang memiliki kebiasaan menonton mukbang minimal selama 1 bulan terakhir. Kebiasaan menonton video mukbang dinilai dari frekuensi dan durasi menonton, asupan dinilai menggunakan recall 2x24 jam. Rata-rata frekuensi menonton mukbang yaitu 2,3±1,9 kali per hari dengan durasi rata-rata 29,90±31,12 menit per hari. Rata-rata asupan per hari energi sebesar 1486±422 kkal, protein 41,3±21,9 g, lemak 55,5±21,5 g, karbohidrat 209,7±56,7 g. Frekuensi menonton mukbang memiliki hubungan signifikan dengan tingkat kecukupan energi subjek (p<0,1) sedangkan durasi tidak memiliki hubungan signifikan.
