Abstract

Implementation of the food is a series of activities that constitute a system includes activities or sub-system of budgeting food, planning menus, making estimates of foodstuffs, provision or purchase groceries, reception, storage and distribution of food ingredients, preparation and cooking of food, assessment and distribution food, recording and reporting and evaluation carried out in the framework of the provision of food for the population in the institution. This study aims to determine the relationship of the acceptability of food energy and protein intake in students in the dormitory MAN Model Singkawang. This type of research is observational with cross sectional approach. Sampling using simple random sampling technique to obtain a sample of 48 students. Primary data collected included the acceptability of food, intake of energy and protein intake. While the secondary data includes a general overview of the research and the number of students that will be investigated. The analysis used include univariate and bivariate analysis using chi square test. Based on statistical analysis using chi square test, shows that there is a relationship between the received power of food to energy and protein intake in students in a dormitory MAN Model Singkawang (p <0.05).

Abstract

Power of acceptance is the ability of a person to spend the food served according to his needs. To maintain good health and to perform its functions properly, the human body needs nutrients including the energy needs of food. In an effort to improve the health of patients, attention to the improvement of food and nutrition services by the institution to the patient is a matter to note. This study aims to determine the ratio of food acceptance as well as the factors that affect the system of self-managed food and outsourcing. This research is Quantitative research with cross sectional approach. The population of this study were all 3rd grade patients at RSUD Sultan Syarif Mohamad Alqadri Pontianak and RSUD dr Agoesdjam Ketapang which amounted to 100 people. The data collected in the form of primary data and secondary data. The analysis used is Chi-Square and T-Test. The results showed that both hospitals received food in good category under <20% but in Hospital with better self-managed feeding system, rather than the system of feeding oursourcing is dikarnakan on food outsourcing organizing system is not monitored from manufacture to to distribution. It is suggested that Sultan Syarif Mohamad Alqadri Hospital Pontianak to evaluate food remnants for 3 months regularly and thoroughly in all patients, and in ketapang hospital to add cooking power

Abstract

Personal hygiene merupakan perilaku bersih, aman dan sehat untuk mencegah kontaminasi pada makanan. Pengetahuan, sikap dan perilaku hygiene perorangan sangat penting di dalam penyelenggaraan makanan. Salah satu cara untuk meningkatkan pengetahuan penjamah makanan tentang personal hygiene adalah dengan memberikan informasi menggunakan media kalender. Penelitian ini bertujuan untuk mengetahui pengaruh media kalender terhadap pengetahuan dan perilaku personal hygiene pada penjamah makanan di instalasi gizi RSUD dr. Achmad Diponegoro. Jenis penelitian yang digunakan adalah pre-eksperimen dengan desain one group pretest – posttest. Sampel penelitian 12 orang penjamah makanan di Instalasi Gizi RSUD dokter Achmad Diponegoro. Pengumpulan data melalui lembar soal dan lembar observasi. Data dianalisis menggunakan uji paired sample t test dan uji Wilcoxon. Hasil penelitian menunjukkan ada perbedaan pengetahuan sebelum dan sesudah intervensi media kalender (p=0,001), ada perbedaan perilaku sebelum dan sesudah intervensi media kalender (p=0,016). Simpulan penelitian ada pengaruh media kalender terhadap pengetahuan dan perilaku personal hygiene pada penjamah makanan.

Abstract

Paving block workers are included in the informal sector and have a risk of lower back pain. Documenting the workers’ health status in the informal sector has not been done well so that workers do not get protection from the government. Heavy physical work puts pressure on the spine associated with repeated body twisting. This study aims to determine work attitude, length of employment, and exercise habits related to low back pain in Pontianak paving block workers in 2018. This type of research is observational with a cross-sectional approach. Sampling uses total sampling. The research sample of 56 paving block workers in the city of Pontianak, West Kalimantan. Data is processed with a computer program. Data analysis was performed univariate and bivariate and tested using the Chi-square test, with α = 5%. The results showed that there was a significant relationship between the length of the work (p = 0.013), work attitude (p-value = 0.038), and exercise habits (p = 0.003) with low back pain.

Abstract

The right diet is needed in the treatment of Diabetes Mellitus. The dietary standards used must be by their nutritional adequacy. This study aims to determine the effectiveness of the use of aluminum cup serving tools for standard measuring devices in the Diabetes mellitus diet. The portion measurement instrument is designed by 1P, 1 1 / 2P, and 2P standards. The study was conducted at a laboratory scale in 2018 with a quasi-experimental approach. Data analysis uses Analysis of Variance (ANOVA) with α = 5%. The results show that the average effectiveness of 1P portion accuracy is 99%, 1½ P for 101%, and 2P about 99.6%. There was no difference in effectiveness compared to using a scale and there were differences in measurements using bowls and spoons. Standard portion of 1P measuring instruments 114% effectiveness bowl and 113% spoon, standard 1½ P portion for 107% bowl and 105% spoon, and 2P standard portion for measuring the effectiveness of the portion of the bowl is 104% and 103% spoon. Using a measuring device Aluminum cup portions, both 1P, 1.5P, and 2P parts can determine the value of food and nutritional adequacy standards of patients with Diabetes Mellitus.

Abstract

Background: One way to improve the quality of food provision in hospitals is by implementing hazard analysis critical control point (HACCP) in food processing.Objective: The study aimed to identify the effect of HACCP implementation to the decrease of microbiological hazards of foods for children in particular at Nutrition Installation of Dr. Soedarso Hospital of Pontianak.Methods: The study was a quasi experiment that use multiple time series design with intervention and cassation of intervention (ABA time series chain). Samples of the study were animal based food for children, cooking utensils used preparation, processing, and distribution of the food, the food providers and food processing containers. Samples were taken 3 times before and after the implementation of HACCP, each within a week duration.Result: Average germ rate in foods and cooking utensils before implementation of HACCP was relatively high. After the implementation of HACCP there was a decrease. The result of statistical analysis showed that there were effects of HACCP implementation to the reduction of microbiological hazards in foods and cooking utensils (p<0.05). Average score of knowledge on sanitation hygiene of food and practice of sanitation hygiene of foods after HACCP implementation increased. There was an increase of average score of knowledge on food sanitation hygiene and practice of food sanitation hygiene of HACCP implementation (p<0.05). Average score of sanitation hygiene of food processing container after HACCP implementation increased.Conclusion: The implementation of HACCP could reduce microbiological hazards (germ rate) of animal based special foods for children.

Abstract

Diabetes mellitus is a disease that threatens global health and most are classified as type 2 diabetes mellitus caused by interactions between factors to the environment. Environmental factors that are expected to increase the risk factors for type 2 diabetes mellitus are not adhering to a diet, changing one's lifestyle, including unbalanced eating habitsThis type of research is a quasi-experimental study with a design using the one group pretest posttest approach. The total sample of 35 people was taken by purposive sampling technique. Pre test was carried out before being given m-diabetic application media and given a post test after being given m-diabetic application media. This study used the Kolmogorov-Smirnov normality test and a different Wilcoxon test.The results showed a significant change in the form of increased knowledge (p = 0,000) and an increase in adherence to a type 2 diabetes mellitus diet (p = 0,000). The conclusion of this study is that there are differences in knowledge after being given m-diabetic application media and there are differences in adherence to the diet type 2 diabetes mellitus. Melitus type II, and further researchers can use an android-based application as an educational medium for sufferers of other diseases.

Abstract

Youth is the beginning of the formation of a high quality of life in the future. For adolescents not to have a negative body image that impacts multiple nutritional statuses (less and more nutritional status), an information-based education is needed which they organize to support life as a beautiful person but a high level of health by maintaining nutritional status in the normal category and living a style. Healthy life so that the beauty they have is a quality beauty. This study aims to analyze the relationship between body image, nutritional knowledge, nutritional status in adolescents in Public senior high school 09 Pontianak City. The research method was an observational analytic study with a cross-sectional design, the study was conducted from July to August 2018. The population of this study was students of class X and XI of Public senior high school 09 Pontianak City. Based on the results of the sample calculation, 90 people were determined using a random sampling technique. The results showed that there was a significant relationship between body image, nutritional knowledge, and adolescent nutritional status with value (p = 0.03). Suggestions, it is necessary to warn of nutritional status periodically by the Saigon Public Health Center in collaboration with the School of Public senior high school 09 Pontianak City, so that the nutritional status of adolescents is well controlled.

Abstract

Masalah gizi menjadi salah satu penentu kualitas sumber daya manusia. Timbulnya masalah gizi, secara langsung disebabkan oleh faktor asupan zat gizi dan penyakit infeksi. Penyebab tak langsung adalah akibat dari faktor lainnya yaitu ketersediaan pangan dalam keluarga, asuhan ibu terhadap anak dan pelayanan Kesehatan. Tujuan untuk mengetahui pengaruh pendampingan gizi dengan media video PMBA terhadap pengetahuan, penerapan PMBA dan asupan zat gizi makro balita. Metode penelitian yang digunakan adalah one group pretest-posttest design. Sampel pada penelitian ini adalan 32 responden. Data diambil dengan menggunakan kuesioner dan lembar recall dan dianalisa dengan menggunakan analisa univariat dan analisa bivariat. Ada perbedaan pada pengetahuan gizi sebelum dan sesudah pendampingan gizi dengan media video (p=0,000), ada perbedaan pada penerapan PMBA pada responden sebelum dan sesudah pendampingan gizi dengan media video (p=0,020), pada hasil zat gizi makro ada perbedaan antara sebelum dan sesudah pada kelompok umur 6-11 bulan (energi p=0.000), protein p=0.002, lemak p=0.003, dan pada kelompok umur 12-24 bulan (energy p=0.001, protein p=0.021, karbohidrat p=0.011). Tidak ada perbedaan antara sebelum dan sesudah pendampingan gizi dengan menggunakan media video pada kelompok umur 6-12 bulan (karbohidrat p=0.074) dan 12-24 bulan (lemak p=0.083). Pendampingan gizi menggunakan media video mampu mampu meningkatkan pengetahuan, penerapan PMBA dan zat gizi makro.

Abstract

In Indonesia, some plants contain many benefits for public health and contain very high nutrients ranging from macronutrients to micronutrients. These plants include Moringa oleifera L, the Moringa tree, by Indonesian people. However, few people know about the Moringa tree's benefits, so its utilization still needs to improve in society. This study was a pure experimental study consisting of 3 three treatments of mackerel fish nuggets with different substitutions for moringa leaf flour: P1=5, P2=12.5, P3=25. The third step was an organoleptic test at the Pontianak Ministry of Health's Poletkkes Food Technology Laboratory consisting of 25 panelists. Then proceed with nutritional analysis in the Chemistry laboratory at Tanjung Pura Pontianak University. The research design used a completely randomized design (CRD) data and was analyzed using the Freedman statistical test. The results of the study are based on Friedman's statistical test, which is enhanced with Conover with a 95% confidence level, showing that the results of T count > T table (13.6 > 3.175) mean that there is a color difference in the nugget formula, there is a difference in the aroma of the nugget formula with T count > F table (6.03 > 3.175) there is a difference in taste for variations in taste with T count < F table (2.72 < 3.175) Based on test results Laboratory tests on nuggets of moringa leaf flour substitution showed an average protein content of 7.08%, average moisture content of 2.01% average ash content of 5.15%.
