Abstract

HACCP (Hazard Analysis Critical Control Point) was quality assurance system used in supervision in hospital nutrition services. The application of HACCP at Muhammadiyah Hospital Lamongan in production at the nutrition installation was carried out to anticipate hazards and identify control points by paying attention to preventive measures rather than control in testing meat perkedel products. The research design used in this study is descriptive analytic which aims to determine the application of HACCP to the production of meat perkedel in the nutrition installation of Muhammadiyah Hospital Lamongan. Some of the HACCP implementations are not appropriate, namely the HACCP team, the requirements of the HACCP team members, quality control tasks, and APD forms. The implementation of HACCP had been in accordance with the schedule of HACCP verification on patient food processing and control devices at the nutrition installation of Muhammadiyah Hospital Lamongan.

Abstract

The incidence of obesity in Indonesia is increasing every year. In 2017, according to survey data on Nutrition Status Monitoring (PSG, 2015) stated that the prevalence of obese children under five in Indonesia according to body weight was 5,63%. Obese toddlers tend to have a poor quality of life. The purpose of this study was to see the social economic of parents, physical activity, and consumption of formula milk with obesity for toddlers. This research are a descriptive analytic study with a cross sectional approach. This research was conducted from August 2020. The sample in this study were children aged 1-5 years who were obese, totaling 43 respondents. Data collection used a parent socioeconomic questionnaire, EY-PAQ (Early Year-Physical Activity Questionnaire) questionnaire, and instans formula milk consumption questionnaire. Based on the results of data analysis using the chi square test, it showed that parents' social economic, physical activity and consumption of formula milk with obeseity in toddlers group have no significant relationship as evidenced by a p value> 0.05. From this study it can be concluded that there is no relationship between the social economic of parents, physical activity, and consumption of formula milk with obesity for toddlers.

Abstract

ABSTRACT This study aims to determine the factors associated with the occurrence of soft food waste from adult inpatient DM patients. The type of this research is explanatory research with a cross sectional research design survey method. The population of adult DM inpatients are 28 people. The technique of selecting samples by simple random sampling. Data were analyzed by the Rank Spearman. The instruments used were questionnaires, scales and food waste observation for ms. The results showed that the factors related to the waste were the accuracy of pre food preparation schedule (p = 0.352) post (= 0.604), pre food quality (p = 0.010) post (0.787), the completeness and cleanliness of pre food equipment (p = 0.009) post (p = 0.054), attitude and appearance of pre renderers (p = 0.022) post (p = 0.466), pre satisfaction level (p = 0.416) post (p = 0.416). The results of the pre-study show that there are no corelation between the food serving schedule with DM waste and has a medium strength correlation category. The results of post study show that there are no correlation between the accuracy of the food schedule, food quality, renderers attitude and the level of satisfaction with the occurrence of DM patient waste, there is a corelation between equipment hygiene completeness with DM patient waste. Keywords: Diabetic patients, soft foods, food waste, quality service level of satisfaction ABSTRAK Tujuan penelitian ini adalah untuk mengetahui faktor yang berhubungan dengan terjadinya sisa makanan lunak pada pasien DM rawat inap dewasa. Jenis penelitian ini adalah eksplanatory research dengan metode survei desain penelitian cross sectional. Populasi pasien DM rawat inap dewasa sebanyak 28 orang. Teknik pemilihan sampel dengan cara simple random sampling. Data dianalisis menggunakan uji Rank Spearman. Instrumen yang digunakan adalah kuesioner, timbangan dan formulir pengamatan sisa makan. Hasil penelitian menunjukkan bahwa faktor yang berhubungan dengan waste yaitu ketepatan jadwal penyajian makanan pre (p=0,352) dan post (=0,604), mutu makanan pre (p=0,010) dan post (0,787), kelengkapan dan kebersihan peralatan makan pre (p=0,009) dan post (p=0,054), sikap dan penampilan penyaji pre (p=0,022) dan post (p=0,466), tingkat kepuasan pre (p=0,416) dan post (p=0,416). Hasil penelitian pre menunjukkan bahwa tidak ada hubungan antara jadwal penyajian makanan dengan waste DM dan memiliki kategori kekuatan hubungan sedang. Hasil penelitian post menunjukkan bahwa tidak ada hubungan antara ketepatan jadwal makanan, mutu makanan, sikap penyaji dan tingkat kepuasan dengan terjadinya waste pasien DM, ada hubungan antara kelengkapan kebersihan peralatan dengan waste pasien DM. Abstract

Adolescents are a group that is vulnerable to health problems and nutrition, especially in adolescent girls. The emergence of nutritional problems in adolescent girls can be caused by: by a extreem diet, physical activity, knowledge of nutrition, poor eating habits and lifestyle ( life style ) such as body image ( body image ). Besides that in the view of the young women a good body is a slim body so that many teenagers feel dissatisfied and not confident if the body is not slim then, this body image is the trigger level the emergence of eating disorders in adolescents. This study aims to identify and analyze the relationship between nutritional knowledge, perception of body image and disorders eating with nutritional status of adolescent girls in vocational high schools in Gresik Regency. This research is an Analytical Observational study with a Cluster Random design Sampling with respondents as many as 87 respondents who were selected by purposive sampling. The instrument used in this study was a nutritional knowledge questionnaire, questionnaire BSQ-34, EAT-26 questionnaire and food recall questionnaire 1 x 24 hours as additional data intake respondent energy. Data analysis using Chi-Square test and spearman test. The results shows that most of the respondents have good nutritional status (82.2%), there are (65.6%) respondents have sufficient knowledge of nutrition, there are (40.2%) respondents feel dissatisfied with their body image, there are (41.4%) respondents at risk of having eating disorders and eating disorders most of the respondents experienced a severe energy deficit with an average energy of 776 kcal. Test statistics between nutritional knowledge and nutritional status (p= 0.000), body image and nutritional status (p= 0.129) and eating disorders with nutritional status (p = 0.465). The conclusion, there is a relationship knowledge of nutrition with nutritional status of adolescent girls and there is no relationship body image, eating disorders with nutritional status of adolescent girls in Gresik Regency.

Abstract

Plantain peels have a high crude fiber content and can be processed into cookies. The benefits o banana peels as a substitusi for making cookies to increase fiber levels. The research objective was to determine the effect of adding plantain peel flour on nutrients and sensory cookies. The research method used a completely randomized experimental design with 5 formulations with codes F0, F1, F2, F3, and F4. The defference in sensory test is known by the friedman test and the nutrient test is known by the One Way Analysis of Variance (ANOVA) test and then the difference test is carried out with the LSD test with a level of 5%. The results of the sensory test analysis showed that there was an effect of substitution of plantain peel flour on the sensory cookies of banana peel flour which included color, aroma, teste and texture, indicating that H0 was rejected and H1 was accepted, which was a significant difference. The best or highest analysis results are at 0% substitution and the lowest is 30%. Meanwhile, the analysis off the nutritional test showed that the highest protein contest was in the substitution cookies for plantain peel flour (0%) 0f 8.32, the highest fat (0%) was 17.90, the highest carbohydrate (40%) was 70.10, the highest fiber (40%) of 3.35. conclusion the best cookies are in formula F2 (20%) with consumption o 12 pieces of plantain skin flour cookies/day can prevent or reduce the risk of KEK (Chronic Energy Deiciency) in adolescent.

Abstract

ABSTRACT This study aims to analyse correlation of Body Mass Index, fat and natrium intake with the incident of hypertension in adult in Jombang, East Java. The research method using the analytical survey with cross sectional design. The number of subjects in the research are 74 persons that can be using cluster technique sampling. The data retrieval that by doing measures of blood pressure, height, weight, and interview the intake of eating using form SQ-FFQ, and biavriate analysis using chi-square test. The result analysis of correlation BMI with the incident of hypertension obtained p-value=0.034 and OR=4.85, correlation analysis between fat intake with the incident of hypertension obtained p-value=0.438, and corretaion analysis sodium intake with the incident of hypertensionobtained p-value=0.000 and OR=115.5. The concludes of study there was correlation between BMI and sodium intake with the incident of hypertension, but there wasn’t correlation between fat intake with the incident of hypertension. Keywords: Fat intake, sodium intake, hypertension, body mass index ABSTRAK Tujuan penelitian ini untuk mengetahui hubungan antara Indeks Massa Tubuh, asupan lemak, dan asupan natrium dengan kejadian hipertensi di Desa Japanan Kecamatan Gudo Kabupaten Jombang. Metode penelitian menggunakan metode survei analitik dengan desain cross sectional. Jumlah sampel dalam penelitian adalah 74 orang yang didapat dengan menggunakan teknik cluster sampling. Pengambilan data yaitu dengan melakukan pengukuran tekanan darah, tinggi badan, berat badan, dan wawancara asupan makan menggunakan form SQ-FFQ, dan analisis bivariat dilakukan menggunakan uji chi-square. Hasil analisis hubungan IMT dengan kejadian hipertensi didapatkan nilai p=0,034 dan OR=4,85, analisis hubungan asupan lemak dengan kejadian hipertensi didapatkan nilai p=0,438, dan analisis hubungan asupan natrium dengan kejadian hipertensi didapatkan nilai nilai p=0,000 dan OR 115,5. Keseimpulan dari penelitian adalah ada hubungan IMT dan asupan natrium dengan kejadian hipertensi, namun tidak ada hubungan asupan lemak dengan kejadian hipertensi. Abstract

Toddlers with body weight under the red line (BGM) and stunting indicate malnutrition. The purpose of this study is to assist toddlers who are malnourished and stunted by means of education and nutrition counseling. This research method is a cross sectional and experimental study. The research was conducted in two stages, namely the collection of basic data and then intervention according to the causes of the problems found. Total of 21 BGM and stunting toddlers were assigned as research subjects. Sampling was done by non-probability sampling method. The results showed that after carrying out nutritional education, the knowledge of mothers under five increased and was more familiar with innovations in nutrient-dense food products. The results of nutritional counseling monitoring related to weight and height showed a significant increase (p<0.05), while monitoring food intake showed an insignificant value (p>0.05). So it can be concluded that educational and counseling interventions can potentially overcome the problem of under-fives with malnutrition and stunting.

Abstract

Objective: This study was to determine the relationship between emotional eating, eating patterns, and physical activity with the incidence of obesity in public health center officers in Manyar District, Gresik Regency. Methods: This was an analytic observational study with cross sectional design. Thirty six respondents were selected by purposive sampling technique. Respondent identity data, emotional eating, eating patterns, and physical activity were taken through interviews with a questionnaire guide (DEBQ-13, FFQ, and PAL). Anthropometric data were obtained through direct measurements. Statistical analysis was performed bivariate with chi square test and multivariate with multiple linear regression test. Result: This study shows the prevalence of obesity in public health center officers in Manyar District Gresik Regency of 32%. There is a relationship between emotional eating and obesity (p value 0.007 <0.05), there is no relationship between diet and obesity (p value 0.31> 0.05), and there is no relationship between physical activity and obesity (p value 0.29> 0.05). Emotional eating factor has a moderate, not so strong relationship with the incidence of obesity in public health centers in Manyar District, Gresik Regency, that is 48.2%. Conclusions: There is a relationship of emotional eating that is not so strong with the incidence of obesity, there is no relationship between diet and physical activity with obesity. Education information on Balanced Nutrition Guidelines (PGS) very much needed as a source of information to the community, especially for public health center officers in the Manyar District, Gresik Regency. Abstract

ABSTRACT The objective of this study is to analyze the association between IMD, husband support, knowledge and mother’s occupation with exclusive breastfeeding in the Cerme Health Center in Gresik. This study uses a cross sectional design. Sampling using simple random sampling. Interviews were on 90 respondents who have children aged 7-24 months. This research was conducted at the Posyandu Puskesmas Cerme, Gresik. Statistical analysis was did bivariately with the chi square test. Coverage of exclusive breastfeeding in the working area of Cerme Health Center in Gresik Regency is 33.3%. The results of this study indicate that there is no relationship between IMD and exclusive breastfeeding (p value 0.347> 0.05), husband's support with exclusive breastfeeding (p value 0.80> 0.05), knowledge with exclusive breastfeeding (p value 0.343> 0.05) and mother's occupation with exclusive breastfeeding (p value 0.3528> 0.05). However, mothers who did IMD, received husband support and had good knowledge had a greater proportion of giving exclusive breastfeeding compared to those who did not do IMD, did not get husband support, and who had less and sufficient knowledge. Penelitian ini menggunakan rancangan cross sectional. Pengambilan sampel menggunakan simple random sampling dengan 90 responden yang memiliki anak usia 7-24 bulan. Penelitian ini dilakukan di Posyandu Puskesmas Cerme Kabupaten Gresik. Analisis statistik dilakukan secara bivariat dengan uji chi square. Hasil penelitian didapatkan bahwa pemberian ASI eksklusif di wilayah kerja Puskesmas Cerme Kabupaten Gresik sebesar 33,3% hasil dari penelitian ini menunjukkan bahwa tidak terdapat hubungan antara IMD dengan pemberian ASI eksklusif (p= 0,347) dukungan suami dengan pemberian ASI eksklusif (p=0,800) pengetahuan dengan pemberian ASI eksklusif (p=0,343) dan pekerjaan ibu dengan pemberian ASI eksklusif (p= 0,3528) di wilayah kerja Puskesmas Cerme Kabupaten Gresik. Ibu yang melakukan IMD, mendapat dukungan suami, dan memiliki pengetahuan baik memiliki proporsi yang lebih besar memberi ASI eksklusif dibandingkan dengan yang tidak melakukan IMD, tidak mendapatkan dukungan suami, dan yang memiliki pengetahuan kurang serta cukup. Abstract

Indonesia is a country with various nutritional problems and requires serious handling. This nutritional problem will certainly affect human resources (HR). Problems that are quite high in under-fives and toddlers are short (stunting) and thin (wasting). This activity aims to improve and increase the knowledge of mothers of children aged under two and under five as well as to achieve and improve normal nutritional status in the working area of ​​the Fisherman's Health Center, precisely in Sukodono Village, Gresik District, Gresik Regency. Data collection was carried out in Sukodono Village, Gresik District, Gresik Regency, it was found that 2 respondents were undernourished which was a recommendation from nutritionists at the Fisherman and Cadre Health Center in Sukodono Village. The result of this activity is that there is an increase in the level of knowledge before and after counseling. This is due to the provision of information and education to respondents so that their knowledge increases from those who do not understand to become more aware and from those who do not know to know. In addition, there was an increase in respondents' understanding regarding the intake consumed must be nutritionally balanced and there was a change in the respondent's intake from before counseling to after counseling. There was an increase in weight and height of under-fives and toddlers before and after being given education.
