Abstract

Udang merupakan salah satu komoditi ekspor unggulan bagi Indonesia. Seperti produk perikanan lainnya, udang juga mudah mengalami proses pembusukan. Penelitian ini bertujuan untuk mengidentifikasi jenis Vibrio sp. dan mendeteksi keberadaan E.coli pada udang yang sampelnya diperoleh dari pasar Arumbae kota Ambon. Metode yang digunakan adalah metode eksploratif, sehingga data yang ditampilkan dalam bentuk tabel dan gambar. Pengujian meliputi uji TPC, Total Vibrio sp. Isolasi dan identifikasi Vibrio sp. dan pengujian E.coli dengan metode MPN. Hasil penelitian menunjukkan bahwa nilai TPC tertinggi pada jenis Udang Tiger yakni 1,4 x 105 CFU/gr dan terendah pada Air thawing yakni 9,4 x 103 CFU/ml. Total Vibrio tertinggi pada jenis Udang Tiger yakni 1,3 x 105 TVC/gr dan terendah pada Air thawing yakni 2,0 x 104 TVC/ml. Untuk identifikasi Vibrio, diperoleh hasil yakni pada jenis Udang Krosok terdapat jenis  Vibrio mimicus dan V. aglinoliticus, jenis Udang Tiger terdapat jenis V. cholera, dan V. parahaemolyticus, pada Air thawing  terdapat V. parahaemolyticus dan   Vibrio sp. Sedangkan ketiga sampel positif terdapat E.coli.

Abstract

Empirically, sea cucumber as a food ingredient that is believed to have efficacy as medicine (nutraceutical) because it contains bioactive compounds like terpenoid, saponin, essential amino acids, glycosaminglycan, chondroitin sulfate, sulfate polysaccharides, lectins, phenol and peptides. The aim of this research were to identify processing method performed by fisherman in Kakara Pulau and to determine the toxicity of dried sea cucumber extract againts Artemia salina larvae with three different solvents. The result showed that there were 8 types of sea cucumber that were dominant caught ny fisherman namely Kongkong, Joko, Susu, Kalengkong, Nanas, Benang, Badara dan Pasir. Most of them, process sea cucumber using a combination of smoking and drying. Based on the toxicity test, dried sea cucumber extract is included in the toxic category, which has the potential to be developed as an antibacterial.

Abstract

Smoked tuna is one of traditional fisheries product in Tobelo, North Halmahera. Tobelos people like this product because of its smoke taste. In Tobelo, there are many producer who sell this product, but information about its quality was unknown. In this research, the researcher wants to know about microbiology aspect of smoked tuna from three traditional market in Tobelo. The result of this research showed that Total Plate Count (TPC) value was from 7,5x1015,35x102 APM/g; smoked tuna from modern Market showed the highest Staphulococcus sp. colony at 1,3x103 CFU/g. colony of Salmonella sp. showed negative value for three different market. The highest fungy colony was 2,5x101 CFU/g from Gotong royong Market, for Escherichia coli analysis, smoked tuna from Gotong Royong Market showed high value at 23 CFU/g, it was exceed Indonesia National Standard.

Abstract

Sea urchin is highly valued seafood. Its bioactive compound also has a potential as natural antibacterial agent. The aim of this research was to screen the antibacterial activity using cup-plate method, toxicity potential using brine shrimp lethality test (BSLT) method, bioactive compound using phytochemical method, and proximate composition by AOAC. This research was devided into two phases, the preliminary research was to determine the best body part of sea urchin showing antibacterial activity. Sea urchins were collected from Pramuka Island and extracted by meseration method. For the preliminary research, gonad extract showed the high antibacterial activity against E. coli and S. aureus at 1.83 ± 0.74 mm and 1.5 mm, respectively. The main research includes the determination of proximate composition, toxicity, bioactive compound, and antibacterial activity from the best body part of sea urchin. The proximate composition from gonad of sea urchin showed that water content 64.97 ± 0.08%; ash 2.72 ± 0.13%; lipid 19.73 ± 0.04%; protein 12.26 ± 0.3%, and 0.33 ± 0.17%, respectively. The detected bioactive compounds from the three different solvents of gonads extracts were steroid, triterpenoid and saponin. The result of lethal toxicity (LC50) from the three gonads extract was 471.861 ppm (n-hexane), 563.226 ppm (ethyl acetate) and 577.531 ppm (methanolic), respectively. Gonads ethyl acetate extracts showed the highest antibacterial activity than n-hexane and methanolic extract, its inhibition zone was 2.71 mm against S. aureus and 4.13 against E. coli. Abstract

Micro and small enterprises (MSEs) play a vital role in the sustainability of regional economic development. The fisheries and agriculture sectors are the two leading sectors in North Halmahera Regency, contributing around 23% of the region's Gross Regional Domestic Product (GRDP). The purpose of this study is to identify external and internal factors that influence the development of fisheries MSEs and to formulate a strategy for developing MSEs in the fisheries sector. The data was collected using interviews with 30 respondents and focus group discussions. The analysis used external factor analysis (EFAS), internal factor analysis (IFAS), and SWOT analysis to formulate a strategy for developing MSEs' players. The results of the interviews show fisheries MSEs face challenges such as lack of infrastructure, limited capital, and limited competence in the fishery process. According to the IFAS results, the fisheries MSEs in North Maluku have a more significant weakness score than the strengths indicated by the score -0.49. Based on EFAS results, the fisheries MSEs in North Maluku have more significant opportunities than threats. The SWOT analysis indicates the MSEs in the fisheries sector in North Halmahera are in quadrant II, which supports a potential development strategy, including market development, market penetration, product development, and horizontal integration. Abstract

Desa Tagalaya merupakan salah satu Desa di Kecamatan Tobelo yang masyarakatnya bermata pencaharian sebagai nelayan. Cara penangkapan menggunakan alat tangkap sederhana dan armada penangkapanpun masih tradisional, dengan demikian proses penanganan, sanitasi dan hygiene belum dilakukan secara efektif dan efisien. Secara umum, masyarakat desa Tagalaya tidak menggunakan es karena lokasi penangkapan ikan dan penjualan dekat. Kegiatan ini bertujuan untuk meningkatkan pengetahuan nelayan mengenai pentingnya penerapan rantai dingin (Cold Chain System) serta sanitasi dan hygiene, sehingga nilai jual hasil tangkapan tinggi dan berkualitas baik. Metode pelaksanaan kegiatan pengabdian adalah melalui kegiatan penyuluhan dan diskusi. Penyampaian materi mengenai sistem rantai dingin meliputi konsep rantai dingin, dampak tidak diterapkannya rantai dingin terhadap hasil tangkapan. Sedangkan cakupan materi mengenai sanitasi dan hygiene hasil tangkapan adalah pengertian dan ruang lingkup sanitasi dan hygiene serta dampak penerapan sanitasi dan hygiene. Hasil kegiatan yakni masyarakat antusias menerima kateri yang disampaikan, beberapa diantara mereka berkomitmen untuk menerapkan materi yang didapat untuk meningkatkan nilai jual hasil tangkapan. Kata kunci: Desa Tagalaya, Rantai dingin, Sanitasi dan hygiene, Penanganan ikan ABSTRACT Tagalaya is one of the Village in Tobelo sub-district whom its inhibitants did fisheries for living. Their fishing method were simple and conventional, also their handling method, sanitation and hygiene practice were not effective and efficient. Commonly, Tagalaya inhibitants are not using ice for initial handling because fishing areas and selling location nearby. The aim of this activity was to increase the fisheries knowledge about the importance of cold chain system, sanitanion and hygiene of their catches, it can affect its selling price and quality. This activity was carried out in form of counseling and discussion. The theory about cold chain system and its impact if it cannot applied; the scope of sanitation and hygene and its positive impact were delivered. The result of this activity was the fisheries are very enthusiastic and commited to apply the theory in their fishing activity (fishing handling) to increase fish selling price. Abstract

Teripang merupakan salah satu komoditas perairan yang memiliki nilai ekonomis penting, yang diketahui memiliki potensi untuk dimanfaatkan sebagai nutrasetika. Potensi teripang di Desa Kakara belum dieksplorasi senyawa bioaktifnya. Penelitian ini bertujuan untuk menganalisis senyawa biokimia dan menguji toksisitas ekstrak, serta mengetahui kandungan antioksidannya. Hasil analisis menunjukkan bahwa ekstrak metanol tiga jenis teripang yang berbeda masing-masing Holothuria atra, Stichopus horrens, dan Holothuria hilla mengandung senyawa bioaktif dari golongan Flavonoid dan Saponin. Hasil analisis Brine Shrimp Lethal Toxicity (BSLT) menunjukkan nilai A 629, 19 ppm, B 739,86 ppm , C 681,78 ppm metanol ketiga jenis teripang uji masuk dalam kategori toksik. Analisis antioksidan menunjukkan hasil A 562, 59 ppm, B 968,78 ppm, ekstrak metanol teripang dikategorikan tidak memiliki aktivitas antioksidan.

Abstract

Potensi perikanan yang melimpah di Halmahera Utara menjadi kekuatan besar bagi masyarakat nelayan untuk memanfaatkan laut sebaik mungkin khususnya pada sektor perikanan tangkap untuk memenuhi kebutuhan sehari-hari dan mensejahterakan kehidupan masyarakat nelayan. Penelitian ini bertujuan untuk menganalisis kondisi sosial dan ekonomi masyarakat nelayan dengan menggunakan analisis deskriptif dan Nilai Tukar Nelayan (NTN). Hasil penelitian menunjukkan bahwa kondisi sosial masyarakat nelayan Desa Efi-Efi masih rendah, tergambar dari pendidikan formal nelayan yang rendah. Rata-rata distribusi Nilai Tukar Nelayan masyarakat nelayan Desa Efi-Efi di atas angka satu yaitu nelayan yang memiliki NTN di bawah angka satu mulai dari 0,94-0,99 sebanyak 3 orang, NTN yang berada di sekitar atau di atas angka satu mulai dari 1,08-3,31 sebanyak 37 orang sehingga disimpulkan bahwa nelayan mempunyai tingkat kesejahteraan cukup baik untuk memenuhi kebutuhan subsistennya dan mempunyai potensi untuk mengkonsumsi kebutuhan sekunder atau kebutuhan tersier maupun menabung

Abstract

Generally each type of fish has different pattern of deterioration. Quality deterioration and high postharvest damage was caused by fishing method, poor handling process, the length of supply chain, poor handling facilities. This research was aimed to know about handling facilities on Purse seine board and its handling method; and to analyze fish quality using pH and organoleptic. The first step in this research was to observe the handling on the board then measure the pH of fish using pH metes. And also there was 30 panelist who did sensory test using organoleptic instrument on the board. The result showed that the handling facilities on board were coolbox, ice and hold, it showed that their apply good handling facilities. The average value of pH between 6,10 – 6,27, where the highest score was Ikan Selar (Selar crumenopthalmus) and the lowest score was Ikan Layang (Decapterus macarellus). The result of organoleptic was between 8,62-8,91, it showed that the tested fishes were fresh.

Abstract

The waters of North Halmahera are a fishing area with abundant potential of small pelagic fish. Fishermen in Tobelo use a mini purse seine fishing gear which in local terms is called pajeko. The catch of pajeko fishermen is dominated by Mackarel tuna and Mackerel scad. The aim of this study was to determine the quality of fish caught by fishermen who are sold in one of the markets in Tobelo through organoleptic and pH analysis. Samples were taken randomly and analyzed descriptively so that the data were presented in the form of figures and tables. The results of the average pH analysis ranged from 6.00 - 6.50 and the results of the organoleptic analysis showed that the value was above 7 which indicated that the fish was still fresh.
