Abstract

Latar Belakang. Faktor asupan zat gizi, zat gizi makro, zat gizi mikro, dan kejadian infeksi merupakan faktor langsung yang dapat menyebabkan kejadian stunting pada balita. Sumber nutrisi yang memenuhi persyaratan kuantitatif dan kualitatif dapat digunakan untuk memperbaiki asupan. Pola pemberian makan pada anak memerlukan cara tertentu agar menarik dan mudah dicerna. Formula polimerik merupakan makanan mudah dicerna, siap saji, dan siap olah. Formula polimerik dengan komposisi makronutrien seperti protein, karbohidrat, lipid dalam bentuk utuh, vitamin lengkap, dan mineral telah dikembangkan dalam penelitian ini. Formula polimerik yang dikembangkan memiliki densitas energi tinggi yaitu 1,5–2 Kkal/mL. Tujuan. Penelitian ini bertujuan untuk mengetahui kandungan zink, zat besi, dan kalsium sebagai sumber mineral yang potensial dalam mendukung pencegahan dan penanggulangan stunting pada balita. Metode. Penelitian ini menggunakan one shot case study design sebagai pre experimental design. Penelitian ini dilakukan selama empat bulan. Analisis kandungan zink, zat besi, dan kalsium menggunakan metode 18–13–1/MU/SMM–SIG (ICP OES):18–13–1/MU/SMM-SIG (ICP OES) dan 18–13–1/MU/SMM-SIG (ICP OES) pada PT Saraswanti Indo Genetech (PT SIG) Laboratory, Bogor, Jawa Barat untuk empat formulasi formula polimerik. Hasil. Hasil penelitian menunjukan bahwa kadar zink tertinggi 3,05 mg memenuhi 100 persen angka kecukupan gizi (AKG) kebutuhan balita. Pada anak usia 4–6 tahun, kandungan zat besi tertinggi 6,66 mg memenuhi 66,6 persen AKG dan kandungan kalsium tertinggi 308,36 memenuhi 30,8 persen AKG balita. Kesimpulan. Formula polimerik mengandung zink, zat besi, dan kalsium yang bervariasi pada keempat formulasi. Formula polimerik yang direkomendasikan untuk pencegahan stunting adalah formula tiga dengan kandungan zink dan kalsium tertinggi serta zat besi.

Abstract

ABSTRACT Obesity in Indonesia is still a serious health problem. The accelerating progress of The Times has resulted in unhealthy diet changes. One of the most common habits of ingesting high fat but low fiber. The bran is one of the high-fiber food items that can be used as a high fiber alternative food. One of a food products that can be served as food or a high fiber snack that is a biscuit in substitution. The study was intended to determine the effect of the substitution of the paste in the making of biscuits in the increase in fiber levels as high fiber snacks. Research design is an experiment with the posstest only design group. The fiber analysis uses the crude fiber method to measure the fiber level of the biscuit with a concentration of 0%, 10%, 20%, and 30%. Studies indicate that the higher the concentration of these added amounts to the higher the concentration of the fibers. Crackers with the highest fiber substitution 30% concentrations with a rate of 28.37%. Bran biscuits could be recommended for snacks or high fiber snacks. It is recommended to develop food products with beshed food and analyze other nutrients.

Abstract

Latar Belakang Penanggulangan masalah gizi termasuk  balita stunting di Indonesia termasuk Sulawesi Selatan sudah dilakukan dengan berbagai program yang dicanangkan pemerintah. Salah satu program yang sudah dilakukan adalah pemberian kapsul vitamin A dosis tinggi. Dalam mengatasi  stunting diperlukan Zinc  sebagai mikromineral yang memiliki peran dalam sintesis protein dan fungsi enzim seluler, sehingga peranan zinc pada pertumbuhan termasuk pertumbuhan tulang sangat besar perannya .  Zinc dapat berperan  baik  sebagai Zinc Finger Protein (ZFP) jika di dukung oleh asam amino histidine dan sistein. Asam  amino sistein.Metode Penelitian yang dilakukan merupakan  Randomized Pre-Post Test Control Group Design, dengan perlakuan pada 3 kelompok perlakuan, lama perlakuan 3 bulan dan masa pemantauan sampai 6 bulan. Sampel untuk setiap kelompok 15 orang sampelHasil penelitian menunjukan bahwa pemberian zinc dan asam amino sistein pasca suplementasi vitamin A dosis tinggi  dapat  meningkatkan kadar kalsium plasma. Hal ini menunjukan  mekanisme perbaikan pertumbuhan linier. Kalsium merupakan unsur pembentuk tulang panjang pada   balita stunting.Saran yang dapat dilakukan adalah bahwa Suplementasi zinc dan pemberian makanan sumber protein dapat diberikan sebagai pendamping suplementasi vitamin A dosis tinggi yang sudah dilakukan oleh pemerintah selama ini, sehingga efektif meningkatkan kadar kalsium yang dapat mempercepat proses remodelling tulang, Dengan demikian, dapat memperbaiki pertumbuhan linier balita stunting.Kata kunci ; , Asam amino sistein, Asupan Energi, , Berat Badan, Kalsium , Vitamin A, Zick,

Abstract

Background: School-aged children are an investment nation.  Children are the next generation of the nation. Quality of the nation in the future determined the quality of children today. Efforts to improve the quality of human resources must be done early and systematic. Growing development of school-age children is optimal depending on the provision of nutrients with good quality and quantity.Method: This research is descriptive, to get description of nutrition knowledge, the use of pocket money and nutritional status of elementary school children Inpres Tangkala 2 Sudiang Raya Biringkanaya Makassar. The population of this study were all students of Class V numbered 87 students who were present at the time of the research took place the questionnaire which was distributed at the beginning of the data collection. Primary data The data taken include the identity of respondents knowledge of nutrition, the use of pocket money and nutritional status of school children.Result : The results showed that 80 samples on good nutrition knowledge as much as 31.3% and less as much as 68.8%, indicating that sample of the use of pocket money more than 50.0% quite 46.3%, less as much as 3.8%., And showed that the sample of good energy intake was  16,3%, less  82,55%, and more 1,3%.Conclusion:  A total of 68.8% of students  who have knowledge of nutrition is quite good,  46.3% of students  who have enough pocket money and  good energy intake 16.3% of students.Recommendation : Elementary school children  was have  nutrition knowledge good for use pocket money and intake energy status.Keyword : Nutrition knowledge, Pocket money,  Intake energy

Abstract

Abstrak  The incidence of stunting toddlers in Indonesia tends to increase, namely 35.6% in 2010 to 37.6% in 2013. In 2018 of stunting babies is still 36%.One form of nutrition services for toddlers in Indonesia is the provision of high doses of Vitamin A. This program can overcome the problem of  Xeropthalmia but has not helped much in overcoming stunting. Zinc supplementation is recommended supplementation for overcoming growth problems in children. Provision of high doses of vitamin A should be followed by zinc supplementation. The relationship between these two vitamins and minerals is closely related to the process of absorption of these two elements. In a state of vitamin A deficiency, there is a decrease in Zink-Binding Protein so that deficiency of vitamin A can cause disruption of zinc absorption. Zinc plays a role in the metabolism and transport of vitamin A and is needed in the synthesis of retinol transport protein (PTR), namely cellular hepatic PTR (cPTR) is an intracellular retinol transport protein in liver cells and PTR holo that carries retinol from the liver into the blood and other tissues.This study aims to determine the effect of zinc supplementation on stunting toddlers after the administration of high doses of vitamin A on nutrient intake and biochemical status. The design of the research was pre and post design, the research was carried out for one month, namely the administration of zinc syrup supplementation of 10 mg / day, at stunting children aged 2-4 years after administration of high doses of Vitamin A. Sample of 45 people. Indicators measured are energy intake, macro nutrient intake which includes carbohydrates, fats and proteins. Biochemical status such as zinc, albumin, total protein and hemoglobin.The results showed that the provision of zinc supplementation after administration of high doses of vitamin A in stunting toddlers was quite epective on biochemical status and not epective on energy intake and macro nutrients. Keywords  : Biochemical status , High doses of Vitamin A ,Nutrient intake, , Stunting,  Zinc

Abstract

Background, Anemia is one of the nutritional problems experienced by many Indonesian adolescents, the prevalence of adolescents affected by anemia is 23.7%, one of the efforts and things that can be done to overcome the problem of anemia in adolescents is that which has been implemented by the government, one of which is the provision of blood-added tablets. TTD), and provide products that are loved by all audiences such as Cheese Sticks substituted with soy flour which is high in protein and iron.Purpose, of this study was to determine the acceptability and content of protein and iron content of Cheese Stick with soybean flour substitution.Design, The type of this research is laboratory research using Completely Randomized Design (CRD). The research sample used 25 panelists. Acceptance data was obtained from hedonic tests, protein and iron analysis data were obtained from the results of the chemistry SMK SMTI Makassar.Results, The results of the acceptability test showed that based on the results of statistical test s there was a significant difference in the color aspect with p<0.05 (0.000), there was no significant difference in the texture aspect with p<0.05 (0.140), there was a significant difference on the aroma aspect with p<0.05 (0.030). and there is a significant difference in the taste aspect with p<0.005 (0.000). The results of the analysis showed that the protein content of Cheese Sticks was the best, which was 8.6 g/100g and iron content was 2.064 g/100 g..conclusion, the most accepted formula based on aspects of color, texture, aroma and taste is F1.Suggestion, For further researchers, it is recommended to conduct further research by looking at or analyzing the content of other nutrients in cheese sticks with soy flour substitution.

Abstract

ABSTRACTIncreased Life Expectancy (UHH) in Indonesia is a success in the field of health and welfare. UHH can increase the elderly population (elderly) by decreasing mortality. The 2015 Central Bureau of Statistics (BPS) report, UHH in 2015 became 70.8 years and will increase to 72.2 years in 2030-2035, while in Maros district in 2015 for UHH increased to 68.55 years. The aging process in the elderly has the risk of non-communicable diseases, such as hypertension. The results of the Basic Health Research (Riskesdas) in 2013, showed that the health problems in the highest elderly were Hypertension with the category age of 55-64 years of 45.9%, 65-74 years of 57.6% and 75 years and over 63.8 %.Hypertension in the elderly can affect the level of dependence on the surrounding environment. The dependency ratio of Indonesia's elderly population in 2016 was 13.65%. This means that every 100 people of productive age must bear about 14 elderly residents. The dependency ratio in South Sulawesi is 14.62%, which means that every 100 productive residents in South Sulawesi must bear around 15 elderly residentsThis study is an analytical study with a cross sectional study design. The population in this study were all elderly  aged 60-80 years. Sampling using purposive sampling with sample criteria as follows: 60 - 80 years old, have a history of hypertension and / or have high blood pressure (≥ 140/90 mmHg) at the time of measurement, Willing to be interviewed, Not having hearing and memory disorders (senile) and can be invited to communicate clearly. Samples that fit the criteria in this study were 47 people.Research result is a disobedience to the hypertension diet in elderly people with very high hypertension reaches 91.5%, and insignificant relationship between nutritional status and the independence of the elderly both the age group <75 years and the age group ≥75 years with a significant value of each p = 0.619 and p = 0.191.There is a non-significant relationship between hypertension and the independence of the elderly both in the age group <75 years and the age group ≥75 years with a significant value of p = 0.447 and p = 0.362.The elderly with hypertension sufferers should always be given counseling and / or nutritional consultation to increase their understanding of the diet being undertaken

Abstract

ABSTRACT Rapid city growth can change the existing social fabric, including the lifestyle and diet of the urban population. The period before the massive urbanization of diet is determined by food prices and family purchasing power and mother's knowledge about nutrition and health. Currently eating patterns lead to increased consumption of snacks. Fish craker snack food is an alternative food supply in the form of snacks with the main ingredients as white anchovy (stelpohorus, sp), so that high quality snacks are obtained from nutritional quality, safe for consumption and high organoleptic quality. Fish snack craker food is a processed food made from anchovy with a dry, crispy texture. Fish processing in this way aims to sustainably benefit fish, produce healthy, safe, whole and halal foods and be accepted by consumers according to current market tastes. In making fish crackers snack food design used is the manufacture of products in 4 compositions, namely origional products, the addition of anchovies flour (stelpohorus sp) 30%, 40% and 50% Fish cracker snack food is a safe snack to consume where the proximate character results are good on average, trans fatty acids

Abstract

AbstractBasic health research conducted by the Ministry of Health of the Republic of Indonesia in 2013 reported that in Indonesia there were more than 2 million inhabitants, or 12 out of 1000 population, suffering from strokes with the largest percentage coming from the province of South Sulawesi. Stroke is the number 1 killer in Indonesia, more than 15% of deaths in Indonesia are caused by stroke. Incorrect nutrition care is a factor that can cause a stroke. Consumption of saturated fats such as butter, biscuits, meat products, biscuits and cream can increase the incidence of stroke which is mediated by an increase in blood pressure. High cholesterol consumption will cause arteries to narrow and can clog blood circulation in the atherosclerosis body is a risk factor for stroke. This case study describes nutritional care at the Passive Hemipareses Stroke patient at the Dadi Special Hospital in South Sulawsei Province, for five days of observation. Observations were carried out for 5 consecutive days. Indicators that are evaluated for intake levels using sesilisih complete food and leftover food items, data from laboratory examination results and clinical physical examination results are taken secondary from the medical record of the patient.The observation shows that the NCP implementation process in this case can run and the pasent undergoes changes that lead to improvement.The results of the study recommend monitoring and evaluating the level of patient consumption carried out for each meal to determine the state of the patient, so as to determine the development of the diet, and intake from outside the hospital. Keywords: Intake level ,Nutrition Care, Stroke, ,

Abstract

Background : MOCAF is a cassava flour product processed using the principle of modifying cassava cells by fermentation. The growing microbes cause characteristic changes of the resulting starch in the form of increased viscosity, gelability, rehydration, and ease of solubility.Objective : This study aims to determine the physical characteristics and acceptance of Kue Baruasa with substitution of MOCAF flour for PMT pregnant mothers in District Moncongloe Maros Regency.Method : This research is a quasi-experimental research. The sample is Kue Baruasa substitution of MOCAF flour with concentration of 100%, 75%, 50% and 0%. The panel of received power consists of 35 students and 10 pregnant women. The research was conducted in food laboratory of Poltekkes Kemenkes Makassar Nutrition Department, Laboratory of State Polytechnic of Ujungpandang and District of Moncongloe of Maros Regency. Result : The results showed that the lowest level of hardness was found in Kue Baruasa with concentration of 75%. There were no color differences in the four groups of samples (p = 0.434). There were differences of taste in the four groups of samples (p = 0.010). There were differences of aroma in the four groups of samples (p = 0.010). There was a difference of texture in all four groups of samples (p = 0,009). The nutritional content of the Mosaic Cookies is lower than the nutrient content of pregnant PMT biscuits distributed by the Ministry of Health.Conclusion : It is suggested that Barca Substitute Cake substitution of MOCAF 50% gets better reception by panelist and the nutrient content of Kue Baruasa still needs to be improved in order to reach the standard of PMT for pregnant mother.Keywords : Mocaf, PMT, Pregnant mothers
