Abstract

Abstract. Fish is a good source of protein for toddlers.  Fish contains vitamins and minerals that are useful for the growth development.  Mother’s knowledge will affect the provision of meals for family members especially toddlers.  If mother’s knowledge is good, it will affect the selection, type of meal and frequency of meal comsumption.  This observational study was carried out using sross-sectional design.  Subject of the study were 61 mothers who had children under 5 years old in Desa Kedonganan Kabupaten Badung. Samples were taken using simple random sampling technique.  The results showed the majority of the samples (34,4%)  good knowledge about fish, moderate category (50,8%) sampels, and low category (14,8%).  The type of fish consumed in Desa Kedonganan was a type of sea fish 50 samples (82,1%).  The average amount of fish protein intake in toddlers is 14,52 grams per day.  The majority of the samples (52,5%) had low category and another of them have a good category (47,5%).     The  frequency  of fish comsumption in  toddlers  are majority samples (70,5%) often consumption fish.  Keywords : mother’s knowledge, consumption patterns

Abstract

Abstract. In this modern era there are many changes in our society, including the food pattern. Our society specially teenager that live in the big city, tend to consume fast food that have attractiveness , cheap in price, faster in serving, and have delicious taste but low nutrients than traditional food that rich in nutrients. Knowledge and attitude are very important to determine someone’s fast food pattern consumption. This research aims to knowing the knowledge, attitude and fast food pattern consumption at SMA Negeri 8 Denpasar. This was a cross sectional study that using 86 sample randomly. This research found that most of the sample have good knowledge about fast food (91,9%), and 51,2 % sample have good attitude towards fast food. The fast food pattern consumption contains total variety of fast food that the sample consume, fast food consumption frequency, also the total energy and protein from fast food that they consume. 51,2% sample have many kind of fast food that they consume and 60,5 % sample consume fast food in oftentimes. For the energy and protein consumption, 32,56 % sample have high energy consumption from their fast food and 25,6 % sample have high protein consumption from their fast food. From the cross tab analyze, it known that even there are many samples that have good knowledge about fast food but some of them still consume fast food oftentimes. That’s why researcher suggest the teacher or the other health worker to give some explanation to the students about fast food and nutrition and also motivate them to consume healthy food and reduce their fast food consumption.Keyword : knowledge , attitude, food consumption, fast food pattern

Abstract

Breakfast is food that is eaten every morning or an important activity is carried out before filling in other activities every day. Breakfast is needed to fill the empty stomach for 8-10 hours and is useful in improving learning concentration and physical abilities. The food must contain all the nutrients needed by the body. Food with this balanced composition is needed because the body needs nutrients for growth, development and maintenance. Nutritional status is a reflection of the balance state of nutritional intake (intake) and the needs (requirements) of nutrients in the form of certain variables. The purpose of this study was to determine the relationship of breakfast patterns with nutritional status and learning achievement in school children at SD No. 1 Perean. This type of research was observational with a crossectional research design. The sample size in this study is 75. Data collection uses identity forms, 24-hour recall method, measurement of body weight and height. Data is processed by spearman analysis. The results showed that 1.3% of school children with breakfast patterns were rare, 16% with occasional categories and 82.7% with frequent categories. The nutritional status of school children is 54.7% with normal nutritional status, 21.3% with nutritional status fat, 24% with nutritional status obesity. The learning achievement of Perean Elementary School No. 1 children is 1.3% with sufficient achievements and 98.7% with good achievements. There is no relationship between breakfast habits, breakfast type, breakfast energy consumption level, consumption level of breakfast protein with nutritional status. There is a relationship between breakfast habits and learning achievement. There is no relationship between the type of breakfast, the level of energy consumption of breakfast, the level of consumption of protein breakfast with learning achievement. Abstract

Nutrition problems occur in every life cycle, starting in the womb (fetus), infants, children, adults and old age. To get good nutrition in infants, the mother must as soon as possible breastfeed her newborn baby because breast milk provides complete and sufficient nutrition in maintaining health and maintaining the survival of the baby. After the mother is 9 months pregnant, the baby will get the main food from exclusive breastfeeding. The government has issued Government Regulation No. 33/2012 concerning exclusive breastfeeding. Based on the Profile of the Denpasar City Health Office (2017) in 2017 exclusive breastfeeding coverage in Denpasar was 47.65%, while the lowest exclusive breastfeeding coverage was in Pusksesmas I West Denpasar which was 41.27%. The low coverage of Exclusive ASI is closely related to knowledge and motivation of mothers about Exclusive ASI. The purpose of this study was to determine the relationship between the level of knowledge and motivation of mothers with exclusive breastfeeding in the working area of the West Denpasar Health Center I. This type of research is observational with cross-sectional design and the number of research samples is 71 women under two. Data collected by interview method. Data analysis used the Yates Chi Square Correction statistical test. The results showed that, mothers who had a good level of knowledge were 94.4%, sufficient level of knowledge (5.6%), and the level of knowledge was lacking. While the motivation of mothers (73.2%) included good categories, as many as (26.8%) included enough categories, and there were no mothers with poor motivation. It is known that (45.1%) mothers give exclusive breastfeeding, and (54.9%) mothers do not give exclusive breastfeeding. Chi square test shows there is no relationship between the level of knowledge and motivation of mothers in the working area of the West Denpasar Health Center I, p value = 0.617. There is a relationship between mother's motivation towards exclusive breastfeeding in the working area of the West Denpasar Health Center I, p value = 0.001.Keywords: Knowledge Level, Mother's Motivation, Exclusive Breastfeeding

Abstract

One of the important nutritional problems in Indonesia is iron deficiency anemia which is often suffered mainly by young women. The result of Riskesdas (2013) showed that the prevalence of anemia in Indonesia is 21,7%. The purpose this research is to know the correlation between intake of animal protein, iron and folic acid with hemoglobin levels in young women in SMA Negeri 1 Ubud. This research type is observational with cross sectional design. The target population this research is 365. Samples numbered 76 people taken by multistage random sampling. Data of animal protein, iron, and folic acid collected by interview method using a form food recall 2x24 hour and check the levels of hemoglobin using Hb meter method. Data analysis use Correlation Pearson Product Moment with computerized system. The result of this research showed that the prevalence of anemia in young women in SMA Negeri 1 Ubud is 78,9% with an average hemoglobin levels of 10,8 gr/dl. Over animal protein intake than AKG as much 57 (75,0%) with an average of 34,3 gr. Less iron intake than AKG as much 76 (100,0%) with an average of 6,6 mg. Less folic acid intake than AKG as much 75 (98,7%) with an average of 120,9 mcg. There is significant correlation between the intake of animal protein and iron with hemoglobin levels of young women (p 0,05). There is no significant correlation between the intake of folic acid with hemoglobin levels of young women (p 0,05).Keywords: Animal Protein, Iron, Folic Acid, Hemoglobin

Abstract

Menarche is the first menstruation that occurs in women. According to Riskesdas, the prevalence of menarche 12 years is 5.2%. The purpose of this research is to know the correlation trend between frequency of junk food consumption with nutritional status, nutritional status with menarche age and frequency of junk food consumption with menarche age. This type of research is an observational study with cross-sectional design. The sampling technique of this research is by proportional simple random sampling method. The sample of this study amounted to 76. Frequency of consumption was collected with FFQ media, nutritional status calculated by z-Score and age of menarche collected by questionnaire. The results were analyzed by univariate and bivariate tables. Result of frequency analysis of junk food consumption with nutritional status get result that there is tendency of correlation between frequency of consumption of junk food with nutritional status. The result of nutritional status analysis with age of menarche has resulted that there is no correlation between nutritional status with age of menarche. The result of frequency analysis of junk food consumption with age of menarche get result that there is tendency of correlation between frequency of consumption of junk food with age of menarche .As a conclusion from this research that there is tendency of correlation between frequency of consumption of junk food with nutritional status and between frequency of consumption of junk food with age menarche but there is no trend of nutritional status correlation with age of menarche.Keywords:  junk food, nutritional status, menarche, a female student

Abstract

Food maintenance is the responsibility of Nutrition Installation at Tk. II Udayana Hospital Denpasar, but often find problems in the form of patient food waste that exceeds the standard. This study aims to analyze the relationship of taste with ordinary food waste in the hospitalization at Tk. II Udayana Hospital Denpasar, as one of the scientific evaluation steps in reducing food waste. The data in this study were collected by questionnaire and observation methods. The results of this study showed that the results showed that, of the 47 samples studied that had a large sample food waste is 18 people (38.3%), which is classified as a small number of 29 people (61.7%) and averaged the sample regular food waste of 18.4%. The sample that stated the taste of good food was 42 people (89.4%) and stated the taste of food is not good ie 5 people (10.6%).Keywords: Flavor,Food wasted

Abstract

Status gizi balita adalah keadaan yang diakibatkan oleh keseimbangan antara asupan zat gizi dari makanan dengan kebutuhan zat gizi yang diperlukan untuk metabolisme tubuh. Setiap individu membutuhkan asupan zat gizi yang berbeda, hal ini tergantung pada usia, jenis kelamin, aktivitas, berat badan, dan lainnya. Faktor-faktor yang mempengaruhi status gizi balita dibagi menjadi faktor langsung dan tidak langsung. Faktor langsung yaitu asupan makanan, pemberian ASI Eksklusif, penyakit infeksi dan berat badan lahir. Faktor tidak langsung yaitu pelayanan kesehatan dan sosial budaya yang mencangkup tingkat pendidikan, pengetahuan, pendapatan, tradisi atau kebiasaan. Tujuan penelitian ini yaitu untuk mengetahui hubungan tingkat konsumsi energi dan protein, pemberian ASI Eksklusif dan berat badan lahir dengan status gizi balita di wilayah kerja Puskesmas Klungkung I. Penelitian ini menggunakan metode observasional dengan desain penelitian cross sectional dengan jumlah sampel yaitu 92. Data dikumpulkan dengan metode wawancara dan pengukuran. Data disajikan dengan tabel frekuensi dan tabel silang kemudian data variabel di uji normalitasnya menggunakan uji Shapiro Wilk. Hasil uji analisis Rank Spearman menunjukkan ada hubungan antara tingkat konsumsi energi dengan status gizi balita (p-value = 0,000). Untuk hasil uji analisis tingkat konsumsi protein dengan status gizi balita menunjukkan ada hubungan (p-value = 0,000). Untuk hasil uji analisis pemberian ASI Eksklusif dengan status gizi balita menunjukkan ada hubungan (p-value = 0,025). Untuk hasil uji analisis berat badan lahir dengan status gizi balita menunjukkan ada hubungan (p-value = 0,001).

Abstract

Masalah kesehatan khususnya masalah hygiene dan sanitasi makanan merupakanmasalah  yang  sangat  kompleks  dan    sebenarnya            bukan merupakan masalahyangbaru. Faktor yang mempengaruhi hygiene dan sanitasi salah satunya adalah faktor penjamah makanan. Penelitian ini bertujuan untuk mengetahui hubunganpengetahuan dengan sikap dan praktik hygiene sanitasi tenaga penjamah makanandi Instalasi Gizi UPTD Rumah Sakit Jiwa Bangli. Jenis penelitian ini adalahobservasional dengan rancangan cross sectional. Besar sampel dalampenelitianini adalah 29 orang tenaga penjamah makanan dengan kriteria inklusi yaitu: 1) petugas makanan yang berada di Instalasi Gizi UPTD Rumah Sakit Jiwa Bangli; 2) mampu berkomunikasi dengan baik; 3) mampu membaca dan menulis dengan baik; 4) bersedia menjadi sampel penelitian. Data dikumpulkan denganmelakukan pengisian kuesioner pengetahuan, sikap dan data praktik dilakukandengan observasi. Penelitian ini menggunakan uji korelasi rank spearman. Hasil penelitian menunjukkan rata-rata pengetahuan ahli gizi dan penjamah makanan94,5, rata-rata sikap ahli gizi dan penjamah makanan 81, dan rata- rata praktikahli gizi dan penjamah makanan 97,1. Hasil analisis menunjukkan ada hubunganantara pengetahuan dengan sikap, serta ada hubungan antara sikap dengan praktikhygiene sanitasi tenaga penjamah makanan di Instalasi Gizi Rumah Sakit Jiwa Bangli (p0,05). Disarankan untuk tenaga penjamah makanan    yakni,    ahli    gizi    danpenjamah    makanan    mempertahankan pengetahuan, sikap dan praktik hygienesanitasi agar tetap dipredikat baik.

Abstract

Kepuasan pasien adalah harapan pasien yang timbul atas tindakan tenaga kesehatan sebagai akibat dari kinerja layanan kesehatan selama proses berinteraksi dalam upaya memberikan pelayanan (Pohan dalam Sutari, 2017). Salah satu pelayanan kesehatan yang tidak luput dari perhatian adalah pelayanan makanan di rumah sakit, yakni penyajian makanan. Berdasarkan data hasil penelitian yang ada, masih terdapat kesenjangan antara harapan pasien dengan pengalaman terkait pelaksanan penyelenggaraan makanan di rumah sakit pemerintah dengan rumah sakit swasta. Tujuan dari penelitian ini adalah untuk mengetahui tingkat kepuasan pasien rawat inap berdasarkan penyajian makanan di rumah sakit pemerintah dan rumah sakit swasta. Jenis penelitian yang digunakan adalah literature review dengan mencari database dari berbagai referensi, seperti jurnal – jurnal penelitian terkait dengan tingkat kepuasan pasien rawat inap terhadap penyajian makanan di rumah sakit pemerintah dan rumah sakit swasta. Adapun jumlah jurnal yang dikaji dalam penelitian ini berjumlah sebelas jurnal. Sebagian besar hasil ketidakpuasan pasien berkaitan dengan rasa makanan,aroma makanan, penampilan makanan, dan pelayanan petugas. Tingkat kepuasan pasien di rumah sakit pemerintah berdasarkan tingkat kepuasan terhadap penyajian makanan diperoleh 107% lalu untuk rumah sakit swasta diperoleh hasil 105.83%. Meskipun banyak kekurangan diharapkan penelitian ini dapat bermanfaat untuk dijadikan sumber informasi dalam pengembangan di bidang pendidikan dan ilmu pengetahuan, referensi untuk penelitian dengan tema yang sama, serta pembaharuan data
