Abstract

Chicken slaughter had to fulfill requirements such as the slaughter done in Islamic ways and the meat processed hygienically in order to produce safe, healthy, whole, and halal. Partner farmer at Alebo, Konda Sub-district, Konawe Selatan Regency implemented a simple slaughter system with less hygienic tools and procedures that increased the risk of contamination in meat. This community partnership program aimed to increase the farmer’s information and skill in managing native chicken slaughterhouses in order to produce better carcass and fish feed from slaughter waste. The methods used in this program were physical and non-physical methods which consisted of the slaughterhouse renovation, chicken slaughter, and carcass packaging training, fish feed production using slaughter waste training, discussion, and public lecture. Results of the program show that partner farmers are able to implement Islamic and hygienic slaughter processes and use better packages for the carcass. The farmers also understand the importance of slaughter waste processing and producing fish feed as an additional product of the slaughterhouse.

Abstract

Tanjong Selamat is one of the villages directly adjacent to Universitas Syiah Kuala, Banda Aceh. Its strategic location makes Tanjong Selamat Village a priority to be developed into an assisted village of Universitas Syiah Kuala. The main occupations of local Tanjong Selamat villagers are farmers and breeders. Efforts to increase the community income can be done through the cultivation of laying ducks and post-harvest management in the form of making salted eggs. This community service activity was carried out in the form of extension, demonstration, and training. The activity materials are knowledge about the prospects for laying ducks cultivation, prevention and treatment of diseases that often attack ducks, good cage systems, management of breeding, and the making of salted eggs. The cage system and breeding management were carried out by making a pilot cage consisting of the main cage of 15 m2 and a breeding area of 50 m2. The cage was filled with 50 domestic ducks (peking ducks and tegal ducks) aged 4 months. During the community service activity, the participants were very enthusiastic and able to implement the technology package that had been given. Based on the activity that has been conducted, the villagers of Tanjong Selamat Village, especially the members of the livestock group, can understand well the extension material and have high enthusiasm in improving the management of laying ducks as observed during the demonstration of the cage plot as well as better understand the making of salted eggs that are in accordance with consumer desires and have a long shelf life.

Abstract

Toxoplasmosis is a disease of vertebrate animals and it is capable of being transmitted to humans (zoonosis). Toxoplasmosis is caused by the protozoan parasite Toxoplama gondii. Cats are the definitive host of T. gondii where this parasite will enter the cat's body through what it eats such as rats, raw meat, or water that is contaminated with oocysts of the T. gondii parasite. This condition is generally experienced by stray cats or domesticated cats which are often given raw meat. The purpose of this activity is to increase public understanding of the dangers of toxoplasmosis and how to prevent and anticipate the spread of toxoplasmosis in Kupang City. The method used in this community education was through presentation and discussions about the danger of toxoplasmosis. To measure the level of understanding of the participants about the dangers of toxoplasma, a questionnaire is given at the beginning and at the end of the activity. A total of 38 participants from the productive youth groups in Kupang City were involved in this activity. The result of this activity shows that the public is increasingly educated about toxoplasmosis and how it is transmitted.

Abstract

The small food processing industry in Kupang City has increased in recent years. One of the evolving food processing industries is pork processing. Pork jerky is one of the processed pork products and is classified as a new product for the community in Kupang City. When compared to se'i, pork jerky is not very popular among people in NTT. This can be because there are still very few UMKMs (Micro Small and Medium-sized enterprises/MSMEs) that produce pork jerky.UMKMs pork jerky Debali is one of the small business units in Kupang City that produce pork jerky. In addition to being marketed in Kupang City, Debali pork jerky products have also been marketed out of Kupang City. But like other UMKMs, Debali experiences production process problems such as a simple production process that takes a relatively long production time, the number of products is still insignificant, simple product packaging and vacuum packaging products are not available which have a longer shelf life. Community service activities to transfer science and technology (Ipteks) are carried out to improve the quality and capacity of Debali pork jerky business through counseling, gas ovens operation training as an alternative to drying jerky, packaging jerky with modern packaging and vacuum packaging, as well as assistance in marketing and business analysis.
