Abstract

Iron supplementation is one of the anemia prevention program in Indonesia. Success Indicator of its program is ANC coverage and coverage of iron tablet distribution. This study aimed to analyze the relationship between the ANC (Antenatal Care) and iron tablet coverage with prevalence of anemia among pregnant women in East Java year 2015. This research used data report from Nutrition Division and Family Health Division of Provincial Health Office East Java. Data was analyse using Pearson correlation test. The prevalence of anemia among pregnant women in East Java was 5.8%, the result are still below the national target which is 28%. The result showed that there was no relationship between the ANC and iron tablet coverage with the prevalence of anemia (p-value > 0.05). It is concluded that coverage of iron supplementation among pregnant women through ANC does not describe the prevalence of anemia among pregnant women due to many factors that infl uence anemia such as bioavailability of iron and compliance pregnant women consume iron. Keywords: anemia, ANC coverage, iron tablet

Abstract

Patient’s satisfaction is one of success indicator of hospital food service, which affect the level of energy and protein sufficiency of patients. The aim of this study was to analyze the relationship between food service satisfaction and energy and protein suffi ciency level of patients in Universitas Airlangga Hospital. Thirty-four samples who receive High Energy and Protein diet were chosen using purposive sampling. Patient satisfaction data was collected through interview using a questionnaire and food waste was analyze through observation by Comstock method. Data was processed using chi square test. The result showed that level of energy and protein suffi ciency of most patients are adequate (73.5% and 70.6%) and most patient are satisfi ed with the hospital food service (76.5%). There was a relationship between satisfaction of food service with the level of energy and protein suffi ciency of patients (p = 0.017 and p = 0.031). Patients who were satisfi ed with the food services of hospital has a suffi cient intake of energy and protein. It is needed to restore system of food operation in hospital, especially on the punctuality of food distributionand fl avor of food, considering that those indicator, were source of dissatisfaction. Keywords: food service satisfaction, patients, the level of energy and protein suffi ciency

Abstract

Breadfruit is staple food of carbohydrate source alternative, while the mung beans is source of vegetable protein that potential to be processed as fl akes for supplementary feeding of schoolchild. This research aims to determine the effect of breadfruit and mung beans substitution toward the acceptance and protein content, as well as determine the best formula to produce a quality fl akes. Type of research is true experimental design with completely randomized design with 3 times replicating. Untrained panelists were used 34 2nd elementary school students. Product acceptance was tested using statistical analysis Chi square (α ≤ 0.005). The result of product acceptance test shown the most preferred panelist is fl akes F1 (breadfruit 50g, mung beans 50 g, and tapioca fl our 50 g) which have mean value of the highest rank in the aroma characteristic (87.00), texture (95.00) and taste (89.50), while the color values meanrank (77.5) under the color of the basic formula (83.5). F1 has 9.8 g protein content per serving. Statistical analysis of acceptance differences using chi square test on the assessment of the color, aroma, texture and fl avor showed signifi cant differences (α ≤ 0.05) on each characteristic between F0 to F2, F0 to F3, F1 with F2 and F1 to F3, whereas there wasno signifi cant difference (α ≥ 0.05) for the acceptance of color, aroma, texture and fl avor fl akes F0 to F1 and F2 to F3. The best composition, acceptability, and nutritional value was found in F1 (breadfruit 50 g, mung beans 50 g, and tapioca fl our 50 g) and can be used as alternative of supplementary feeding for school students. Keywords: Breadfruit, acceptance, fl akes, mung beans, protein

Abstract

Nutrient intake can be used as an indicator of students health status. Imbalance adequacy level of nutrients can cause nutritional problems, both malnutrition and overnutrition. The aim of this study was to analyze the correlation between adequacy level of energy and macronutrients (protein, fat, and carbohydrate) with nutritional status of female students at Islamic Boarding School Al-Izzah high school in Batu City. This study was an observational with cross sectional study design. Fourty-fi ve female students were chosen as a sample of the study and it was obtained by simple random sampling. Data respondent characteristics, adequacy level of energy, and macronutrients (through plate waste and recall meassurement), and nutritional status were collected in this study. The data analysis used was Spearman rank. The result showed that most of the students had inadequate intake of energy and macronutrients, and their nutritional status were normal. There was a signifi cant correlation between the adequacy level of energy (p = 0.049, r = 0.296), protein (p = 0.028, r = 0.328), fat (p = 0.049, r = 0.296), and carbohydrate (p = 0.02, r = 0.345) with the nutritional status. The conclusion is respondent’s nutritional status is determined by the adequacy level of energy andmacronutrients intake. This study advised respondents to increase to the portions of meals, such as rice, side dish, and vegetables to achieve an adequate level of energy and macronutrients. Keywords: adequacy level of energy, adequacy level of macronutrients, the nutritional status

Abstract

Getting older causes many alterations in the human body such as alterations in anatomy, physiology, economy, and social. This condition can cause a disturbance at the consumption pattern. The purpose of this research is to analyze the relation between nutrients adequacy, consumption patterns of foods which support or inhibit iron absorption andanemia status among elderly. This cross sectional research was held in Airlangga Sub - district, Gubeng District of Surabaya from March until April 2016. Sample was 73 elderlies. The research used cluster random sampling method, which sample was taken from each cluster (Posyandu) proportionally based on the number of elderly at elderly health care (Posyandu). The research collected hemoglobin level data using Easy Touch tool, nutrient intake using 2 × 24 hours Food Recall method and frequency of consumption of foods which support or inhibit iron absorption by using Food Frequency Questionnaire. The result of the research shows that there is a relation of adequacy of folate intake (p = 0.002), coffee consumption (p = 0.045), and tea consumption (p = 0.028) with anemia status among elderly. On the other hand, there is no relation between the adequacy level of protein, iron, vitamin C, and vitamin B12 with anemia status among elderly. The research recommends supplementary food program to elderly with foods which may provide iron or iron absorption enhancer. Keywords: anemia, iron enhancer and inhibit, elderly
