Abstract

This study analyzed young dates (Phoenix dactylifera) effect on blood glucose in alloxan-induced male wistar rats. It used a completely randomized design with pre-post test and control group design. The research samples were 25 male white wistar rats that divided into 5 groups: (1) negative control group with no treatment (K1); positive control group with alloxan induction only (K2); treatment group 1 with alloxan induction and 0.25 g/day of young dates treatment (P1); treatment group 2 with alloxan induction and 0.5 g/day of young dates treatment (P2); and treatment group 3 with alloxan induction and 1 g/day of young dates treatment (P3). The result were tested by Kolmogorov-Smirnov normality test (p>0.05), Levene's homogeneity test (p>0.05), followed by General Multivariate Manova test by Wilks' Lambda, between-subject effect test, and LSD (p<0.05). The results indicated that young dates could effectively reduced the blood glucose levels (p = 0.000). The fasting blood glucose level in positive control group (K2) was different from negative control group (K1, p = 0.000) and all treatment groups (P1, p = 0.000, P2, p = 0.000 and P3, p = 0.000). 0.25 g/day of young dates treatment could effectively reduced the fasting blood glucose level in alloxan-induced male wistar rats. Abstract

ABSTRACT The objective of this study is to analyze the association between IMD, husband support, knowledge and mother’s occupation with exclusive breastfeeding in the Cerme Health Center in Gresik. This study uses a cross sectional design. Sampling using simple random sampling. Interviews were on 90 respondents who have children aged 7-24 months. This research was conducted at the Posyandu Puskesmas Cerme, Gresik. Statistical analysis was did bivariately with the chi square test. Coverage of exclusive breastfeeding in the working area of Cerme Health Center in Gresik Regency is 33.3%. The results of this study indicate that there is no relationship between IMD and exclusive breastfeeding (p value 0.347> 0.05), husband's support with exclusive breastfeeding (p value 0.80> 0.05), knowledge with exclusive breastfeeding (p value 0.343> 0.05) and mother's occupation with exclusive breastfeeding (p value 0.3528> 0.05). However, mothers who did IMD, received husband support and had good knowledge had a greater proportion of giving exclusive breastfeeding compared to those who did not do IMD, did not get husband support, and who had less and sufficient knowledge. Keywords: Exclusive breastfeeding, IMD, husband support, mother’s knowledge and occupation ABSTRAK Tujuan dari penelitian ini yaitu menganalisis hubungan antara IMD, dukungan suami, pengetahuan dan pekerjaan ibu dengan pemberian ASI eksklusif di Wilayah Kerja Puskesmas Cerme Kabupaten Gresik. Penelitian ini menggunakan rancangan cross sectional. Pengambilan sampel menggunakan simple random sampling dengan 90 responden yang memiliki anak usia 7-24 bulan. Penelitian ini dilakukan di Posyandu Puskesmas Cerme Kabupaten Gresik. Analisis statistik dilakukan secara bivariat dengan uji chi square. Hasil penelitian didapatkan bahwa pemberian ASI eksklusif di wilayah kerja Puskesmas Cerme Kabupaten Gresik sebesar 33,3% hasil dari penelitian ini menunjukkan bahwa tidak terdapat hubungan antara IMD dengan pemberian ASI eksklusif (p= 0,347) dukungan suami dengan pemberian ASI eksklusif (p=0,800) pengetahuan dengan pemberian ASI eksklusif (p=0,343) dan pekerjaan ibu dengan pemberian ASI eksklusif (p= 0,3528) di wilayah kerja Puskesmas Cerme Kabupaten Gresik. Ibu yang melakukan IMD, mendapat dukungan suami, dan memiliki pengetahuan baik memiliki proporsi yang lebih besar memberi ASI eksklusif dibandingkan dengan yang tidak melakukan IMD, tidak mendapatkan dukungan suami, dan yang memiliki pengetahuan kurang serta cukup. Kata kunci: ASI eksklusif, IMD, dukungan suami, pengetahuan ibu, pekerjaan ibu.

Abstract

The research objective was to determine the effect of the proportion of bran and guava on the levels of macro nutrition, fiber, acceptability, and the economic value of ice cream products, as well as being a snack for functional obese adolescents. The research method was experimental design with a completely randomized design consisting of 3 modified formulas (F1, F2, and F3) and 1 control formula tested on 42 panelists. Organoleptic were carried out by the Friedman test and advanced test Duncan's. Macro and fiber nutritional levels were obtained through laboratory tests and analyzed using the One Way Anova test continued Tukey test. The chemical test results for macronutrients and fiber showed a significant effect between the formula (0.00<0.05) and the macronutrients F0, F1, F2, F3, namely carbohydrates 32,70 g, 27,36 g, 2,78 g, 24,26 g, Protein 5,51 g, 7,30 g, 6,95 g, 6,19 g, fat 8,24 g, 6,01 g, 6,42 g, 6,76 g, fiber 0,86 g, 5,73 g, 5,30 g, 5,05 g. Organoleptic results (F0, F1, F2, F3) taste preferences 3,43, 3,26, 2,76, 2,31, aroma 2,98, 3,29, 2,90, 2,90, 2,55, color 3,24, 3,19, 3,21, 2,88, and texture 3,12, 3,14, 2,83, 2,71 , there is a significant treatment effect between the formula with the Chi-Square Asym.sig value <0.05 and the best formula is F1 with a mean rank of 39,5.

Abstract

Anak sekolah merupakan golongan usia yang mengalami pertumbuhan fisik, kecerdasan, mental, serta emosional yang sangat cepat, sehingga membutuhkan dukungan gizi yang optimal. Peran orang tua terutama ibu menentukan status gizi dan kecukupan zat gizi pada makanan anak, sehingga perlu ada kegiatan untuk meningkatan pengetahuan ibu terkait gizi pada anak sekolah. Kegiatan pengabdian kepada masayarakat ini dilakukan di komunitas Muslimah Sehat Indonesia, dimana anggotanya adalah para ibu dari berbagai daerah di Indonesia. Kegiatan ini bertujuan untuk meningkatkan pengetahuan ibu terkait gizi pada anak sekolah dengan cara edukasi gizi melalui media WhatsApp Group. Hasil dari kegiatan ini didapatkan terjadi peningkatan pengetahuan peserta sebanyak 46, 33% yang didapatkan dari pre dan post test. Diharapkan setelah kegiatan edukasi ini, dapat diaplikasikan kepada keluarga, terutama pada anak. Kata kunci: pengetahuan, gizi anak sekolah, WhatsApp Group

Abstract

Nutritional problems in Indonesia are still often encountered, such as malnutrition and poor breakfast habits. This activity aims to improve and increase the knowledge of schoolchildren's mothers and maintain normal nutritional status in schoolchildren in Indrodelik Village, Bungah District, Gresik Regency. This activity uses a combination research method (mixed method research) with primary data obtained directly from respondents through the implementation of baselines (interviews and filling out questionnaires) in Indro Hamlet, Indrodelik Village. Sampling of activities using purposive sampling method which is carried out when taking baseline data and samples taken are included in the inclusion criteria, namely aged 6 to 12 years. The results of this activity are that there is an increase in the level of knowledge before and after counseling and an increase in respondents' understanding regarding the intake consumed must be nutritionally balanced, although the results of the recall analysis are still not stable from day to day. But it has shown an increase and change in the intake of respondents from before counseling to after counseling.

Abstract

Stunting is a form of malnutrition which is characterized by an indicator of height according to age.The purpose of this study was to determine the socio-economic description, mother's education and feeding patterns to stunting toddlers in the Dapet Health Center work area, Balongpanggang District. This research method is descriptive observational. The population in this study was 90 stunting toddlers who were taken by purposive sampling technique. The independent variables in this study were socioeconomic, maternal education and feeding behavior. The dependent variable in this study is stunting. Collecting data using a questionnaire. Analysis of the data used is univariate analysis. The results of the study with 71 samples showed that as many as 98.6% of toddlers who experienced short stunting and 1.4% of toddlers who experienced very short stunting. The socioeconomic status of stunting toddlers is less than the Gresik Regency UMK 70.5%, more than the Gresik Regency UMK 29.5%. Low maternal education for stunting toddlers 56.3%. Stunting toddlers with high maternal education 43.6%. The feeding pattern of stunting toddlers is seen from exclusive breastfeeding, complementary feeding, feeding frequency, feeding size, feeding texture, feeding variations, food processing methods.

Abstract

Saat ini, penggunaan bahan kimia berbahaya sebagai bahan tambahan pangan (BTP) masih menjadi masalah besar bagi Indonesia. BTP yang marak digunakan oleh produsen jajanan adalah boraks, formalin dan rhodamine-B. Banyak kasus keamanan pangan yang kurang terjamin ditemukan di lingkungan sekolah dengan konsumen terbanyak adalah siswa. Penelitian ini bertujuan untuk melakukan identifikasi ketiga BTP serta menganalisa pengetahuan siswa tentang BTP dan cara deteksi bahan kimia berbahaya pada makanan. Penelitian ini bersifat deskriptif kuantitatif. Metode identifikasi kimia pada penelitian ini menggunakan tes kit boraks, formalin dan rhodamine B. Pengukuran tingkat pengetahuan dilakukan dengan cara memberikan kuisioner pada siswa. Sampel penelitian ini adalah 8 jenis jajanan yang paling banyak terjual di lingkungan SMA Muhammadiyah 1 Gresik serta 19 responden siswa SMA tersebut dengan teknik purposive sampling. Berdasarkan hasil analisa secara kimia diperoleh hasil bahwa sebanyak 12,5% sampel mengandung boraks, 25% mengandung formalin dan 12,5% terdapat rhodamine-B. Jenis sampel yang terdeteksi ada bahan kimia berbahaya adalah sosis dan minuman bewarna terang. Selanjutnya, dari 19 responden diperoleh hasil sebanyak 87,21% siswa memiliki pengetahuan yang baik tentang BTP sedangakn 58% siswa menunjukkan kurang memiliki pengetahuan identifikasi bahan kimia pada pangan. Dengan adanya jajanan yang masih mengandung formalin dan rhodamine-B serta pengetahuan siswa yang kurang tentang cara deteksi bahan kimia tersebut, maka diharapkan pihak sekolah memberikan edukasi yang optimal kepada siswa sehingga dapat mencegah dampak penyakit yang ditimbukan akibat mengkonsumsi jajanan yang kurang bergizi.

Abstract

The toddlers’ nutritional status is an health indicator must be considered because it can affect the growth and the development. The aim of this research is to analyze the relationship between mother’s knowledges, eating habits, and hygiene sanitation with the toddlers’ nutritional status (12-59 months) in the work area of Sembayat Public Health Center, Gresik Regency. The research is analitic observational research by using cross sectional design. The respondents in his study are 91respondent. Data collection using questionnaires and toddlers’ weight and height measurements. The data are analyzed by using Lambda test with significance α of < 0.05. The results showed that there is significant relation between mother’s knowledges with the toddlers’ nutritional status BB/U and TB/U. There is no significant relation between eating habits with the toddlers’ nutritional status BB/U and TB/U. There is significant relation between hygiene sanitation with the toddlers’ nutritional status BB/U and TB/U. Almost half of mothers who have good knowledge, have toddlers’ with good nutritional status. Most of toddlers’ families have healthy hygiene sanitation conditions and the toddlers’ have good nutritional status. The toddlers’ eating habits in good category do not mean having good nutritional status, this can be caused by inappropriate mother’s parenting, education efforts related to mother’s parenting are needed to improve nutritional status with parenting practices.

Abstract

Penelitian ini bertujuan untuk menganalisis zat gizi mie kering dengan substitusi kulit ari biji kedelai dan tepung wortel sebagai alternatif pencegahan obesitas pada remaja dan dewasa. Mie kering ini baik digunakan dalam upaya pencegahan obesitas karena bahan yang digunakan memiliki kandungan protein dan serat yang tinggi. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) yang terdiri dari 1 kontrol dan 3 formula perlakuan dengan 2 kali ulangan. Data uji laboratorium kandungan zat gizi mie kering yang diperoleh dianalisis menggunakan sidik ragam (ANOVA) dan uji lanjut Duncan. Hasil analisa uji laboratorium kandungan zat gizi mie kering terdapat perbedaan yang signifikan antar formula (p<0,05). Hasil uji efektifitas menunjukkan formulasi terbaik terdapat pada formula F3. Produk mie terbaik F3 memiliki kandungan zat gizi kadar protein 11,73 gram, karbohidrat 59,86 gram, dan serat 3,63 gram. Namun, perlu ditambahkan dari sumber serat lain seperti pada sayur dan buah untuk dapat mengoptimalkan kebutuhan serat harian pada remaja dan dewasa.
