Knowing the community's acceptance of biscuits by substitution of gude peanut flour (Cajanus cajan (L.) Millsp) and MOCAF flour. This research is a quasi-experimental research design using a post test design group. The community's acceptance of the biscuits with substitution of MOCAF and Gude peanut flour was assessed based on 4 hedonic test scales, is very like, like, dislike and very dislike of 25 rather trained panelists. The results of the research on the manufacture of flour weighing 1,925 grams of gude beans produced 989 grams of gude peanut flour. Each biscuit has the same weight of 4 grams of chips. One recipe equals ± 5 ¼ servings and 1 portion equals 32 grams, namely 8 pieces of biscuits. Acceptance test of color and texture aspects there were no color differences (p = 0.660) and texture (p = 0.433) on the substitution of gude peanut flour 10%, 20% and 30%. Test of acceptance of aspects of taste and aroma there were differences in taste (p = 0.002) and aroma (p = 0.000) in substitution of gude peanut flour 10%, 20% and 30%. The conclusion obtained was that there were no color differences (p = 0.660) and texture (p = 0.433), there were differences in taste (p = 0.002) and aroma (p = 0.000) in the substitution of gude peanut flour 10%, 20% and 30%. 10% concentration has a better taste and aroma.

Abstract

The prevalence of stunting in Indonesia is still high at 30,8%. Low protein intake is one of the causes of stunting. The purpose of this study was to determine the nutritional analysis and organoleptic quality in cork fish sausages. This study used a completely randomized design with 3 repetitions. Nutrient analysis was obtained from the Luff schroll test for carbohydrates, fat test with shoxlet and protein test with micro kjedhall. Organoleptic quality with acceptance of taste, texture, color and aroma by descriptive. Research results with univariate analisis were the highest nutrient content of protein and carbohydrate in formula F1 (100%) is protein (16.71%) and carbohydrate (20.14%) and the highest fat content in formula F3 (60%) is as much as (18.52%). The most preferred organoleptic quality for aroma and taste is in formula F1 (100%), texture is in formula F2(80%) and the most preferred color is in formula F3 (60%). Abstract

This type of research is analytic research using the Cross-Sectional Study approach, to obtain data on the relationship of diet and parental income and the incidence of diarrheal diseases on nutritional status (BB / TB) of the students of SDN Daya 1. Populations in this study were all elementary school students of the third, fourth, and fifth grade of SDN Daya 1 Makassar City. The sample in this study were elementary school students in the grades III, IV and V in SDN Daya 1 located in Paccerakkang village, Biringkanaya Subdistrict, Makassar City, with the following criteria: class III-V students who were willing to become a sample; children are in good health at the time of sampling; and parents and teachers are willing to become respondents. Data analysis uses the Chi-Square test. The results showed that diet was not related to nutritional status as evidenced by the value of p = 0.48 (> 0.05), parental income was not related to nutritional status where most of the parents' income level was quite sufficient as evidenced by p = 0, 269 > 0.05) as well as the incidence of diarrhea not related to nutritional status as evidenced by p = 0.470 (> 0.05). It is recommended that the process of data collection is better collaboration between researchers and the school, making direct observations at the household level regarding food availability, and adding food intake variables to find out the meal portion of the sample. Keywords: Parental Income, Diet, Diarrhea and Nutritional Status
