Abstract

Preconception nutrition education is one of the iefforts to prepare the millennial generation to face marriage and produce healthy and quality offspring. The characteristics of millennial generation who understand information technology and the occurrence of a pandemic are the reasons to use online communication media in nutrition education. This study aims to determine the most effective combination of online communication media (Microsoft Sway-Whatsapp and Microsoft Sway-Zoom Cloud Meeting) used in preconception nutrition education for the millennial generation. The study used a quasi-experimental method with a nonequivalent control group pre-test and post-test design. Samples of 60 people obtained by the purposive sampling technique. Quantitative data on nutritional knowledge between groups were analyzed by independent t-test. Research shows that using a combination of online communication media can effectively improve educational outcomes. There is no significant difference in the results of millennial nutrition education in the use of the two combinations of online communication media, but the use of the Microsoft Sway-Whatsapp combination is considered to give better results because it is considered practical, easy to use, and does not require more quota pulses. The use of online communication media in education is necessary. considering media capabilities, internet network, and access costs for optimally goals.

Abstract

Gondoruso village, Pasirian Lumajang has many coconut trees. However, the coconuts were only harvested and sold in the local market at a price of IDR 2,000-3,000/fruit. Some local residents had initiated efforts to process coconuts into cooking oil, but the resulting oil smelled rancid so they stopped it. This paper reported the results of our community service activities in assisting Gondoruso Village residents to proceed coconut into cooking oil that meets the SNI 3741:2013 quality standard. The aim was to train the residents’ skills in producing qualified coconut cooking oil so they could earn extra family income. Eight old coconuts were grated, and thick coconut milk was taken. The coconut milk was left overnight in the refrigerator to produce lumps of coconut milk. The lumps of coconut milk were taken and cooked over low heat. About 10 minutes later, the oil started to come out, and the cooking process continued for 40-45 minutes until all the oil-came out, and 550 ml of cooking oil was produced. The SNI 3741:2013 quality test revealed that the cooking oil was of very good quality because the values of 6-SNI parameters met the standard, i.e., organoleptic is liquid, clear yellow, sweet coconut, and tasteless; moisture content=0.13% w/w; acid number=0.06% w/w; peroxides number=0; the pelican oil=negative, and the linoleic acid=0.13%. The production and market analyses stated that the production cost of 550 ml of coconut oil=IDR 27,600, while the selling price in the market=IDR 80,000/500 ml.

Abstract

Berdasarkan hasil SSGI (2021), prevalensi stunting di Kabupaten Nganjuk yaitu 25,3%. Salah satu desa yang ditetapkan sebagai lokus stunting adalah Sudimoroharjo dengan prevalensi sebesar 13,5%. Data dikumpulkan dengan teknik wawancara, observasi dan focus group discussion secara langsung kepada ibu bayi dan balita stunting. Sebanyak 52 kader, 3 bidan dan 15 mahasiswa dari universitas negeri surabaya (unesa) berpartisipasi dalam program dan dibagi ke dalam 8 kelompok di setiap rukun tetangga (RT) selama 3 bulan. Sebelum dilakukan pendampingan, ibu bayi dan balita kurang berusaha untuk memberikan makan kepada anak baik dari segi frekuensi maupun komposisi. Program pendampingan yang dilakukan terdiri dari: penyuluhan mengenai isi piringku dengan prinsip beragam, bergizi, seimbang dan aman di setiap posyandu setiap hari, pendampingan stunting dari rumah ke rumah, melakukan layanan konsultasi gizi setiap hari di puskesmas pembantu (pustu). Selain itu juga diberikan makanan tambahan berupa susu 1x/minggu dan biskuit bagi bayi dan balita dengan gizi buruk dan stunting sekali dalam satu bulan. Monitoring dilakukan dengan meminta ibu dan anak untuk datang setiap satu atau dua minggu sekali ke pustu setelah PMT habis untuk melakukan pengecekan status gizi anak. Selanjutnya kader, bidan dan mahasiswa mengunjungi rumah ibu dengan anak stunting dalam 1 kali sebulan untuk menanyakan apakah pmt yang diberikan dikonsumsi habis atau tidak. Setelah diberikan pendampingan secara langsung ibu dapat memahami bagaimana menerapkan B2SA baik dari segi jumlah, jenis lauk serta frekuensi makan anak. Ibu juga memberikan pmt kepada anak sampai habis, sehingga prevalensi stunting turun menjadi 9,21%.

Abstract

Stunting adalah salah satu masalah kesehatan yang dipengaruhi oleh berbagai macam faktor. Termasuk 1000 Hari Pertama Kehidupan (HPK) atau golden age yang dimulai sejak di dalam kandungan hingga anak berusia 2 tahun. Usaha yang dapat dilakukan untuk mencegah stunting salah satunya melalui intervensi gizi spesifik dengan mencegah dan mengurangi gangguan secara langsung pada ibu hamil. Penelitian ini bertujuan untuk mengetahui pengaruh edukasi gizi pencegahan stunting melalui WhatsApp group sebagai alat dalam meningkatkan pengetahuan dan sikap gizi ibu hamil. Jenis penelitian kuantitatif menggunakan metode True Eksperimental dengan rancangan penelitian pretest postest with control grub. Teknik pengambilan sampel menggunakan Purposive Sampling. Pengetahuan gizi dianalisis dengan Paired Sample T-Test. Sikap ibu hamil dianalisis dengan Independen Sampel T-Test Penelitian ini menunjukkan bahwa WhatsApp group sebagai alat edukasi efektif untuk meningkatkan pengetahuan dan sikap gizi ibu hamil. Hal ini dapat digunakan sebagai alternatif edukasi ibu hamil di masa pandemi Covid-19 yang tidak memungkinkan untuk berkumpul secara langsung.

Abstract

Posyandu merupakan pelayanan kesehatan dasar yang dapat memantau pertumbuhan dan perkembangan bayi dan balita sehingga dapat mendeteksi secara dini masalah kesehatan yang terjadi. Partisipasi ibu menjadi faktor utama tercapainya pemantauan tumbuh kembang balita di posyandu. Keaktifan ibu membawa balita ke Posyandu berpengaruh terhadap tingkat pencapaian penimbangan balita. Penelitian ini bertujuan untuk mengetahui pengaruh status pekerjaan, paritas, dan pengetahuan ibu terhadap partisipasi ibu balita dalam program posyandu Desa Panggih, Kecamatan Trowulan, Kabupaten Mojokerto. Jenis penelitian kuantitatif menggunakan metode Cross Sectional dengan pengumpulan data menggunakan kuesioner, analisa data menggunakan uji Chi Square dan regresi logistik ganda. Teknik pengambilan sampel menggunakan Random Sampling. Penelitian ini menunjukkan variabel yang berpengaruh terhadap partisipasi ibu ke Posyandu adalah status pekerjaan (p 0,001) dan pengetahuan (p 0,000), sedangkan variabel paritas (p 0,078) tidak berpengaruh secara signifikan. Variabel yang paling berpengaruh adalah status pekerjaan (OR 17,179), dimana ibu yang tidak bekerja akan lebih aktif berpartisipasi dalam posyandu daripada ibu bekerja. Variabel yang paling berpengaruh selanjutnya adalah tingkat pengetahuan (OR 16,219), dimana ibu dengan pengetahuan baik lebih aktif berpartisipasi dalam posyandu dibandingkan ibu dengan pengetahuan cukup/kurang. Berdasarkan hasil analisis disimpulkan terdapat pengaruh yang signifikan antara status pekerjaan dan pengetahuan ibu terhadap partisipasi ibu dalam program Posyandu Balita

Abstract

Santriwati merupakan seorang pelajar perempuan yang mengikuti Pendidikan agama islam dan menetap di suatu pondok pesantren. Masalah gizi remaja muncul karena asupan gizi yang kurang baik dan persepsi salah tetang Body Image (citra tubuh). Pada pandemic covid-19 pembelajaran dilakukan secara daring. Zoom merupakan aplikasi layanan konferensi video. Penelitian ini bertujuan untuk mengetahui pengaruh media zoom dan buku saku serta efektifitas edukasi melalui Zoom dan Buku Saku terhadap pengetahuan dan sikap tentang gizi seimbang dan Body Image pada santriwati. Metode penelitian ini adalah quasi experimental design dengan menggunakan model nonequivalent control group design. Responden penelitian 60 santriwati. Data dianalisis menggunakan uji statistic paired sample T Test dan N-Gain Score. Analisis menunjukkan bahwa terdapat pengaruh yang signifikan sebelum dan setelah diberikan edukasi melalui zoom dan buku saku dengan signifikansi (p<0,05). pengetahuan santriwati kelompok zoom sebesar 64% dengan kategori cukup efektif, dan pada santriwati kelompok buku saku sebesar 43% dengan kategori kurang efektif. Efektifitas sikap santriwati pada kelompok zoom didapatkan hasil 10% atau kategori tidak efektif dan pada kelompok buku saku dengan nilai 5% atau kategori tidak efektif.  Edukasi gizi lebih lanjut perlu mengoptimalkan fitur-fitur pada zoom. Buku saku perlu desain yang lebih menarik dan menambahkan soal beserta kunci jawaban agar santriwati dapat mengukur pemahamannya terhadap materi.

Abstract

Stunting is a health problem caused by several factors, one of which is a lack of nutrition in the long term. The nutrients that have been linked to influencing the incidence of stunting are protein and zinc. Protein is a macronutrient containing essential amino acids that are useful for growth, cell turnover, and maintenance of the body. Zinc is also useful for growth because zinc plays a role in the metabolism of Growth Hormone (GH). This study aims to determine differences in protein and zinc intake in stunted and non-stunted toddlers in Dawarblandong District, Mojokerto Regency. The type of research used is quantitative with an observational method and a case-control research design. The total sample was 54 toddlers consisting of 27 stunted toddlers and 27 non-stunted toddlers who were selected using a purposive sampling technique. Protein and zinc intake of toddlers were taken through 24-hour food recall interviews for three days and then the data were analyzed using the Wilcoxon Rank Sum Test. The results showed that there was a significant difference in protein intake (p value 0.014) and zinc intake (p value 0.020) between stunted and non-stunted toddlers. This difference in intake is thought to be influenced by differences in toddler eating patterns. Stunted toddlers consume more plant-sourced foodstuffs than animal-based ones, while non-stunted toddlers consume a combination of foods from plant and animal sources in a day's meal so that the nutrients they get are better. This difference in eating patterns is associated with differences in the parenting style of each toddler where mothers of non-stunted toddlers understand more about intakes that are rich in nutrients that are useful for children's bodies and are more patient in controlling children's eating patterns. Meanwhile, the parenting style of stunted toddler mothers frees the child to choose whatever food the child likes even though the food has less nutritional value.

Abstract

Nutritional status was determined from food intake. Adequate and balanced food intake generate the toddler’s with a good or normal nutrirional status. Mothers were the one who had a main role in providing food to their toddlers. This research aimed to identify the characteristics belong to the mothers of toddlers conducted in the Posyandu Dusun Krembangan, Jombang Regency and to determine the effect of mother's knowledge and feeding patterns on the nutritional status of toddlers (W/A). This research used quantitative method based on a cross sectional approach. The amount of the sample are 32 respondents with age range between 12 to 36 months along with their mothers chosen using purposive sampling method. Mother’s knowledge about nutrition also child feeding pattern are obtained through test and nutrirional status of toddlers were obtained by direct weight measurement. Data were analyzed using Kendall’s-Tau b statistical test. The results showed that there was no influence of mother's knowledge about balanced nutrition with toddler's nutritional status (p>0.05) and there was no effect of feeding ix pattern on toddler's nutritional status (p>0.05). It was suggested that public health should improve their activities related to increase the mother’s knowledge about balanced nutrition, nurients food, and nutririon related to toddler’s health also it’s necessary to conduct further research by developing the instrument and using a comprehensive anthropometric index. Abstract

Hypertension is a condition where a person's blood pressure increases above normal which can inhibit the work of the heart. Strategies that can be used to reduce the incidence of hypertension is to utilize products favored by the public that have the potential to lower blood pressure. Food ingredients such as milkfish, white radish, and broccoli. All three have the opportunity to be processed into food products that are well known among the public, efficient, practical, and acceptable to all circles where the product is Nugget. This study aims to determine the effect of adding white radish and broccoli to the preference level of milkfish nuggets as an alternative snack for hypertensive patients. This study used an experimental design, namely RAL with 6 treatments. The treatment was factor L as the addition of white radish with 3 levels and factor B as the addition of broccoli with 2 levels. The results showed that the milkfish nuggets with the addition of 70% white radish and 30% broccoli were preferred by the panelists with a protein nutrient content of 9.48% using the Kjeldahl test, 16.4% fat using the Weibull test, 0.18% potassium using the ASS, 2.24% sodium using the ASS test, and 248.98 kcal energy using calculations.

Abstract

The current COVID-19 pandemic has greatly affected all areas of human life, especially in the economic sector, which in turn will affect household consumption, and nutrition. The purpose of this study was to determine the status of family food security in the northern Surabaya area during the covid 19 pandemic, job changes, changes in family income and the efforts made to deal with changes in income. This research is a descriptive study with a cross-sectional study design. The population of this study is the entire population who live in the area of ​​North Surabaya. The research sample was calculated using the Slovin formula, a minimum sample of 100 samples, to anticipate dropouts, it was added to 120 samples which were then divided evenly into five sub-districts in the North Surabaya area, namely Semampir, Krembangan, Kenjeran, Bulak, and Pabean Cantian. Data collection on food security using the Household Food Insecurity Access Scale (HFIAS) instrument, data on changes in employment and family income using a questionnaire. Most of the respondents in North Surabaya are from food-insecure families (56.67%) and 20.83% of them are severe food insecure families. As many as 12.50% of the fathers in the respondent's families experienced a job change during this pandemic and more than half of the head of the family (56.67%) experienced a lower-income change. Most respondents try to deal with changes in income by making savings. Keywords: Food security, Household food security, Covid-19 pandemic
