Abstract

Abstract

Abstract Kembung fish (Rastrelliger sp.) is a pelagic fish with high catching production volumes. The high catching volume require the fishermen and traders to maintain the quality of fish because fish is highly perishable product. Formalin abbuse as a substance to inhibit deterioration of fish induce natural substances exploration as formalin substitute in the field. One of these natural substances which widely cultivated in Indonesia is Kappaphycus alvarezii. This study aim to determine the effect of red algae (K.alvarezii) on the quality of kembung fish. The research method is experimental with a Completely Randomized Design (CRD). The treatment used is different soaking solution concentration, namely A (K.alvarezii 0%), B (K.alvarezii 25%), C (K.alvarezii 50%), D (K.alvarezii 75%) and E (formalin 1%) with four repetitions in each treatment. The primary parameters measured were the total bacterial count and organoleptic of kembung fish. The secondary parameters measured were pH of kembung fish meat. The data analyzed by Analysis of Variance (ANAVA) and the differences between treatments were determined by Duncan's Multiple Range Test. The results showed that the red algae (K.alvarezii) with concentrations 0%, 25%, 50% and 75% significantly (p<0,05) on the quality of kembung fish. K.alvarezii able to inhibit the bacterial growth, but the organoleptic value (visibility, odor and texture) is lower than formalin. Based on these results, further research is needed regarding the use of appropriate concentrations so that the quality of kembung fish maintained as before the treatment (either from the total bacterial count and organoleptic value).

Abstract

Abstract White shrimp are aquatic organisms consumed by many people and a source of animal protein and fat needed by humans. Shrimp also require fat as a source of energy and metabolic processes to maximize growth. White shrimp meat contains high cholesterol so that it becomes an obstacle to consume white shrimp and high cholesterol in feed can affect the growth of shrimp. This problem can be solved by adding Crude Fish Oil (CFO) which contain high omega-3 fatty acids in white shrimp feed to decrease cholesterol content and source of dietary fat to increase fat retention in meat. The research problem is whether the addition of CFO in white shrimp feed effect on the decrease cholesterol content and increase of fat retention in meat. This research aims to determine the effect of CFO in white shrimp feed to decrease cholesterol and increase of fat retention in meat. The method used is experimental method with Completely Randomized Design (CRD) as the experimental design. The treatment used is different persentage CFO addition to white shrimp feed, ie P0 (0%), P1 (2%), P2 (4%), P3 (6%) and P4 (8%) each treatment is repeated 4 times. Analysis of the data using Analysis of Varians (ANOVA) and to determine the best treatment performed Duncan's Multiple Range Test. Results showed that the addition of CFO in feed give significant effect (p <0.05) to decrease the cholesterol content in meat. The best average decrease of cholesterol content obtained at P3 (135.22 mg/100 g) and P4 (133.51 mg/100 g). Addition of CFO in feed did not give significant effect (p>0.05) to increase fat retention in meat.

Abstract

Abstract Mackerel (Rastrelliger sp.) is a kind of fish that have high economic value and good nutrition but susceptible to decay. People often to use formaldehyde as a preservative so that the fish does not quickly to decay. The use of formaldehyde could be replaced by natural ingredients that contain antibacterial compounds, one of which is Kappaphycus alvarezii. This study aims to determine the effect of red algae extract (K.alvarezii) against the total number of bacteria and organoleptic value of mackerel (Rastrelliger sp.). The research design that done in this study is Completely Randomized Design (CRD). The treatments that given are immersion of mackerel in a solution of extract of K. alvarezii with a concentration of 0 ppm, 600 ppm, 700 ppm, 800 ppm and 1% solution of formaldehyde with four repetitions in each treatment. Data analyzes using Analysis of Variants (ANOVA) and followed by Duncan's Multiple Range Test to determine differences between treatments. The results showed that the extract of red algae (K.alvarezii) at a concentration of 0 ppm, 600 ppm, 700 ppm and 800 ppm significantly (p <0.05) against the total number of bacteria of mackerel (Rastrelliger sp.). The ability of extract of K. alvarezii at a concentration of 800 ppm equivalent to the ability of formaldehyde as an antibacterial ingredient in mackerel. K.alvarezii extract could inhibit the growth of bacteria but have not been able to maintain the quality of mackerel based on organoleptic test.

Abstract

Abstract The high interest of public to Marine fish, making more request of chub mackerel (Scomber japonicus). Chub Mackerel is one commodity that has economic and high nutrient value. The Chub Mackerel obtained from the Indonesian importation from China. However, fish importation can be affected by diseases caused by helminthic endoparasites infection. The parasites that infected chub mackerel probably be caused by pollution due to environmental factors that could decreased the immune system, and making a fish easily infected by helminthic endoparasite as Anisakis. This parasite is zoonosis and could infected to human. Therefore, identification and prevalence of this parasite was needed in order to human consumed and managed this fish correctly. The purpose of this study was to identify and to know the prevalence of this helminth that infected a chub mackerel fish (Scomber japonicus) from fish importation that were sold in Fish Landing Base Muara Angke, North Jakarta. Research methodology using survey methods through sampling at locations directly. Fish samples were examined as many as 60 samples of chub mackerel. The main parameters are observed prevalence of helminth and helminth that infect in gastrointestinal chub mackerel. The result identification of helmint that infect chub mackerel descriptively analyzed and presented in the form of figures and tables. The result showed the presence of the third-stage larvae Anisakis simplex that infected the intestinal mucosa and lumen of chub mackerel fish, in Fish Landing Base Muara Angke, North Jakarta with prevalence was 70%.

Abstract

Abstract Lead (Pb) has been recognized as hazardous metal because it is commonly found as contaminant, interfere the survival of aquatic organisms, and cause bioaccumulation process in aquatic biota at the waters. Bioaccumulation refers to the accumulation of substances in organism that can trough the food chain reaction of aquatic tissue. Bioaccumulation may occur in milkfish cultivated in fishponds around the Buntung river, Sidoarjo, because there are a lot of factories or industrial activities operating and disposing the waste along the river. The purposes of this study are to measure the lead (Pb) content in milkfish at pond around Buntung river, Sidoarjo, and to determine concentration of water and sediment river, water and sediment of fishponds, klekap, and milkfish meat from fishponds, and also to has exceeded specified maximum limit. Design of this study is descriptive study. The samples were collected from 4 stations that located in Buntung river, Sidoarjo, include water and sediment of river, water and sediment of fishponds, klekap, meats and gills from milkfish. Analyze the lead (Pb) content of water, sediment, and biota used Atomic Absorption Spectrophotometry (AAS). The histopathology slide was made by Haematoxylin-Eosin coloration. Cells of controls are the gill filaments at magnification up to 1000 times. The results showed concentration of lead (Pb) in the river water was about 0,018–0,028 ppm, the sediment of river (2,664–3,072 ppm), the water of fishponds (0,000-0,011 ppm), the sediment of fishponds (2,974-3,220 ppm), klekap (0,176-0,192 ppm), and milkfish meat (0,175-0,190 ppm). The lead concentration of each objects have lower than standardization of quality. The injuries found on the gill filaments of milkfish sample histopathologicaly are cell necrosis, rupture of secondary lamella, and congestion.
