Abstract

Children aged 2-5 years are one of the nutrition-prone groups, during this period a decline in growth rate, decreased growth followed by decreased appetite. Based on Riskesdas (2013), there were nutritional status problems in Central Sulawesi, including the prevalence of Stunting by 40%, prevalence of underfive malnutrition by 25%, prevalence of underweight toddlers by 15% and LBW (Low birth weight) by 18%. While the prevalence for the proportion of Stunting children in Palu according to Riskesdas Central Sulawesi in 2013 was 35%, the prevalence of underweight children was 12%, and for cases of malnutrition had a prevalence of 17%. The purpose of this study was to determine the description of parental and food patterns of children aged 2-5 years in Taipa District, North Palu District. This type of research is descriptive. The sample in this study were children aged 2-5 years totaling 77 toddlers. The sampling technique in this study uses the stratified random sampling method. The results showed that parental applied by parents to children is not authoritarian, not democratic and permissive. food sources of carbohydrates that are often consumed are rice, animal protein sources are catfish, chicken eggs, vegetables that are often consumed are Moringa vegetables. There is no fruit that is often consumed by children. The conclusion of this study is the parental applied by parents to children in Taipa Village, North Palu District, the most dominant is democratic parenting, where there are 71 parents who apply this type of fostering and food that is often consumed is rice, catfish, chicken egg and moringa vegetable.

Abstract

The provision of food service plays an important role in achieving optimal students health status in school. The purpose of this study is to determine the level of student satisfaction with food menus served in the organization of food at the Al-Fahmi Integrated Islamic Middle School in Palu City 2019. This research is a type of qualitative research with a descriptive approach. The sample in this study was the total of the population, namely all students in grades 7 and 8, amounting to 95 people in the Al Fahmi Integrated Islamic Middle School in Palu City. Data analysis used was univariate analysis. Data analysis began with transcripts and in-depth interviews. The results of this study indicate that of the 95 respondents, 91.6% expressed satisfaction with the taste of the food served. 89.5% expressed satisfaction with the appearance of the food served, 78.9% expressed satisfaction with the portion of food served, 94.7% expressed satisfaction with the level of maturity of the food served, 87.4% expressed satisfaction with the cleanliness of the food served. The conclusion of this study was that respondents were satisfied with the food served at the Al-Fahmi Integrated Islamic Middle School in Paluri City. Suggestions from this study should make students' dining rooms and divide portions of food so that all students get equally even portions of food.

Abstract

High cholesterol levels constitute 56% of the factors that contribute greatly to the cause of CHD. Coronary heart disease (CHD) is a disease of the heart and blood vessels caused by narrowing of the coronary arteries. The purpose of this study to analyze the relationship of sports habits, circumference waist hip ratio, consumption pattern, level of fiber adequacy, and smoking habits with total cholesterol levels heart policlinic patients RSUD Banten. This type of research uses a cross sectional design, with a sample of 96 respondents namely heart policlinic patients. Analysis of the data used in this study is the Chi-square test. The Results show Respondents with normal nutritional status were 66.70%, respondents who consumed cholesterol-lowering drugs were 55.2%. Respondents with normal cholesterol levels were 53.10%, respondents with exercise habits were 56.25%, respondents with RLPP were at a risk of 71.87%. Respondents did not smoke as much as 66.70%. There was a relationship between exercise habits, hip waist circumference ratio, to total cholesterol levels (p <0.05). There is no relationship between smoking habits on total cholesterol levels (p> 0.05). This study concluded that the sports habits, RLPP, affect total cholesterol levels, while smoking does not affect total cholesterol levels.

Abstract

Unit cost calculation plays an important role in the effectiveness and efficiency of an organization's budget. The purpose of this research is to analyze the unit cost in the food menu served in the organization of food in the Al-Fahmi Integrated Islamic Elementary / Middle School in Palu City. This type of research used in this research is a quantitative study with descriptive approach with interview techniques and sample collection in this study is the entire menu of food served at SD / SMP IT Al-Fahmi, Palu City. The results showed that the implementation of food in SD / SMP IT Al-Fahmi Palu City is serving 1027 consumers, with 5 days menu cycle, there is a standard menu / recipe, and the prevailing food unit price is the market price. The available workforce is 24 people, aspects of labor costs consisting of salaries, incentive costs, transportation, and health benefits. Overhead costs consist of fixed costs with goods that use 3 years, 10 years and 15 years. Variable costs are consumables, electricity and fuel and depreciation. So that the obtained cost of food per person per day is Rp.9,661.83, -, labor costs per person per day is Rp.1,982.91, overhead costs per person per day is 265.73, -, unit cost at Rp.14,012.31 / person / days, and profit is Rp. 2,101.84, - / person / day. It is expected that the calculated unit cost can be considered in budget planning so that effectiveness and efficiency can be increased.

Abstract

Nutritional status is an expression of the state of the body that is affected by consumption of food and nutrients. Nutritional status in infants is influenced by both direct and indirect factors. The immediate factor is food intake and disease. This study aims to determine the nutritional status and frequency of diarrhea in toddlers aged 0 to 59 months at the Donggala Health Center in Donggala Regency. This research is a descriptive study that is a study conducted to see a picture of nutritional status in children aged 0 to 59 months at the Donggala Health Center in Donggala Regency. The study population was 78 toddlers suffering from symptoms based diarrhea. The data obtained are secondary data from the Donggala Health Center. The results of this study indicate that toddlers who experience malnutrition and malnutrition as much as 35.9%, over 7.7% nutrition from 78 toddlers. Based on PB / U, toddlers are very short and 35.9% short, toddlers are 7.7% tall. Whereas based on BB / PB, toddlers are very thin and thin 15.4% and there are no toddlers with fat nutritional status. Frequency of diarrhea based on criteria of diarrhea with severe dehydration 16.7%, mild dehydration diarrhea 38.5%, diarrhea without dehydration 37.2% and dysentery 7.7%. The conclusion of this study is that the nutritional status of children under five who suffer from diarrhea based on the indicators BB / U and PB / U mostly 56.4% normal nutritional status. While the results of the BB / PB indicators are mostly toddlers with normal nutritional status (84.6%). The highest frequency of diarrhea based on the criteria of diarrhea with mild to moderate dehydration is 30 people (38.5%).

Abstract

Environmental health is important in improving public health, one of the environmental health problems is poor sanitation. Sanitation improvement is included in the improvement target in Indonesia to achieve the 2030 Suntainable Development Goals (SDG's), currently it is still an obstacle due to lack of public awareness of environmental sanitation such as household problems with open defecation, household waste treatment, clean water and garbage treatment. The incidence of diarrhea in the Work Area of the Siko Health Center, 11.8% (24 cases) of 202 cases of diarrhea in 2020 Occurred in Kasturian Village, Ternate City. The purpose of the study was to determine the description of the implementation of the 5 Pillars of Community-Based Total Sanitation (Stbm) in Kasturian Village, Ternate City in 2021. Descriptive research method with quantitative analysis techniques on 43 respondents in Kasturian Village, Ternate City. Data obtained by using a questionnaire using Google Form and analyzed using SPSS Software. The results of the analysis show that Pillar 1 of Stop Opening Open Defecation (BABS), it is known that there is still Inappropriate Sanitation / Cubluk 20.9% . Pillar 2 Community-Based Total Sanitation Washing Hands with Soap (CTPS) is known to be true for CTPS 83.7. Pillar 3 stores food equipment correctly 90.7%, stores food processing equipment correctly 95.3%, closes food and beverages correctly: 100%. Abstract

The contribution of iodine from food is thought to depend largely on the consumption of iodized salt. Potassium iodate (KIO3) is often used as a source of iodine in iodized salt, but experimental data on the stability of potassium iodate at low temperature storage are still very limited. This study aims to determine the effect of KIO3 conditions of iodized salt stored at low temperatures (0oC, 5oC, 13oC, 15oC, and a temperature range of 29-33oC). This research is a descriptive type, which aims to determine the KIO3 content of iodized salt at low temperature storage using salt samples purchased from modern markets. The results obtained indicate that the storage at low temperatures of iodized salt resulted in a decrease in KIO3 levels. The loss of KIO3 in iodized salt tends to increase the lower the temperature. Depreciation of KIO3 content in iodized salt at low temperature storage, namely: 0oC (17.4%), 5oC (7.3%), 13oC (6.8%), 15oC (2.4%) and a temperature range of 29-33oC ( 2.3%). Based on the results of the study, it can be concluded that the KIO3 content in iodized salt can experience shrinkage at low temperature storage.

Abstract

There has been a decrease in the age of menarche in the last few years. Various degenerative diseases can appear due to early menarche, women with early menarche have a relatively higher risk of heart disease, breast cancer, and increase 2.3 times the risk of metabolic syndrome regardless of ethnicity and race. Early menarche can be caused by genetic factors or changes in environmental factors, maternal age of menarche (genetic), nutritional status,and lifestyle. The purpose of this research is to find out the relationship of dietary intake, nutritional status, and maternal age of menarche with early menarche in adolescents in the Perumahan Bumi Pertiwi 2, Bogor. This study uses a cross sectional design with research subjects is adolescents with aged 10-14 years and life in the Perumahan Bumi Pertiwi 2 as many as 40 people. The variables studied in this study were food intake, nutritional status, and age of maternal menarche. The results of this study are there is a relationship between protein intake and nutritional status with the age of menarche, while the energy intake, fat, carbohydrates, calcium, and the age of maternal menarche have no relationship with the age of menarche in adolescents in the Bumi Pertiwi 2

Abstract

Based on data from the Palu City Health Office regarding the visits of toddlers to posyandu, Mamboro is in the 3rd position with a percentage of 73.33%. This study aims to determine the factors that affect the frequency of visits to the Posyandu in West Mamboro, the working area of ​​the Mamboro Community Health Center. This type of research is analytic with a cross-sectional design. Sampling was done by taking data at the health center, with a total sampling technique. Data collection was carried out by direct interviews using a questionnaire. Data analysis used the chi-square test with a value of α = 0.05. The results showed that the frequency of active visits to posyandu was 72.4%. The percentage of unemployed and active workers at the posyandu was 58.7% (p value = 0.225;> 0.05). The percentage of good and active knowledge at the posyandu was 29.0%. The percentage of good family motivation makes mothers under five active to posyandu 62.3% (p-value = 1,000;> 0.05). The percentage of good performance of health workers makes mothers under five active to posyandu 57.9%. The percentage of good cadre performance makes mothers under five active to posyandu 56.5%. The conclusion is that there is an influence between work and the frequency of visits, there is no influence between knowledge, family motivation, the performance of health workers, and performance of cadres with the frequency of visits to posyandu.

Abstract

The hospital is one of the health service industries which initially only carried out activities and recovery. However, with the development of science and technology, hospitals tooIncreasing efforts to improve service quality. The purpose of This research is to see the overview of the usual leftovers that are served given garnish and not given garnish in the VIP room of Undata Hospital Palu, Central Sulawesi Province. This research method is descriptive. The results obtained were 6 respondents for the food given Garnish, of the 6 respondents there is no leftover.While 6 respondents for food that was not given garnish, out of 6 respondents only 1 respondent whose were not leftover and 5 respondents had leftovers (staple food, animal side dishes, vegetable side dishes, vegetables).
