Abstract

Tofu, a food product made from soybean, contain water and it is very easy to overgrown microbes.Based on a survey, many products of tofu contain formaldehyde as preservative. Formaldehyde is apreservative that the use is prohibited for food because it can cause cancer in humans. The aim of thisstudy was determined concentration of formaldehyde in tofu from traditional market Ciputat usingSpectrophotometer UVI-VIS. Steam distillation was used for sample extraction process. Distillate wasreacted with Nash reagent. The equation of calibration curve is y=0,0032x – 0,0079 and correlationcoefficient of the linear regression of 0,9992. The experimental results obtained LOD value of11.1328 μg/ml, LOQ value of 37,1094 μg/mL The precision of this analytical method were lower than2% for each of the sample, while method’s accuration for tofu was 98,69% ± 0,4085%. Results ofsample analysis from Ciputat market, samples were detected containing formaldehyde. Formaldehydeconcentrations are 104,87 μg/mL, 11,21 μg/mL, 1,96 μg/mL, 190,80 μg/mL, 201,98 μg/mL, 10,47μg/mL, and 3,31 μg/mL.

Abstract

Dalam penelitian berkelanjutan untuk pencarian senyawa-senyawa yang bersifat insektisida daritanaman Kalanchoe (Cocor bebek) Indonesia, diperoleh hasil bahwa ekstrak metanol daun Cocorbebek (Kalanchoe daigremontiana) memberikan aktivitas insektisida yang kuat terhadap instar ke tigalarva ulat sutera (Bombyx mori). Ekstrak metanol yang diperoleh selanjutnya dipisahkan senyawasenyawanyamenggunakan partisi dengan pelarut organik dan kombinasi kolom kromatografi padasilika gel dan ODS sehingga dihasilkan satu senyawa aktif insektisida. Struktur kimia senyawa yangbersifat insektisida tersebut ditentukan dengan metoda spektroskopi dan perbandingan data spektrasenyawa analog yang telah diperoleh dari penelitian sebelumnya sehingga senyawa aktif insektisidatersebut diidentifikasikan sebagai senyawa turunan bufadienolida, daigremontianin. Daegremontianinmenunjukkan aktivitas insektisidal yang kuat terhadap instar ke tiga ulat sutera (Bombyx mori) denganLD50 0,9 μg/g diet.

Abstract

NIST Standard Reference Material (SRM 1566b) was employed for the determination of Iron (Fe) andCalcium (Ca) as nutrients in food matrix using Flame Atomic Absorption Spectrometry (F-AAS). Thecertified value of SRM 1566b for Fe and Ca are 205.8 ± 6.8 mg/kg and 0.0838 ± 0.0020 (%) or 838 ±20 mg/kg, respectively. This certified values are based on results obtained by single primary method(Isotope Dilution Inductively Couple Plasma Mass Spectrometry) at NIST with confirmation by othermethods at National Metrology Institute of P.R. China. This paper proposed a method fordetermination of Fe and Ca in food matrix as recommended by AOAC official with a littlemodification. The method was commenced from the destruction of all organic matter by dry oxidationbefore analysis by standard addition. Under optimum condition, the results of the determination of Feand Ca in SRM 1566b were agreed well with the certificate value. This method would be useful forroutine analysis in food testing laboratories.

Abstract

Minyak goreng bekas dapat digunakan sebagai bahan baku pembuatan biodiesel. Kadar asam lemakbebas yang tinggi dalam minyak goreng bekas menyebabkan perlunya dilakukan pretreatmentterhadap bahan baku. Asam lemak bebas dapat diturunkan kadarnya dengan mereaksikan minyakgoreng bekas dengan metanol (reaksi esterifikasi). Pada reaksi esterifikasi didapatkan kondisi optimal: waktu reaksi 2,5 jam, suhu 60 oC dan konsentrasi katalis asam sulfat 0,25 %. Pada kondisi ini asamlemak bebas dapat diturunkan kadarnya dari 2,5 % menjadi 1,1%.

Abstract

Telah dilakukan isolasi dan karakterisasi senyawa α-amirin dari kulit batang binjai (Mangiferacaesia). Hasil analisis spektra IR menunjukkan adanya gugus OH, C-H, C=C, dan gem dimetil.Spektra 1H-NMR dan 13C-NMR menunjukkan adanya 30 karbon, delapan diantaranya merupakanunit metil, dan satu ikatan rangkap. Struktur senyawa dikarakterisasi berdasarkan data spektroskopiIR dan NMR serta dibandingkan dengan data spektroskopi dari literatur. Berdasarkan data tersebut,senyawa hasil isolasi adalah α-amirin.

Abstract

Penelitian tentang kemampuan penyerapan zeolit alam Karangnunggal sebagai sorben dalam larutannatrium silikat telah dilakukan. Penelitian ini bertujuan untuk mengetahui efisiensi penyerapan zeolitterhadap unsur pengotor larutan natrium silikat serta mengetahui hubungan penyerapan zeolit denganbeberapa parameter adsorpsi. Untuk itu proses adsorpsi dilakukan dengan beberapa parameter,diantaranya waktu kontak, massa sorben, pH, temperatur. Hasil analisa menggunakan SpektroskopiSerapan Atom (SSA) menunjukkan bahwa zeolit alam Karangnunggal yang diaktivasi dengan H2SO4dapat digunakan untuk menyerap Fe3+ dalam larutan natrium silikat. Kondisi optimum penyerapanFe3+ dalam larutan natrium silikat dicapai dengan parameter waktu kontak selama 60 menit, massazeolit yang digunakan sebanyak 3 gram, pH 3, dan pada temperatur ruang. Tetapi zeolit tersebut tidakefektif untuk menyerap Mg2+ dan Ca2+ dalam larutan natrium silikat.

Abstract

A research on antioxidant activity of kecombrang flower ( Etlingera Elatior) water extract leading tojelly candy formulation was conducted. This experiment aims to elucidate the potential usage ofkecombrang flower as a functional food ingredient. Antioxidant activity of the kecombrang flowerwater extract was determined using Diphenyl Picryl Hidrazyl ( DPPH) method. In order to elucidatethe responsible compound for antioxidant activity, GCMS analysis was undertaken. Water extract ofkecombrang flower have antioxidant activity ( IC50=61,6497 ppm) and based on GCMS analysis itcontained 1-dodekanol ( tR=11,60, area=11,73, similarity at 95 %), 3-metil-1-oxo-2-buten 1-(21,41,51-trihidroxyl phenil) ( tR=13,02, area=3,17, similarity at 57 %) and 1-tetradecene ( tR= 13,26,area=6,03, similarity at 98 %). Formulation of jelly candy using kecombrang flower was designedand based on organoleptic test, C formula ( pink, sample code 763) was the optimum jelly pepermintformula with average score of 3,52.
