Abstract

The objectives of the research entitled "The Effect of broken coffee beans in Roasting on Taste of Robusta Coffee at Pucak Sari Village, Buleleng, Bali" were (1) to know the influence of broken beans content of coffee and level of roasting on taste of coffee and (2) to know the level of broken beans and the appropriate level of roasting to produce good coffee taste from Robusta coffee at Pucak Sari Village, Busung Biu Subdistrict, Buleleng Regency. This study used a Randomized Block Design with 15 treatments consisting of 3 levels of roasting namely light, medium and dark and 5 combinations of broken beans content with 10% (10 broken beans: 90 whole beans), 20% (20 broken beans: 80 whole beans), 30% (30 broken beans: 70 wholes beans), 100% broken beans and 100% wholes beans. The research results showed that Pucak Sari robusta coffee on all treatments meet the quality requirements of SNI 01-3542-2004 with water content varying between 2.44% b/b – 3.13% b/b, ash content varying between 4.58% - 4.77%, and the sari content varying betweeen 25.86% w/w – 29.24% w/w. During roasting the coffee beans with high levels of broken beans produces coffee taste that is not appropriate. The treatment that produces the best coffee taste in Robusta Pucak sari coffee on the result of assessment fragrance, flavor, aftertaste, salt/acid, bitter/sweet, mouthfeel, balance and uniform cup was the treatment of 10% broken beans content (10 broken beans: 90 whole beans) and light roasting (190°C - 195°C). Abstract

Agrotourism is a tourist activity that involves the use of agricultural land or related facilities that attract tourists. The increasing number of agrotourism will have implications for the level of competition that is increasingly high among agrotourism. The high competition is one of the factors to carry out product development strategies. The objectives purpose of this study are: 1) to find out the types of agroindustry products sold in the shopping area in agrotourism, 2) determine which agroindustry products are most popular with tourists in the shopping area, 3) to formulate alternative strategies and set priorities for agroindustry product development strategies. This research was conducted at Cau Chocolate Factory Agrotourism. This study uses the SWOT method to determine the alternative strategies used, and TOPSIS to rank these alternatives. The strategy that can be applied in Cau Chocolate Factory Agrotourism is a intensive strategy, the priority of the chosen strategy is 1) expanding the marketing of chocolate products, 2) promoting processed chocolate products to social media, 3) strengthening cooperation with suppliers and between tourism actors and similar companies. Abstract

This research aims to find out the types and the number of distribution channelsof the oranges from the farmers to consumers, and to compare the marketing and profit margins of all distribution channels. The population of this research was all farmers at “Gunung Mekar” farmers group and “Puncak Andong” farmers group, the collectors, retailers, and wholesalers. The sample of this research was taken by using purposive sampling method with 50% of the population. Data was taken by doing the survey in Taro village, and also the traditional markets, fruit store and supermarket in Denpasar. Data was analyzed by using both qualitative and quantitative methods. Qualitative analysis aims to find out the types and the number of distribution channels, and quantitative analysis aims to calculate the marketing and the profit margins from each distribution channel. The results showed that the distribution channel used was: producer – collectors – wholesalers – retailers. There are five distribution channels of the orange marketing from Taro village to the consumers in which the line ends in traditional markets, and there is another one in which it ends in the store and supermarket in Denpasar. The lowest marketing and profit margin was found in the second distribution channel (Sukawati market) which went through the collector with the marketing margin of Rp. 3,400/kg (54.84%) and the profit margin of Rp 2,450/kg (39.52%). While the highest marketing and profit margin was in the first distribution channel which went to Tiara Dewata supermarket with the marketing margin of Rp. 9,400/kg (151.61%) and the profit margin of Rp 5,483/kg (88.44%)

Abstract

Ital Fran's Multindo Food Industries Bali Branch is one of the companies engaged in the food processing industry that produces bread with competitive and complex business competition conditions. The purpose of this study is to determine the company's performance of PT. Ital Fran's Multindo Food Industries Bali Branch using the Balanced Scorecard (BSC) method. This research was conducted by observing the company, interviewing the company's management and distributing questionnaires to customers and employees. The results showed that the total performance score for each perspective was a financial perspective, which was 14.36%, a customer perspective was 22,91%, an internal business process perspective was 24.16% and a learning and growth perspective was 23,43%. Based on the criteria for the total score of performance appraisal shows that the company PT. Ital Fran's Multindo Food Industries Bali Branch is in "Very Healthy (AA)" condition with an overall performance score of 84,86%. Abstract

The purpose of this study were (1) to determine the number of chili (Capsicum annum L) distribution lines from farmers in Penebel Subdistrict to the retailers, (2) find out the type of chili postharvest handling from farmers in Penebel District to retailers and find out the impact of losses from farmers in the District Penebel to retailers. The method used in this study is a survey method with the application of a questionnaire Commodity System Assessment Method that is distributed to farmers, collectors, traders, and retailers. The results of the study show that there are 3 distribution channels, namely lane I - retailers, lane II farmers - collectors - retailers, lane III farmers - collectors - traders - retailers. Handling at the farm level includes harvesting, cleaning and sorting, packaging, postharvest handling at the level of collectors, traders and retailers including weighing, cleaning and sorting, packaging and transportation. The impact of the loss of chili postharvest at the farmer level is significant at 10.48%, at the level of collectors in the sorting process is insignificant reaching 2.80%, at the level of large traders in the sorting process is insignificant reaching 2.2% and at the retail level at the sorting process is significant reaching 6.41%. Abstract

This study aims to analyze the internal and external conditions as well as compose and recommend the business development strategy of agro-industries of Civet coffee at Satria agro- tourism in the Gianyar Regency. The methods used in this research is a method of observation field and in-depth interviews using questionnaire. Data field observations and interviews are then analyzed to obtain formulation strategies using the SWOT analysis. The assessment weighting and rating conducted by 5 experts. Results of the study show that there are 5 strengths, 5 weaknesses, 4 opportunities, and 3 threats. Results weighting and rating values for the matrix that the weighted Internal Factor Evaluation (IFE) was 3.72 and matrix External Factor Evaluation (EFE) is 3.75. This value indicates a strong position on the matrix Internal external (IE) and the strategy to do is intensive and integrative strategies. Based on SWOT Matrix Analysis, priority alternative strategy is maintaining of price and quality to expand marketing. Keywords : strategy, SWOT, agro tourism, civet coffee, QSPM

Abstract

The aimed of this research were to 1) know the influence of the type of solvent to yield and the characteristics of the resulting dye pandanus fruit. 2) get the best type of solvent that is able  to produce dye pandanus fruit. This study used a factorial randomized block design, which the treatment was the type of solvent consisting of 6 solvent, namely n-hexane, chloroform, ethyl acetate, acetone, ethanol, and water. The experiments are grouped into 3 groups based on the time of implementation, in order to obtain 18 units experiment. Samples were assayed byobjective and subjective to determine the best treatment. Objective variables observed that the yield, total carotenoids content, color intensity. Subjective variables observed that the level of color strength pandanus fruit extracts. The results showed that the type of solvent significantly affect on yield, levels of total carotenoids, strength of color, brightness (L*) andyellowish level (b*) dye pandanus fruit, but did not affect on redness level (a*). Solvent of chloroform was the best treatment to produce extract dye from pandanus fruit with the following characteristics: yield 2,43%; total carotenoid content 0,12%; brightness (L*) 8,01; yellowish level (b*) 40,07; and strength of color 4,5. Keyword :solvent, extraction, pandanus fruit, natural dyes

Abstract

The demand of broilers meats in Bali Province are very high and more dominated from hotels, restaurants, cafes and industrial. The aims of this research are to establish the factors those influenced the availability broiler meat, to arrange dynamic system modeling broiler meat availability, calculate the availability policy for fulfilling the need of animal protein, to arrange alternative recommendation of scenario policy for fulfilling the demand of broiler meat in Bali Province. Simulation are conducted over a period of 10 years, starting from 2012 until 2021. The factors those influenced the availability broiler meat in Bali Province are broiler meat production and broiler meat requirements. The simulation result showed that the production of broilers meat in Bali Province did not afforded to fulfil the demands of broilers since 2012. The avaibilty of broilers in Bali Province mostly appointed the reduction from the bigining to the end of the simulation year. According to the simulation result several scenarios, the policy which was very effective and possible to be developed for fulfilling the demand of broilers meat is by adding the weight of broilers during the livestock and also by adding more chicken. Abstract

Tujuan penelitian adalah: identifikasi struktur rantai pasok hortikultura dan menganalisis nilaitambah yang diperoleh pada masing-masing rantai, sehingga diperoleh distribusi nilai tambahpada masing-masing rantai yang nantinya akan bermuara pada rekomendasi pengembangansistem manajemen rantai pasok hortikultura di Kabupaten Klungkung. Metode yang digunakanyaitu metode kualitatif dan kuantitatif. Metode kuantitatif digunakan untuk mengukur kinerjakunci rantai pasok dan mengukur nilai tambah. Untuk kinerja kunci rantai pasok digunakanmetode Analytical Hierarchy Process (AHP), sedangkan untuk mengukur nilai tambah digunakanmetode Hayami. Struktur rantai pasok pada komoditas cabai adalah Petani – Pedagang PasarKlungkung – Konsumen, sedangkan pada komoditas jagung, struktur rantai adalah Petani –Pedagang Pasar di Denpasar – Konsumen serta Petani (Supplier) – Supermarket – Konsumen.Manajemen rantai pasok hortikultura yang diterapkan di Klungkung secara umum masih bersifattradisional. Kinerja kunci rantai pasokan mempertahankan “Kemitraan yang berkelanjutan”(0,325), dengan indikator kinerjanya adalah atribut reliabilitas (keandalan) (0,257). Untuk atributreliabilitas (keandalan), indikator kinerja yang harus ditingkatkan adalah: pemenuhan pesanansecara sempurna, kualitas produk, serta kualtas proses. Nilai tambah yang diterima petani cabaiadalah sebesar Rp 3.325/kg, dengan pendapatan tenaga kerja adalah sebesar Rp 9.448/kg, dankeuntungan yang diperoleh adalah minus Rp 6.123/kg. Nilai tambah yang diterima petani jagungadalah sebesar Rp 2000/kg, pendapatan tenaga kerja adalah sebesar Rp 960/kg, dan keuntunganyang diperoleh adalah Rp 1040/kg.

Abstract

Tujuan dari penelitian ini adalah untuk menganalisis rantai nilai dari produsen sampai ke konsumen.Dalam penelitian ini dikaji tiga variabel yaitu kondisi objektif rantai nilai, nilai tambah, serta sertakehilangan yang terjadi pada masing-masing rantai. Penelitian ini mengambil lokasi di kecamatan NusaPenida, kabupaten Klungkung. Pemilihan lokasi penelitian menggunakan metode purposive sampling,sedangkan pemilihan responden menggunakan metode acak dan metode snowball. Metode analisis yangdigunakan adalah CSAM (A Commodity Sistem Assessment Method). Lokasi penelitian secara spesifikadalah pada tiga desa penghasil rumput laut terbesar di Nusa Penida, yaitu Desa Semaya, Desa Suana, danDesa Batu Mulapan. Dari penelitian diperoleh pola rantai nilai dari produsen sampai ke konsumen adalahprodusen – pengepul – pedagang Surabaya; produsen – pengepul – supplier – pedagang Surabaya; danprodusen – supplier – pedagang Surabaya. Nilai tambah yang diberikan pada tingka petani yaitu:pemanenan, penjemuran, pembersihan, pengemasan. Nilai tambah yang diberikan pada tingkat pengepul,yaitu: tranportasi, penjemuran, pembersihan, pengemasan ulang, penimbangan, serta penyimpanan.
