Abstract

ABSTRAK Pendahuluan: Stunting merupakan masalah kesehatan yang mencerminkan kekurangan gizi kronis jangka panjang dan kegagalan pertumbuhan linear. Stunting pada baduta diakibatkan karena kekurangan gizi kronis khususnya pada 1.000 HPK sehingga anak menjadi sangat pendek pada usianya. Tujuan: Penelitian ini bertujuan untuk mengetahui determinan stunting pada baduta usia 0-24 bulan. Metode: Metode penelitian yang digunakan yaitu observasi analitik, desain case control melalui wawancara dengan kuesioner terstruktur pengambilan sampel menggunakan total sampel didapatkan 116 sampel terdiri dari 58 sampel kasus dan 58 sampel kontrol. Penelitian ini menggunakan uji chi square dengan analisis univariat dan bivariat melalui pendekatan Odds Ratio. Hasil: Penelitian menunjukan ada hubungan yang signifikan antara pola makan, pengetahuan, pemeriksaan kehamilan dan ASI Ekslusif dengan kejadian stunting nilai p-value < 0,05, serta tidak ada hubungan antara pola asuh perawatan dasar dengan kejadian stunting pada baduta usia 0-24 bulan nilai p-value > 0.05, di wilayah kerja Dinas Kesehatan Kota Ternate. Kesimpulan: Pentingnya promosi kesehatan yang dilakukan oleh dinas kesehatan dan instansi-instansi terkait agar meningkatkan pengetahuan dan wawasan mengenai pola makan, pengetahuan, pemeriksaan kehamilan dan Asi Ekslusif agar Stunting dapat di cegah.

Abstract

Introduction: In adolescence nutritional conditions are very important to support their growthand development. Nutrition problems that usually occur in adolescents are caused by severalfactors such as the level of nutritional knowledge that will affect their behavior and lifestyle suchas sedentary activity, screen time duration, and also sleep duration especially for adolescent whoattend school in islamic boarding school. Purpose: This study aims to know the description ofsedentary lifestyle which includes sedentary activity and sleep duration of adolescent girls inIslamic Boarding School Darul Aman Gombara Makassar. Materials and Methods: The type ofthis study is descriptive. The sample of this study was 96 adolescents using total sampling.Collecting data for sedentary activity using the recall activity questionnaire, and for the sleepduration using STQ (Sleep Timing Questionnaire). Abstract

Introduction: Children of primary school age are prone to nutritional problems, one ofwhich is over nutrition. Globally, the prevalence of over nutrition children increased byaround 47.1%, while in Indonesia it increased to 10.8% and 9.2%. The main cause of overnutrition in children is the wrong diet which is influenced by the family and schoolenvironment. Abstract

Pendahuluan: Gangguan mental yang umum terjadi pada mahasiswa yaitu depresi dan kecemasan. Sejumlah penelitian menyebutkan bahwa asam lemak omega-3 memilikiefek pencegahan terhadap gangguan mental seperti depresi dan kecemasan pada remaja dandewasa awal. Tujuan: Penelitian ini bertujuan untuk mengetahui gambaran asupan omega 3dan kejadian Common Mental Disorders pada mahasiswa Ilmu Gizi Fakultas KesehatanMasyarakat Universitas Hasanuddin. Bahan dan Metode: Penelitian ini dilakukan padamahasiswa Ilmu Gizi Fakultas Kesehatan Masyarakat Universitas Hasanuddin angkatan2017-2019 (n = 138). Asupan omega-3 pada mahasiswa diukur menggunakan SemiQuantitative Food Frequency Questionnaire (SQ-FFQ), common mental disorders (CMDs)berupa depresi dan/atau kecemasan diukur menggunakan Depression, Anxiety, and StressScale (DASS) dan dianalisis deskriptif menggunakan SPSS. Hasil: Terdapat 103 mahasiswa(74,6%) dengan tingkat asupan harian omega-3 defisit. Mahasiswa yang mengalami CMDssebanyak 107 mahasiswa (77,5%) diantaranya 4 mahasiswa (2,9%) yang mengalami depresi,65 mahasiswa (47,1%) yang mengalami kecemasan, dan 38 mahasiswa (27,5%) mengalamikeduanya (depresi dan kecemasan). Dari total 103 mahasiswa dengan asupan omega-3 defisitterdapat 80 mahasiswa (58%) yang mengalami CMDs dan 23 mahasiswa (16,7%) yang tidakmengalami CMDs. Kesimpulan: Tingkat asupan omega-3 mahasiswa defisit jauh lebihtinggi daripada tingkat asupan baik dan tingginya kejadian common mental disorders padamahasiswa Ilmu Gizi Fakultas Kesehatan Masyarakat Universitas Hasanuddin. Diperlukantindakan lanjut untuk kejadian CMDs dan peningkatan asupan omega-3 pada mahasiswa.

Abstract

Introduction: People who are at risk of having high cholesterol levels are those who adopt adiet that contains saturated fat levels and consumes less fiber. Purpose: This study aims todetermine the relationship between diet and cholesterol levels in overnourished policeofficers.Material and Methods: This research was conducted on 50 police officers at PolrestaSidenreng Rappang. Diet in the police was measured by the SQ-FFQ questionnaire. WhereSQ-FFQ is a method to find out the picture of individual nutritional intake habits at a certaintime. Cholesterol levels were obtained through measurements using Easy Touch GCU anddata for TB (Height), BB (Weight) were obtained from secondary data.. Result: There are 56.0% police officers who have hypercholesterolemia. The results ofstatistical tests using the Fisher Exact test stated that there was a relationship between fiberintake (0.023), frequency of meat (0.029) and frequency of vegetables (0.012) with cholesterol

Abstract

Pendahuluan: Stres oksidatif yang terjadi akibat ketidakseimbangan proses oksidatifdalam tubuh telah diketahui berhubungan dengan berbagai risiko gangguan kesehatan. Stresoksidatif dapat dicegah dengan konsumsi antioksidan. Salah satu pangan yang potensialsebagai sumber antioksidan alami adalah jewawut, tetapi pemanfaatan dan pengembanganjewawut di masyarakat masih kurang banyak dilakukan. Tujuan: Mengidentifikasi senyawafitokimia dan aktivitas antioksidan cookies berbasis tepung jewawut (Foxtail millet) sebagaipangan fungsional. Bahan dan Metode: Jenis penelitian ini adalah deskriptif observatif.Dalam penelitian ini digunakan satu formula produk, yaitu formula terpilih cookies berbasistepung jewawut yang sebelumnya telah diuji organoleptik (hedonik). Penelitian ini diawalidengan identifikasi kandungan fitokimia meliputi pemeriksaan alkaloid, fenolik, triterpenoid,steroid, flavonoid, dan tanin. Selanjutnya dilakukan pengujian aktivitas antioksidan denganmetode pengujian menggunakan 2,2-difenil-1-pikrilhidrazil (DPPH). Hasil: Ekstrak metanolcookies berbasis tepung jewawut mengandung senyawa alkaloid, flavonoid, fenolik dan tanin.Sementara senyawa triterpenoid dan steroid tidak terdeteksi dalam ekstrak metanol cookiesberbasis tepung jewawut. Ekstrak metanol cookies berbasis tepung jewawut memilikiaktivitas antioksidan dengan nilai IC50 sebesar 111,84 ppm. Kesimpulan: Cookies berbasistepung jewawut mengandung senyawa fitokimia dan aktivitas antioksidan tergolong sedang.Perlu dilakukan optimalisasi ekstraksi dengan menambah variasi pelarut dalam prosesekstraksi.

Abstract

Pendahuluan: Hipertensi merupakan salah satu penyakit tidak menular yang saat ini menjadi prioritas dalam dunia kesehatan secara global. Dalam penanggulangannya,  obat tradisional dapat menjadi alternatif karena memiliki efek samping yang minimum. Seledri (Apium gravolens L.) telah diketahui memiliki aktivitas anti-hipertensi. Tujuan: Untuk mengetahui proses produksi dan daya terima masyarakat terhadap minuman serbuk berbahan dasar seledri. Bahan dan Metode: Jenis penelitian yang digunakan adalah observasional deskriptif. Dilakukan uji mutu hedonik pada 15 panelis terlatih dan uji hedonik pada 35 panelis konsumen. Pengolahan dan analisis data dilakukan dengan menggunakan SPSS dengan uji Kruskall Wallis, data disajikan dalam bentuk tabel, grafik, dan narasi. Hasil:  Keempat formula minuman serbuk seledri dapat diterima oleh panelis terlatih dan panelis konsumen. Formula 4 merupakan formula yang memiliki tingkat kesukaan yang lebih tinggi dibandingkan dengan formula lain berdasarkan parameter warna, rasa, aroma dan tekstur. Kesimpulan dan Saran: Formula 4 memiliki tingkat penerimaan yang lebih tinggi dibandingkan dengan formula lainnya. Menurut penilaian dari panelis terlatih, formula 4 memiliki karakteristik mutu yaitu berwarna kuning dengan aroma yang agak harum, tekstur yang cair serta rasa yang manis. Disarankan untuk produk minuman serbuk berbasis seledri ini dikembangkan lebih lanjut agar tingkat penerimaannya lebih baik lagi dan untuk menghasilkan kualitas minuman serbuk seledri yang lebih baik disarankan untuk menggunakan metode pengeringan lainnya.

Abstract

Introduction: Lack of nutritional knowledge leads to unhealthy eating habit that can cause nutritional problem in adolescence. Teenagers are more likely to consume less fiber than younger children in their diet which can make them become more vulnerable to have constipation. Purpose: This study aims to determine nutritional knowledge, consumption of vegetable and fruit and constipation of boarding school students at SMAN 5 Gowa. Material and Method: The sample was 139 students which was randomly chosen by Proportionate Stratified. The level of nutritional knowledge was measured by a form of nutritional knowledge while consumption of fruit vegetables using the 24 hour recall method. Defecation pattern was measured by using the Constipation Scoring System form. Results:  Majority of students 88.5%  were lacked of nutritional knowledge. Consumption of vegetables and fruits was insufficient which was only about 5.41gr in average. The incidence of constipation was low, only 4.3%. Conclusion: Nutritional knowledge as well as, consumption of vegetable and fruit were poor. Meanwhile the incidence of constipation relatively low

Abstract

Pendahuluan: Terdapat banyak bahan pangan yang dapat dijadikan sebagai makanan dan obat tradiosional di Indonesia. Salah satu tanaman herbal yang banyak digunakan sebagai obat antihipertensi adalah seledri (Apium graveolens L.). Tujuan: Penelitian ini bertujuan untuk mengetahui gambaran formula terbaik, kandungan zat gizi makro dan mikro minuman serbuk seledri sehingga dapat menyediakan informasi tentang komposisi zat gizi pada produk. Bahan dan Metode: Jenis penelitian ini adalah deskriptif berbasis laboratorium. Produk minuman serbuk seledri dihasilkan dari kristalisasi filtrat seledri dengan adanya penambahan gula. Formula yang dianalisis zat gizinya dipilih dari hasil analisis uji daya terima terhadap 4 formula dengan perbedaan perisa yaitu jahe, daun pandan, kayu manis dan lemon. Hasil: Hasil penelitian menunjukkan bahwa formula terpilih adalah formula IV (F567) dengan komposisi filtrat 1000 ml, gula 250 g dan ekstrak jahe 20 ml. Kandungan zat makro formula terpilih terdiri dari 26,61 g karbohidrat, 0,26 g lemak, 0,98 g protein, 0,04 g serat kasar dan energi 112,7 kkal. Kandungan zat gizi mikro terdiri dari 1,92 mg natrium, 14,3 mg kalium dan 13,73 mg vitamin C. Kesimpulan: Kandungan zat gizi minuman serbuk seledri tidak jauh berbeda dengan minuman serbuk yang dibuat dari bahan baku lainnya tetapi kurang cocok untuk diminum oleh penderita hipertensi.

Abstract

Introduction: The maternal mortality can be caused by one of the indirect factors that has a major effect on pregnancy complications that is Chronic Energy Deficiency (CED). In nationally, the risk of CED is at the level of moderate public health problems (10-19%). One of the causes of emergency of CED is low food intake and nutrition knowledge. Purpose: This study aims to determine the relationship between dietary habit and nutritional knowledge with the incidence of CED in pregnant women. Material and Methods: This research is an observational analytic study with cross sectional design. The sample size was 104 pregnant women with purposive sampling technique. The data collected is the characteristics of respondents, the SQ-FFQ questionnaire, the nutrition knowledge questionnaire, and LiLA size of respondents by primary and secondary data. Data analysis was performed using univariate and bivariate analysis. Result: The results showed that there were 26,0% of pregnant women suffering from CED with the majority of respondents having good energy intake (53,8%), good protein intake (57,7%), lack of fat intake (72,1%), good carbohydrate intake (52,9%). Other than that, the majority of pregnant women having proportion of the frequency of staple foods are often (92,3%), side dishes are sometimes (67,3%), vegetables are often (81,7%), fruits are rarely (88,5%), and drinks & supplements are sometimes (61,5%), and good of nutrition knowledge (59,6%). The result of statistical test using Chi-Square that there is correlation between intake of energy, protein, carbohydrate, frequency of side dishes, and nutrition knowledge with the incidence of CED in pregnant women with p value (0,000), (0,001), (0,001), (0,021), dan (0,000). Meanwhile, there is also no correlation between fat intake and the frequency of staple foods, vegetables, fruits, drinks & supplements with the incidence of CED in pregnant women with p value (0,078), (0,829), (0,190), (0,234), dan (0,227). Conclusion : There is a correlation between dietary habits (energy, protein, carbohydrate, and frequency of side dishes) and nutritional knowledge with the incidence of CED in pregnant women. There is no correlation between fat intake and food frquency (staples foods, vegetables, fruits, drinks & supplements) with the incidence of CED in pregnant women at Sudiang Health Care Center.
