Abstract

Premenstrual Syndrome (PMS) is a combination of physical, psychological, and emotional disturbance which is related to menstrual cycle that appear 7 to 10 days before menstruation period and disappear when menstruation begins. Nutritional status and magnesium intake can cause premenstrual syndrome. The purpose of this study was to analyze the correlation of seed nutritional status and magnesium intake with premenstrual syndrome. The research used cross sectional study. The sample size was 99 female students in SMAN 4 Surabaya. The data were collected by measuring weight and height to obtain nutritional status variable; 2x24 hours  estimated food records to obtain magnesium intake; and questionnaire for premenstrual syndrome case. The data were analyzed using chi-square test. The results of this study showed that there was correlation  between nutritional status (p=0,036) and Premenstrual Syndrome (PMS). Besides that, there was also a correlation between magnesium intake (p=0,012) and Premenstrual Syndrome (PMS). Premenstrual Syndrome (PMS) can be caused by overweight and low magnesium intake. It is recommended for female students to prevent overweight status by monitoring their weight every month and increase their intake of high magnesium, food such as apple, spinach, and sweet potato.

Abstract

Breast Milk is the best and nutritious food in early life for every infants born. Undernourishment in infants can cause growth and development disorders. The attainment of exclusive breastfeeding that still low in Wonoayu sub-district in 2015 becomes the base  the formation of breastfeeding support group (KP-ASI). The aim of this study was to observe the difference of exclusive breastfeeding record and nutrition status of infants aged 6-12 months of KP-ASI participant and non KP-ASI participant. This research was an analytic observational with cross sectional design. This research was done in the working area at Wonoayu and Buduran Health Center, district Sidoarjo. The sample were taken using stratified random sampling, the sample size 36 mothers of infants 6-12 months from KP-ASI participants and 36 mothers of infants 6-12 months from the non KP-ASI participants. The data collection was interviewed by using questionnaire and anthropometry measurements by using length board and baby scale. Data analysis of the research was Chi-Square test and Logistic Regression. The result showed that there was significant difference exclusive breastfeeding record between  groups (p=0.002)  but there was no difference in nutrition status of infants aged 6-12 months (p=0.547) in between both group. Mother employment status (p=0.022 OR=0.211), other family support (p=0.015 OR=O.195) becomes a confounding variable aside from implementation of KP-ASI (p=0.032 OR=3.701) which influence exclusive breastfeeding record. The conclusion of this study was that KP-ASI participant have 3,701 times higher chance to give exclusive breastfeeding the their babies compared with non-KP ASI nember there was no difference nutrition status of infants aged 6-12 months from both group it’ is suggested for Public Health Service of Regency Sidoarjo to develop and reactivate implementation of breastfeeding support group in other district to improve the practice of exclusive breastfeeding.

Abstract

Dyslipidemia leads to atherosclerosis which is a risk factor for cardiovascular diseases. Edamame contains omega-3 fatty acids and phytochemical components such as isoflavones, sterols and saponins, and also high in fiber content. Edamame has been proved to have ability to decrease LDL cholesterol level. This research aims to analyze the comparison of edamame flour based low fat enteral formula with commercial low fat formula. This was a descriptive comparatif research design. Data collection was done by doing calculations on nutrient content and bioavailability protein, also organoleptic quality of low fat enteral formula with edamame flour substitution. The result showed that fat content of modified formula was 26.4% of total energy requirement and the value had met dietary requirement for dyslipidemia diet which is not more than <30% of total energy requirement. Type of fat in this formula largely contans unsaturated fats derived from omega-3 fatty acids of soy edamame and omega-9 fatty acids from olive oil. The value of  protein bioavailability which was shown from Amino Acid Score was 32.18, Theoretical Digestibility was 89.27, Net Protein Utilization was 28.73, Protein Worth of Eggs was 16.77, and Protein Eficiency Ratio was 4.51. The result of hedonic quality test showed that the color of low fat enteral formula with edamame flour substitution was light brown, the taste was sweet, the smell was typical edamame aroma, and had liquid consistency. Based on the comparison of commercial enteral formula with non-commercial enteral formula based on edamame flour, it can be concluded that edamame based flour enteral formula can be recommended as a non-commercial enteral formula for patients with dyslipidemia replacing commercial formula.

Abstract

Elderly becomes the most risky group in developing type 2 diabetes because they are more susceptible for carbohydrate metabolism disorders that can appear as diabetes. This study was aimed to determine the correlation between consumption of sugar-sweetened beverages and sex with the incidence of diabetes mellitus in the elderly. The population in this study were all elderly population (age> 60 years) in Jagir Public Health Center working area. This research used case control design with simple random sampling technique as a sampling method. The number of samples was 78 respondents with 39 samples of case group and 39 samples of control group. Data were analyzed using linear regression and logistic regression test. The results showed that there was a correlation between the consumption of SSBs and the incidence of diabetes mellitus in elderly (p = 0.000; OR = 9.375). Female elderly consumed more SSBs than men elderly (female's sugar consumption 26.9%, brown sugar 69.2%, syrup 75.6% and sachet drinks 73.1%, while mal’s sugar consumption 9%, brown sugar 20.5%, syrup 16.7% and sachet drinks 15.4%). In conclusion, this research revealed consumption of SSB’s was higher in female elderly and SSB’s consumption was correlated with the incidence of type 2 diabetes mellitus.

Abstract

Low Birth Weight (LBW) is one of the biggest causes of neonatal mortality in Indonesia. The prevalence of LBW at Semampir District in Surabaya tended to increase from 5.74% in 2013 to 13.65% in 2015. LBW caused by multi-factors including internal factors such as fetal, placental and maternal, and also external factors such as lifestyle and environment. This study aimed to analyze the association between maternal age, gestational age, Mid Upper-Arm Circumference (MUAC), Hemoglobin (Hb) levels, environmental tobacco exposure and LBW at Semampir District, Surabaya. The respondents were mothers at Semampir District who gave birth in 2016.  The design of this study was case control. The sample consisted of 22 mothers from the control group and 22 mothers from the case group. The result of descriptive analysis respectively showed that in case group (40.6%) and control group (13.6%) were not pregnant in healthy reproductive age. 59.1% and 18.1% gave birth when the gestational age <37 weeks. 41% and 9.1% were suffered of chronic energy malnutrition (MUAC <23.5). 40.9% and 22.7% were anemic. Moreover, 90,9% and 77,2% were exposed to tobacco smoke (secondhand smoke exposure). Chi square analysis with α=0,05 showed that there were significance associations between gestational age (p=0,006) (OR=6,198; CI 95%=1,61-27,88) and MUAC (p=0,018) (OR=6,623; CI 95%=1,327-51,2) with LBW. It is concluded that mother who gave birth to a premature baby were 6,2 times more likely to have LBW, whereas mother who suffered from chronic energy malnutrition were 6,6 times more likely to have LBW baby.

Abstract

Carbohydrates have an important role for endurance athletes to replenish glycogen in muscle and liver that had been used during muscle contraction. This research aims to analyze the effect of adding breadfruit flour (Artocarpus communis), green banana (Musa paradisiaca L.), dates (Phoenix dactylifera) and chocolate (Theobroma cacao L.) toward the acceptance and carbohydrate content of egg roll as an alternative snack for endurance athletes. This research use True Experimental Research, completely randomized design with four formula and repeated four times for each formula. Panelist in this study consist of 30 athletes of Local Training Center, Indonesian National Sport Committee in East Java Region. Based on the test of acceptance on the modification of egg roll formula, the most preferred formula was F1 (breadfruit flour 150 g, chocolate 500 g, dates 150 g) with the highest mean rank values were on color (2.65) and flavor (2.70), while the aroma and texture aspect had the lower mean rank (2.50) each compared to F0 (2.87 and 2.58). The result of Friedman Test statistic on all characteristics of the acceptability include color, aroma, texture and flavor found there was not significant diffrence on the acceptance of egg roll (p>0.05). The highest carbohydrate content was F1 (59.4/100 g). Based on the best acceptance value and the highest carbohydrate content, it was conclude that the optimal  formula was F1. Total egg roll that should be consumed by the athletes before sport was 125 grams (12 sticks egg roll) and 60-95 grams (6-8 sticks egg roll) for after sport

Abstract

Hypertension is a global public health problem. Hypertension prevalence increasing with age, particularly in middle aged men. It is important to identify the modifiable risk factors. The aim of this study was to analyse the correlation of smoking habit, physical activity, and hypertension among middle aged men. This study was conducted in Cianjur District, West Java. 112 men aged 45-59 years old were participated in this cross sectional study. Automatic blood pressure (OMRON Model HEM-7200) was used to measure blood pressure. 24-hour physical activity recall was used to assess physical activity (PA). The correlation between smoking habit and hypertension was analyzed by Chi Square.  The correlation between physical activity and hypertension was analyzed by Spearman.  This study found that 83.9% subjects had smoking habit.  More than half of the subjects (57.2%) had heavy PA. Almost half of the subjects (43.7%) were hypertension. Median of systolic 135.0 mmHg and diastolic 85.0 mmHg. There was a significant correlation between smoking habit (p=0.039) and physical activity (p=0.025) with hypertension. Smoking habit and physical activity correlate with hypertension. Having a moderate to vigorous physical activity regularly particularly in smokers among middle aged men are recommend for decreasing the prevalence of hypertension.

Abstract

Snail and moringa are the example of food that contain several nutrition such as energy, protein, calcium  needed by stunted children. The purpose of this study was to analyze the effect of snail (Pila ampullacea) and puree moringa (Moringa oleifera) substitution toward the acceptance and nutritional value (energy and protein) of gyoza  as an healthy snack alternative. This study was an experimental with complete random design study. Untrained panelists were 30 students of grade five student in elementary school Komplek Kenjeran II 506. Elementary school Based on scoring by panelist formula F3 is the best treatment formula, because it is better in color and texture aspect but it has no significant difference in aroma and taste compared with treatment formula. The Friedman Test showed there were significant differences in color, aroma, texture and taste (p<0.05). Result of Wilcoxon Signed Rank Test showed that overall test of control formulas and treatment formulas were having differences but the result between treatment formulas were not having significant differences.  The highest energy and protein content were F3 224.8 g and 12.75 g/100 g gyoza. Based on the best acceptance value and the highest energy content, it was conclude that the optimization formula was F3 (75 g snail and 20 g moringa) as an alternative healthy snack for school-children.

Abstract

Coliform bacteria is microorganisms that can be used as indicator todefine the quality of water. Bacteria in food or drink indicates that the food may be contaminated by stool. The purpose of this research was to describe the total number of microbes and the number of bacteria coliform on “dung-dung” ice around Universitas Muhammadiyah Surakarta campus. This descriptive research used 7 samples which were taken from 7 “dung-dung” ice sellers around Muhammadiyah University of Surakarta. The samples were analyzed by using Total Plate Count (TPC) and Most Probable Number (MPN) methods. The results were compared with standard value of TPC and MPN according to the Indonesia Food and Drug Administration Regulation number 16/2016 about the criteria for food microbiology. The results of the study showed that all of the 7 samples being tested were above the standards, because the microbes count were above 105 CFU/ml (the standard is maximum 104 CFU/ml), and the MPN value > 2400 MPN/ ml (the standard is 10 APM/100ml) This study concluded that all of the “dung-dung” ice studied were  not comply the food safety standard.

Abstract

Food is one  of components that can cause illness, so it must be safe. An outbreaks of food poisoning 19% happened  in school and 78.57%   happened to elementary   school children. Hygiene and sanitation are important factors related to food safety. This study was aimed to analyze correlation between behavior of hygiene and sanitation of food vendors with food safety by using most probable number of coliform indicator. This was an observational study used cross sectional design, involving 25 food  vendors and 25 food sample which were selected randomly. Result showed  that 40% of the snacks were contaminated by Coliform (>10 Juml./g). The highest contamination of Coliform was >1.100 Juml./g and was found on four food snacks sold in the canteen. Categories of hygiene knowledge score of vendors ware moderate (52%). The majority of vendors ware included in the moderate hygiene attitude score category (52%), and most of the vendors ware included in the moderate hygiene practice score category and moderate environment sanitation score category (56%, respectively). Statistical analysis using Spearman’s rho test showed that there ware a significant correlation  between knowledge of hygiene, practice of hygiene, and environment sanitation of vendors with food safety using indicator most probable number of coliform (p=0.022, p=0.005, p=0.000, respectively). Whereas no significant correlation found between  attitude of hygiene with contamination of Coliform (p=0.088). It was Found as much as 40% of foods are contaminated by coliform  and should be awared, observations of food processing needs to be applied to prevent coliform contamination of school children’s snacks.
