Abstract

Secondhand newspapers are the material commonly used for packing food. However, secondhand newspapers are not safe to used for packing fried food because the ink used for printing on newsprint paper contains Lead and can move into fried by the oil. The low knowledge of fried food sellers about the dangers of using secondhand newspapers as packing fried food can threaten the health of consumers. The objective of the study was to determine the influence of extension about the dangers of using secondhand newspapers as packing fried food to the behavior of sellers in Asrama Haji Medan. The result of this study showed that before extension 50% of fried food sellers have medium knowledge and after extension increases become 72,7%. Before extension 9,1% of the fried food sellers have good attitude and after extension increases become 36,4%. Before extension 9,1% of fried food sellers have good action and after extension increases become 27,3%. Based on the results of the study, it can be concluded that extension with individual approach and media leaflet can increase the behavior of fried food sellers about the dangers of using secondhand newspapers as packing fried food. Therefore, researcher suggest to BPOM to give a extension to fried food sellers with individual approach and media leaflet to change the behavior of sellers be better and further enhance the dissemination activities about the dangers of using secondhand newspaper as packing fried food that the information to public. Abstract

Modisco is Modified Dietetic Skim and Cotton Sheet Oil , composition consist of milk, margarine and sugar. That used to improve children’s weight quickly and it has been designed to anticipate any bad impact of nutritional status. To produce Modisco is easy and simple but there are many Posyandu cadres don’t have capability to make it. This study was quasy experimental , adopted one group Pre test and Post test design. The sample to this research involved all cadres whose serving and is being official to serve community on Pematang Panjang Health Center, noted 15 cadres. The objective of this research is to determine the influence of training against their knowledge and skill in producing self PMT Modisco. The training has been done in any workshop and display demo. In collecting the data, provided a questionnaire and by interview, while the data of skill by providing the draft list. Post Test was done twice immediately after training, the other test one week after training. In analyzing the data, using a paired sample t-test analysis method. The result of test showed that their knowledge and skill rose up after having training. According to the data analysis with paired sample t-test before and after traning indicated its rate of p =0.000, there is a significant influence between the training to their skill as Posyandu cadres in producing PMT Modisco. It is advised to cadres be proactive to improve knowledge and skill, every ability is encouraged to share especially to mother who have malnutrition child, and to encourage those cadres having good ability always socialize in producing PMT Modisco as an effort  prevent any malnutrition to public where the Helth Center serving. Abstract

A mother who has get married early can be difficult to understand the nutrition problem especially to fullfill the nutrition of under five years old. This research studied a behavior early married women in fullfill the nutrition of under five years old at Village of Pulau Mungkur, subdistrict of Gunung Toar, Regency of Kuantan Singingi, Province of Riau in 2012. This research was a descriptive studied by cross sectional design. The population were early married women had under five years old for 45 people and then to be total sampling. The data was collected by interview using questionnaire, food frequency and food recall form. The result of research show that the behavior about the fulfillment of nutrition for under five years old that classified into less good category. Energy and protein consumption of under five years old was medium category. Generally, the under five years old consumes food three time a day. The nutrition status of under five years old be based on the weight for age, height for age and weight for height is classified into normal category. It is necessary to provide the early married woman and under five years old with exstension about food, nutrition and healthy by the posyandu cadre in order to increase the behavior of mother in fullfill the nutrition need of under five years old and the role of extension about crops food in anticipate the vacant land by the departement of agriculture in order to increase food security of family. Abstract

Obesity is a condition of excess body weight due to buried fat, due to the input  calories. In addition, the nutritional behavior also contribute to an increase in body weight. Obesity can impact on workers reduced worker productivity and can also lead to degenerative diseases. This study aims to determine the nutritional behavior of obese in tobacco plantation PTPN II Kelambir V Medan 2012. Type of this research is descriptive research designs, to get an overview of food consumption patterns, physical activity and nutritional status of workers experiencing obesity in gambang (sorting tobacco) tobacco  plantation kelambir V PTPN-II. The population of the research was that obese workers gambang (sorting tobacco) as many as 25 people. The samples were taken as many as 25 people with total sampling. Data collection is done with the interview using the food recall 24-hour, food frequency form and measurement of body weight and body height. The results showed that the nutritional behavior of workers based on the frequency of eating. The vegetables are sweet leaves, the type of drink is sweet tea, and for this type of fruit is a banana fruit consumed ≤ 3 x a week. The adequacy of the level of energy in the high category 64,00 % and total consumption proteins included in the category of very high 84,00%. Workers should the obese to gambang (sorting tobacco) pay more attention to the nutritional behavior, as well as the expected extension of a nutritional officer or from the clinic. Abstract

Food diversification instead of rice is necessary for food security and food quality. Pumpkin and sweet corn can be an alternative to accompanying rice for the food security and food quality. This was an experimental study on rice processing by adding pumpkin and sweet corn in different proportion (5:3:2, 5:2:3, and 5:2,5:2,5). This study was aimed to determine the acceptability of color, flavor, taste, and texture which were tested by hedonic test and its nutrient composition. The result of this research showed that by organoleptic test, rice with the addition of pumpkin and sweet corn which made with 5:3:2 proportion was the most favored by the panelists. Based on analysis of variance, the addition of pumpkin and sweet corn in different proportion influenced different variety of taste, flavor, color, and texture. The addition of pumpkin and sweet corn on rice cooking increased the content of protein, fat, calcium, phosphorus, iron, vitamin A, vitamin B1, and vitamin C. Consumption of one serving of A1 rice with addition pumpkin and sweet corn contributes 26,8% adequacy of vitamin A and 40,0% adequacy of vitamin C in 7-9 years old children. It is suggested for consumer to make rice with addition of pumpkin and sweet corn as an alternative food for reduce the consumption of rice. It is necessary to do other foods diversification by added pumpkin and sweet corn as a food which is rich in nutrient content. Abstract

Areca catechu is a plant that belongs to coconut family. The people of Toba Batak use the  fruit as one  meal for friends or quests, as the substitution of the cigarette for men. For children, the fruit of areca catechu is used as the substitution for candy. This research is intended to know the description of the consumption of the fruit of areca catechu, the occurrence of suffering worms,  and nutritional status of Elementary School 175750 in Pardamean Nainggolan village, Pahae Jae  district, North Tapanuli regency in 2013. This was descriptive research with cross-sectional design.  The sample of research was 58 students consisting of class 4 and class 6 who consumed  the fruit of areca catechu and who did not consume the fruit of areca catechu. The results of research showed 91.4% of the students in Pardamean Nainggolan village consumed the fruit of areca catechu and mostly of them consumed with the frequency once or twice in a day and quantity of consumption mostly 1- 3 fruit in a day, who mostly consumed during the day. From  the  result of helminthiasis checking, 94.8% the students of Elementary School classified negative and 5.2% classified positive. Mostly of student consumed energy and protein in worse deficit level, that was each for 86.2% and 53.4% respectively. The description on the nutritional status of Elementary School based on H/A as normal 67,2%, short 31% and very short 1,7% and based on BMI/A 84.5% as normal 84,5% and thin 6,9%. It is suggested for the health center to give guidance and counseling about the consumption of the fruit of areca catechu. In addition, there should be the control for suffering  worms and socialization about General Guide of Balanced Nutrient. Hemoglobin test should be conducted for the students of Elementary School 175750 Pardamaen Nainggolan village. Abstract

Tempeh burger is one of an innovative product of burgers, which has high phyto-protein. Most of people know that tempeh only made from soybean, but the other legume such as mung bean and red kidney bean can also be processed into tempeh because they almost have the similar nutrient composition with soybean. This was an experimental study that aims to determine the nutrient composition and the acceptable of patty with the difference of tempeh ingredients, such as soybean, mung bean, and red kidney bean. Based on laboratory test at the Laboratory of Nutrition FKM and Food Technology Laboratory FP USU, showed that the soybean tempeh patty has highest content of energy, fat, and carbohydrate; while the highest content of protein and ash belongs to the mung bean tempeh patty. Based on the organoleptic test by 30 students of FKM USU as a panelist, showed that the soybean tempeh patty was the most preferred. With Anova Test, the difference of tempeh for making the tempeh patty was only influenced different variety of color, aroma, and texture, but not for the taste. It’s recommended that consumer, especially those who like burgers but limiting meat consumption, make tempeh burger as their alternative snack. The mung bean tempeh patty was the best choice for young people who are still in their growth stage, because it had highest content of protein and ash. It is also need to do the further study to eliminate unpleasant contained in mung bean and red kidney bean tempeh patty. Keywords: Tempeh Patty, Nutrient Composition, Acceptability

Abstract

Beetroot (Beta vulgaris L) is significantly suitable to consider in supporting the food diversification. To support food diversification, need to be introduced products beetroot to get a new food alternatives. Beetroot is potential as a source of nutrients, as well of its macro and micro nutrients contents. One of processed that can be made from beetroot that is biscuit that can be kind of biscuit on the market. This study was the experiment of making biscuit with the addition beetroot flour and grated for 20%. The purpose of this experimental study to know the influence of addition beetroot flour and grated on nutrients composition biscuit. Content of phosphorus, calcium, iron based on the analysis of AAS (Atomic Absorption Spectrophotometry), content of energy, carbohydrate, protein and fat calculation based of DKBM (Lisf of Food Composition). The result of this experiment showed that content of phosphorus, calsium, iron more higher than the biscuit without addition of beetroot. Biscuit beetroot flour have content of phosphorus 129,73 mg, calsium 91,26 mg, iron 3,95 mg, meanwhile biscuit beetroot grated have content of phosphorus 91,53 mg, calsium 65,81 mg, iron 3,11 mg. Based on calculation of DKBM (List of Food Composition), showed that the biscuit beetroot flour has highest content of energy, carbohydrate,  fat, meanwhile the biscuit beetroot grated only content of fat that high. It’s recommended for people to take beetroot biscuit as alternative food. Also, it is necessary to research to use beetroot for other foods diversification. Abstract

ABSTRACT‘Cempedak’ and durian seeds flour are the kind of seeds that are less utilized as a product of the food industry. ‘Cempedak’ and durian seeds flour can be processed into various food product which can give contribute nutrient for schoolchildren. One of the product is fish meatball. This study aims to determine organoleptic and nutritional of modified fish meatball with ‘cempedak’ and durian seed’s flour.This experimental design was completely randomized design with of two factors are ‘cempedak’ and durian seeds flour with composition of 35%:5%, 30%:10% and 25%:15%. Organoleptic test of modified fish meatball was given to thirthy panelist of students of state elementary school 064985 grade VI and then, nutrient analyzed was tested in laboratory of industrial research and standarization Agency Medan. Analyzed was done descriptively.The results showed that organoleptic test of modified fish meatball with ‘cempedak’and durian seeds flour was generally preferred. Of the third fates ,it turns out fish meatball modified comparison 30%: 10% get the highest point and contain protein for the highest.In making fish meatball, it was recommended if the comparison between ‘cempedak’ and durian seeds flour are 30% and 10%. It is need to give information and socialization about ‘cempedak’and durian seeds flour and durian so that can be made, received and used to be additional food of students.Keyword: fish meatball. cempedak seeds flour, durian seeds flour, organoleptic test, elemantary school.

Abstract

Complementary Feeding is given to infant while it is 6 months old to fulfill as nutrition, especially micro nutrient like minerals. Nowadays, mineral content of local complementary feeding have not know yet, and one of local complementary feeding that is treated became banana  flour with additional rice flour as a base for complementary feeding. This research aims to know the mineral content of mixed awak banana and rice flour and its contribution to infant Recommended Dietary Allowance (RDA). This research is descriptive study conducted in the laboratory which based on chemical analytic to mineral content in mixed of awak banana and rice flour. Analyzed the content of iron and zinc by Atomic Absorption Spectrophotometry method (AAS), the content of potassium, natrium, and selenium by Inductively Couple Plasma method (ICP), the content of phosphor by spectrophotometry method, the content of calcium by titration method and iodide content by HPLC method performed in the laboratory of PT. Sarawanti Indo Genetech Bogor. The results of the research suggested that mixed of awak banana and rice flour contain macro mineral by calcium, potassium, natrium and phosphor for 14,70 mg, 396,40 mg, 8,58 mg and 100,7 mg respectively. Whereas the content of micro mineral in mixed of awak banana flour and rice flour contain the iron, zinc, iodide and selenium for 3,43 mg, 8,08 mg, 42,74 ug and 0,30 ug respectively. Both macro mineral and micro mineral, except zinc and potassium in mixed of awak banana and rice flour has not fulfill the standart of complementary feeding appropriate 224/Menkes/SK/II/2007 aged 7-12 months according the Widyakarya Nasional Pangan dan Gizi 2004.
