Abstract

Maternal deaths in developing countries one of the causes is anemia in pregnancy, an increasing proportion of pregnant women with anemia. One effort to prevent and overcome the occurrence of anemia in pregnant women is maternal class program which aims to increase knowledgeand skill of mothers about pregnancy, childbirth, postpartum care and newborn care, through practice by using KIA book ( Child Mother Health). The purpose of this study is to determine the effectivenessof learning systems of pregnant mothers class in reducing of anemia in the District Grogol Sukoharjo District. This type of research is Quasi-Exsperimental Design, using Non Equivalent Control Group Design. Sampling by Consecutive sampling technique with the number of 40 respondents for each group.Measure of hemoglobin level using cyanmethemoglobin, andstattistic analysis using MannWhitneytest. The result showed that the average of maternal and non maternalclass knowledge was 86.9 + 76.5, the mean of anemia onmaternal and non maternal class was 11.9 g/dl and 11.2 g/dl.Based on the result of statistical test, there is difference of knowledge between maternal and nonmaternal class (p = 0,000), and there is difference of anemia between maternal and non maternal class(p = 0,001). The conclusion of riset was there is difference of knowledge and anemia between maternaland maternal class. Keywords : maternal class, Anemia

Abstract

Ficus Carica Fruits known as tin fruits contain high antioxidants which are believed to be able to help decreasing total cholesterol level. This study aimed to determine the difference in totalcholesterol levels of menopausal women with hypercholesterolemia before and after tea of ficus carica fruits treatment.This research was experimental study with pre-post test controlled groupdesign. Fourty menopausal women with total cholesterol >200 mg/dL were divided into 2 groups, the intervention group (P1; n=20) which was given two bags of tin tea (4 g); and the control group (P2; n=20) which was given the water considered as control. The samples were  taken by the randomsampling method. Analysis of normality data using Kolmogorov-Smirnov test and  continued with paired t-test statistic and independent t-test to determine the significant differences. Total cholesterol level of P1 significantly decreased by 119,45 mg/dl (p<0,01); while total cholesterollevel in control group decreased by 1,15 mg/dl (p=0,072). Giving the tea of ficus carica fruits can significantly decrease total cholesterol in menopausal women with hypercholesterolemia.Keywords: tin tea, hypercholesterolemia, menopausal women, total cholesterol level.

Abstract

This study aimed to develop and evaluate the physicochemical properties and sensoryevaluation of cowpea-based cheese (CBC). CBC made from a blend of cowpea extract (500 ml)and skim milk (100 ml) which were added 1% (ratio 50:50 of Lactobacillus bulgaricus [LB] andStreptococcus thermophilus [ST]) as formula 1 (F1), 2% LB+ST as F2, and 3% LB+ST as F3. Allformulas were triplicate for total fat (TFC), calcium (CC) and lactic acid content (LAC) analysis inaccredited laboratory. Sensory evaluation was tested by 25 semi-trained panelists. In percentage,TFC of F1, F2 and F3 were 0.12%, 0.13% and 0.12%, respectively. CC of F2 in mg/100 gram wasthe highest (129.58) if compared to F1 (90.13) and F3 (110.94) while F3 was the highest (14929.66)for LAC (in mg/ml) if compared to F1 (9437) and F2 (11178.39). Only F2 has the highest acceptancefor all sensory parameter.  Keywords: cowpeas, calcium, fat, vegan cheese

Abstract

Consumers must be more critical in making decisions before buying food products. This study aims to determine the relationship between knowledge with student attitudes in purchasing decisionsfor halal products. The population of this study were the students of Muhammadiyah University ofSemarang. The variables that studied were the level of knowledge of halal food and the attitude ofdecisions for buying halal products. This type of research was observational with a cross sectionaldesign. The tool that used were questionnaires and data analysis by using two stages, namelyunivariate and bivariate (Simple Linear Regression). The results of the study revealed that thestudent's knowledge of halal food was the most moderate category at 40.2% and positive positiveattitude was 53.6%. Based on statistical tests, it can be concluded that there is a relationship betweenknowledge and attitude in buying halal products.Keywords: Halal, Product, Knowledge, Attitude.

Abstract

Utilization of cowpeas as raw material of vegan cheese be alternative food for people who can’t consume the common cheese. This research was conducted to know about calcium content, fat content, lactic acid content and organoleptic. The method of this research is experimental using 3 treatments: Utilization concentration of bacteria Lactobacillus bulgaricus dan Streptococcus thermophilus with 1%, 2%, and 3% concentrations. This research showed utilization concentrations of bacteria Lactobacillus bulgaricus dan Streptococcus thermophilus 2% indicated calcium content 129.58 mg/100gr and fat content 1.16%. 3% concentration indicated 14929.66 mg/L lactic acid. The result of organoleptic test is cowpeas cheese is the most favorite omong the panelist with 2% concentration of lactic acid bacteria. This research also showed that using Lactobacillus bulgaricus dan Streptococcus thermophilus to produced cowpeas cheese affect the organoleptic test for taste, color, smell dan texture parameter.

Abstract

Health impact which caused by overnutrition is related by excess body fat. Thus, nutritionalstatus monitoring in adolescent is crucial because the prevelance of overnutrition in adolescentincreased per years. Body Mass Index per age (BMI/A) is generally used to determine nutritionalstatus, but incapable to measure overnutrition related excess body fat precisely. Body fat percentageis used to determine overnutrition but special equipment and capability are required. The purposeof the study is to analyze correlation between BMI/A and body fat percentage and verify BMI/A’ssensitivity-specificity as body fat percentage’s indicator. In this cross-sectional study, 82 adolescentsfrom SMAN 47 Jakarta are chosen to participate by simple random sampling. Body fat percentageand BMI/A are being taken by anthropometric instruments, where body fat percentage used to bethe gold standart. Using BMI/A, the prevalence of overnutrition is 23,2%. Its lower than using thegold standart (35,4%). The correlation between BMI/A and percent body fat is r=0,814; p=0,000.Their sensitivity is 55,17% while their spesificity is 94,34%. Eventhough there is strong correlation,BMI/A is less sensitive as body fat percentage’s indicator to determine nutritional status inadolescent. Body fat measurement is needed to validate value of BMI/A.Key words: adolescent, BMI/A, body fat percentage

Abstract

Body fat percentage is used to determine overnutrition but special equipment and capability are required. The purpose of the study are to analyze correlation between BMI/A and body fat percentage and verify BMI/A’s sensitivity-specificity as body fat percentage’s indicator. In this cross sectional study, 82 adolescents from SMAN 47 Jakarta are chosen to participate by simple random sampling. Anthropometric instrument that used are microtoise, spring scales, and bioelectrical impedance analysis (BIA). There is a significant correlation with a strong value between BMI/A and percent body fat (r=0,814; p=0,000). BMI/A as percent body fat’s indicator has low sensitivity and high specificity (Se= 55,17%; Sp= 94,34%). Eventhough there is strong correlation, BMI/A is less sensitive as percent body fat’s indicator to determine nutritional status in adolescent, thus body fat measurement is needed to validate value of BMI/A measurement.

Abstract

Hiperkolesterolemia merupakan suatu kondisi meningkatnya  konsentrasi kolesterol total dalam  darah  yang  melebihi  nilai  normal.  Terdapat hubungan antara peningkatan kadar kolesterol total dengan Usia menopause. Buah tin mengandung antioksidan yang tinggi sehingga diyakini mampu membantu menurunkan kadar kolesterol total.Penelitian ini bertujuan untuk mengetahui perbedaan kadar kolesterol total wanita menopause hiperkolesterolemia sebelum dan sesudah pemberian teh buah tin.Penelitian  ini  merupakan penelitian eksperimental dengan  rancangan  Pre test-Post test Control Group Design pada 40  wanita menopause yang mengalami hiperkolesterolemia. Sample berjumlah 40 wanita menopause dibagi menjadi 2 kelompok yaitu: kelompok perlakuan dan kelompok kontrol. Pengambilan sampel mengggunakan teknik random sampling. Analisis normalitas data menggunakan uji Kolmogorov-Smirnov dan dilanjutkan dengan uji  statistik Paired t-test dan independent t-testuntuk mengetahui perbedaan yang bermakna.Pemberian  teh buah tin pada kelompok intervensi sebanyak 4gr/hari dapat menurunkan kadar kolesterol total sebanyak 119,45 mg/dl(p=0,00). Pemberian  air mineral 600 ml/hari pada kelompok kontrol dapat menurunkan kadar kolesterol sebanyak 1,15 mg/dl(p=0,072). Perlakuan yang paling efektif dalam menurunkan kadar kolesterol total adalah dengan pemberian teh buah tin.Pemberian teh buah tin dapat menurunkan kadar kolesterol total secara  signifikan, sedangkan pemberian air mineral tidak dapat menurunkan kolesterol total secara signifikan.

Abstract

The prevalence of cardiovascular disease continues to increase as a result of dietary changes that have an impact on abnormal lipid profiles and oxidative stress. Efforts to improve lipid profiles byconsuming food contain antioxidant compounds that have the potential to improve blood lipid profiles. The aim of the study was to obtain a description of the content as an antioxidant in the formula of the combination of soybean tempeh flour with rice bran.Research method: This type of experimental research is to find out the most optimum antioxidant content of the formula. Making formulas, (1) yellow soybean tempeh flour + white bran flour, (2 black soybean tempeh flour + white bran flour (3) yellow soybean flour tempeh + red bran flour,(4) black soybean flour tempeh + red bran flour, with composition of 1: 1 and weighs 112 grams each, non-calorie sweetener 3 grams and food flavorings 3 grams, dissolved in cold water as muchas 250 cc, analysis of nutrients using the AOAC method, 2005 . Data analysis: Data obtained are averaged and displayed in table form, then compared between treatments. Results: The combination of YST + RBF with a composition of 1: 1 has a higher isovlavone content while the highest content of vitamin E is found in the combination of YST + WBF. Conclusion: There is sufficient isovlavone and tokoverol content from a combination of tempeh flour and bran to improve blood lipid profile.Keywords: Isoflavones, vitamin E, formula of tempeh and bran flour, blood lipid profile
