Abstract

Abstract. The agricultural and plantation sectors are still the main economic support in Jembrana. Potential commodities that include coconut, coffee, cloves, cacao, and vanilla. Although Jembrana has been known as plentiful food production area, but food security study in Jembrana never done. This research is a cross sectional study conducted for 6 months in 10 selected villages namely Warnasari and Tuwed villages in Melaya; Tegal Badeng Barat and Baler Bale Agung in the Negara; Budeng and Yeh Kuning in Jembrana; Pohsanten and Delod Berawah in Mendoyo; and also Gumrih and Pulukan in Pekutatan. From each village was selected by simple random sampling of 20 households to obtain the total sample as a whole, amounting to200 households. From the result, it is known that the energy accessibility of Jembrana population reach 3669,64 kcal/capita/day, or about 166,8% AKE. As for the accessibility of protein reached 160,96 g/capita/day or nearly three-fold (282.39% AKP). The energy consumption is 2174,37 kcal/capita/day (101,13% AKE). While the protein consumption was 71.65 g/capita/day (125,7% PPA) with an average food desirable pattern  score (PPH) of 90,06. It can be concluded that the food consumption pattern of Jembrana Regency in 2017 quantitatively has been good, but qualitatively still not fulfill the national target. Some current problems and possibilities that occur in the future namely: a) The energy consumption, and especially the protein consumption of Jembrana district in 2017 has exceeded; b) Food security study is necessary every year to monitor the accessibility and level of energy and protein consumption of Jembrana residents. Abstract

Muscle fatigue is a common problem experienced by athletes when undergoing exercise. Sports snacks are an effective solution for preventing them because they can be consumed between workouts without requiring a particular time. However, the availability of sports snacks is still rarely traded in the market. The purpose study is to produce a nastar based on a mixture of banana flour and tempeh (named B-Star Snack) as a sports snack that can prevent muscle fatigue. The research was carried out in July - December 2020 at the Food Technology Lab, Department of Nutrition, Denpasar Health Polytechnic, where wheat flour as the main ingredient for making nastar was substituted with tempeh flour and banana flour with the five combinations of banana flour and tempeh mixtures. All observations were analyzed by ANOVA. Especially for the results of the organoleptic test, in order to meet the assumption of a normal distribution, the data is transformed into an interval scale using the successive interval method. There was a significant difference in the preference for B-Star Snack between formulas (p = 0,014). The most preferred is the combination of tempeh and banana flour (40:60%). The B-Star Snack with a 40:60% combination contains the complete nutrition of both macro and micronutrients. The B-Star Snack with a tempeh and banana flour 40:60% as much as 100 grams per serving can be recommended to prevent muscle fatigue due to the exercise.

Abstract

Stunting in rural areas tends to be higher than in urban areas. This study aims to determine the risk factors for stunting in rural areas in Bali. The analysis carried out is a further analysis of the 2018 basic health research (RISKESDAS 2018). The independent variable was the stunting status of children, which was determined based on the height-for-age index (HAZ). The independent variables consist of socio-demographic; the environment; and health services factors. The relationship between variables was analyzed by logistic regression method. Estimation of the proportion of stunting that can be prevented using Population Attributable Fraction (PAF) analysis. RISKESDAS 2018 data shows that the percentage of stunting in rural Bali is 29.3% higher than urban areas which is only 19.1%. The results of logistic regression analysis showed that under-fives weighing less than 8 times/year were at risk of stunting by 2.02 times compared to the other. PAF analysis shows that 3.5 percent of stunting under five in rural areas can be prevented by Monthly Weighing for children under five years old. Monthly Weighing in rural Bali through the Integrated Service Care (POSYANDU) is one of the efforts to prevent stunting children and monitor their the growth and development early.

Abstract

Obesity triggers the risk of degenerative diseases. An unhealthy diet and insufficient physical activity have been contributing to the rapid increase in obesity prevalence. This study aims at determining the differences in the risk of degenerative diseases based on energy consumption and exercise habits of City Disaster Management Board/DMB members, especially in Denpasar City. This research is an observational study, targeting all members of Denpasar DMB as a population. Samples were taken purposively with a total of 126 people. The risk difference was tested using chi-square, and the estimated risk of degenerative diseases was analyzed using the Mantel-Haentzel odds ratio. The risk of degenerative diseases based on energy consumption shows a significant risk only in the group of people who did not have exercise habits (Q-suare=4.53; p=0.03), with an estimated risk that is also significant (OR=2.48; 95% CI= 1.07 - 5.74). The estimated risk results indicated that exercise habit is a potential confounding variable in the risk of degenerative diseases based on energy consumption. Lowering energy consumption is not effective enough to prevent the increase of degenerative disease risk, and prevention of new risks of degenerative diseases must include regular exercise.
