Abstract

Introduction: Efforts to improve nutrition for the prevention of stunting include specific interventions with specific targets, namely pregnant women in the form of supplementary feeding for pregnant and lactating mothers. Micronutrient food sources that are still not maximized are processed including jackfruit seeds (Arthocarphus heterophilus), Soybean (Glycine max L. Mer) and Moringa oleifera leaves. Objective: Determine the right formulation in making kalelo yogurt as a probiotic and PMT to prevent stunting. Methods: Post-test only design method with yogurt formula treatment. The resulting yogurt was seen as having an effect on the amount of lactic acid bacteria, total acid and pH. The statistical analysis used was Complete Randomized Design (CRD) 3 X 2 followed by Duncan test to see the difference in mineral content of each formulation with α 0.05. Results: The number of lactic acid bacteria (LAB) ranged from 5.8 x108 to 1.8 x109, fulfilling the SNI Yoghurt standard with the highest number of F3 formulas. Total acid ranged from 11-1.2% calculated as lactic acid, fulfilling standard SNI yogurt with the highest amount of formula F2. Total solids of yoghurt formula ranged from 16.29% -16.79%, fulfilling standard SNI yogurt with the highest value of Formula F1 & F3. The pH value of Kalelo yogurt is 3.8 with a formula that has the best pH, namely F2 formula. Discussion: LAB can develop during fermentation because it uses sugar from carbohydrates in the formula. During the fermentation process, lactose derived from skim milk will be hydrolyzed by the enzyme β-galactosidase to glucose and galactose, then converted to lactic acid. The high amount of solids is caused by the addition of soybeans, jackfruit seeds which are high in sugar content. Organic acids cause a decrease in pH during the fermentation process. In addition to increasing incubation time, microbial activity is increasing and the number of microbes is increasing, resulting in pH decreasing. Conclusion: The number of lactic acid bacteria (LAB), the amount of acid calculated as lactic acid, the amount of solids and the value of PH calelo yogurt fulfills the SNI standard of yoghurt. Keywords: Provision of additional food, Yoghurt, Pregnant women, Breastfeeding mothers, Arthocarphus heterophilus, Glycinem ax L. Mer, Moringa oleifera

Abstract

This community service intends to assist Tikung Health Center foster grandmothers in becoming great grandmothers with healthy toddlers. Because the toddler's mother was at work, the foster grandmother program began with the Posyandu Toddler activity, which was attended by grandmothers taking their grandchildren. As a result, support is still required to improve grandmothers' and grandchildren's nutrition and health awareness. Nutrition education for the elderly, parenting and nutrition education for toddlers, nutrition counseling services and blood glucose checks, and community empowerment through cassava processing competitions (local foods) are all part of this program. The program went off without a hitch, thanks to the foster grandmothers' joyful reception and a lot of help from cadres, PKK, village officials, and the Tikung Health Center in Lamongan Regency. Foster grandmothers' knowledge of parenting and nutrition is also increased, as is their ability to process many varieties of processed cassava, which can provide income opportunities for foster grandmothers and their family.

Abstract

Background: The covid-19 pandemic period forced all school students to carry out school activities at their respective homes so that they changed their activity patterns, food patterns and exposure to the internet. These three things can indirectly affect the nutritional status of adolescents. Unicef stated that 1 in 5 school teenagers in Indonesia is obese. The prevalence of adolescent obesity in East Java is 16.4%, which is greater than the prevalence in Indonesia of 13.5%. Objective: To identify the relationship of food pattern, physical activity, internet addiction and nutritional status in high school teenagers in Surabaya. Methods: This research is an analytic observational study with a cross sectional design. The sample size is 72 samples taken by simple random sampling from 2 high schools representing the city of Surabaya. Food pattern was measured by interviewing the Qualitative Food Frequency Questionnaire, physical activity was measured by interviewing the IPAQ (International Physical Activity Questionnaire) questionnaire and internet addiction using the young's internet addiction test questionnaire. Nutritional status was measured independently with Body Mass Index. Relationship analysis was carried out by Spearmen correlation test. Results: There are 62.5% of respondents have an inappropriate food pattern, with 48.6% of respondents have moderate activity. The level of internet addiction with the highest proportion is in the mild category as much as 66.7%, meanwhile 9.7% and 25.0% of respondents are overweight and obese respectively. There was no relationship between internet addiction and nutritional status (p=0.192), but there was a relationship between physical activity and diet and nutritional status (p<0.05). Conclusion: In connection with the relationship between physical activity and diet with excessive nutritional status, KIE for adolescent students regarding adequate physical activity, proper eating patterns with balanced nutrition principles and monitoring student body weight need to be re-enforced.

Hasil pemeriksaan Kesehatan pada penghuni dan pengelola panti didapatkan sebagian besar (52,6 persen) penghuni panti berjenis kelamin laki-laki, hampir setengahnya berusia rata-rata 21-60 tahun, Sebagian besar (68,4 persen) tekanan darah kurang dari 140/90 mmHg, Sebagian besar (73,1 persen) berstatus gizi normal, hampir seluruhnya (94,4 persen) glukosa darah kurang dari 126 m/dL dan asam urat kurang dari 8 mg/dL. Secara umum keadaan warga panti asuhan dalam keadaan baik Social problems that often occur in society are abandoned children, street children, beggars, disabled people, neglected elderly, poor families, families with social problems, and so on. Children and poor people should have their human rights fulfilled by the State of Indonesia. However, in reality there are many children whose needs are not met, such as parents who are unable to provide for the child's needs or the child does not have parents. One effort to overcome this is to establish social institutions in the form of orphanages. Since the pandemic, children at the Mission Nusantara Surakarta Orphanage rarely receive health services and there is limited space for children to move. Theless than purpose of this community service is to assist the orphanage in monitoring the growth and development of residents and managers of the Mission Nusantara Orphanage in Surakarta. The implementation method is in the form of examinations on child growth and development, Counseling on Clean and Healthy Living, checking on the Nutritional Status of Children, counseling on how to brush their teeth properly, health checks for orphanage managers and training on disaster management. 6 percent) of the residents of the orphanage are male, almost half of them are aged 21-60 years, most (68.4 percent) have blood pressure less than 140/90 mmHg, most (73.1 percent) have normal nutritional status, almost all (94.4 percent) blood glucose less than 126 m/dL and uric acid less than 8 mg/dl. Similar activities are needed to see general body health and must be monitored periodically, so that the residents of the orphanage can find out their health status, especially now that they are still in a pandemic condition Covid-19

Abstract

The First 1000 Days of Life Movement (HPK) is also known as Scaling Up Nutrition (SUN) as a state effort to accelerate nutrition improvement, especially handling nutrition from 1000 days from pregnancy to two years of age. Pregnant women, nursing mothers, newborns and children under two years of age (baduta) are the target groups to improve the quality of life for the first 1000 days of humanity. For cadres as the spearhead of health workers who are directly involved with the community, there is still a low level of knowledge of cadres from an academic and technical perspective regarding the implementation of Posyandu. Providing 1000 HPK education is expected to be able to carry out posyandu activities optimally on target. The 1000 HPK cadre education activities showed an increase in scores for general knowledge of posyandu cadres, attitudes and actions of cadres and knowledge of balanced nutrition. The knowledge that the respondents had before being given education & training was good, this is probably due to the age characteristics that are in the range of 30-40 and the education of the respondents who graduated from high school allows the respondents to have good knowledge.
