Abstract

Antiradicals are substances with important functions for human health. Mangrove leaves are one of potential sources of natural antiradical. The objective of this research was to identify the type and fraction of mangrove leaves extract with the highest antiradical activity. The research procedure included sampling and extraction of mangrove leaves, assay of antiradical activity (DPPH), phytochemical assay and determination of IC50 for the fraction with the highest inhibition percentage. Mangrove leave samples (Rhizophora sp., Avicennia sp. and Sonneratia sp.) used in this study were collected from the Palu Bay coastal. Results showed the highest yield of extracts was from Rhizophora sp., followed by Avicennia sp. and Sonneratia sp. Inhibition percentage was higher from dried compared to fresh mangrove leaves. Additionally, the inhibition percentages of the ethanol fraction was higher than that of the ethyl acetate and n-hexane fractions, while Sonneratia sp. gave a higher inhibition percentage than Avicennia sp. and Rhizophora sp. Abstract

Increased production of catfish in Central Sulawesi was not followed by an increase in the consumption of meat catfish. Diversification of products made from meat catfish, into attractive products such as meatballs need to be done. This study aims to determine consumer acceptance of meatball use catfish meat. This study uses 4 treatments and 3 repetitions. The parameters tested in each treatment, the ash content, moisture content and organoleptic assessment. The treatments were given, namely variations in the concentration of meat catfish 200 g, 400 g, 600 g and 800 g. The results showed the ash content meatballs catfish ranging from 0.64% to 0.93%. The water content meatball catfish of each treatment ranged between 66.75% - 70%. Value organoleptic appearance meatballs catfish range of 6.33 to 6.83. Smell value of meatballs catfish ranging from 6.50 to 6.83. Flavor value of meatballs catfish ranging from 6.33 to 6.83. Texture value of meatballs catfish ranging from 6.33 to 6.83. From the results of this study concluded that the levels of ash and water content meatball catfish from each treatment were given still meet the Indonesian National Standard and meatballs catfish with meat concentrations of 600 g and 800 g preferably panelists

Abstract

The antioxidant compound is one compound that is much sought after by researchers. Antioxidant compounds could counteract free radicals easily react with molecules such as proteins, fats, carbohydrates, and DNA. Red algae Eucheuma cottonii containing bioactive potential as natural antioxidants. Drying algae by farmers generally utilize solar energy. Drying in this way can damage the content of antioxidant compounds. This study aims to assess the proper drying method in order to minimize damage to the E. cottonii antioxidant compounds. This research was using four different drying methods of treatment and 3 replicates, in the determination of IC50 values. The yield showed dried by the sun of 70.9%, dried at room temperature with the aid of a fan at 83.3%, is dried using an oven with atemperature of 70-800C for 87.8% and dried using an oven with a temperature of 50- 600C by 73%. IC50 values in the dried by the sun at 693.90 ppm, dried at room temperature with the aid of a fan at 593.19 ppm, dried using an oven with a temperature of 70-800C at 232.87 ppm and dried in an oven at a temperature of 50-600C 419.76 ppm. Levels of antioxidants found in E. cottonii either dried using an oven or dried by the sun and the temperature of the room, including the antioxidant weak.

Abstract

Mie basah merupakan mie mentah yang direbus terlebih dahulu dengan air mendidih sebelum dipasarkan. Saat ini, mie basah yang beredar di masyarakat memiliki kandungan gizi karbohidrat yang tinggi sedangkan kandungan protein dan mineral masih rendah. Oleh karena itu, penambahan mutu gizi dari mie basah dengan cara menfortifikasi mie dengan bahan lain seperti cumi cumi. Cumi cumi selain dagingnya yang mudah dicerna, juga memiliki kandungan asam amino esensial dan kaya akan mineral seperti fosfor dan kalsium yang berfungsi untuk pertumbuhan dan pembentukan tulang. Oleh karena itu, penambahan cumi cumi perlu dilakukan guna untuk meningkatkan mutu gizi dari mie. Umumnya mie basah yang beredar di pasaran hanya mampu bertahan selama ±2-3 hari pada suhu ruang. Sedangkan cumi cumi mengandung kadar air yang cukup tinggi. Kadar air yang cukup tinggi pada suatu bahan pangan, dapat memicu tumbuhnya mikroorganisme. Tujuan penelitian ini dilakukan untuk mengetahui ALT bakteri dan ALT kapang mie basah daging cumi cumi pada lama penyimpanan yang berbeda. Penelitian ini menggunakan 4 (empat) perlakuan dan ulangan sebanyak 3 kali yaitu lama penyimpanan 24, 48, 72, dan 96 jam. Hasil yang diperoleh ALT bakteri , ALT kapang dan pH pada mie basah dapat bertahan pada 48 jam pada suhu ruang sedangkan ALT bakteri, kapang dan pH pada 72 jam mie dikatakan rusak karena sudah melewati batas SNI ALT bakteri sebesar 1 x 106koloni/g dan ALT kapang sebesar 1,0 x 104koloni/g.

Abstract

Marine organisms are a source of natural products and produce compounds with a molecular structure that is unique and useful. Thousands of new compounds have biological activitity for anticancer, antiviral, and antimicrobial. This compounds isolated from various marine organism, including from marine-derived fungi. Investigation of chemical compounds from marine-derived fungi isolated from sponge has increased steadily, indicating the important role of marine-derived fungi in the discovery of drug compounds. The sponge has produced various kinds of fungi, which have reported to provide a variety of pharmacologically active metabolites and structurally diverse. Study literature showed that many fungal genera isolated from the marine sponge dominated the genus Acremonium, Aspergillus, Penicillium, Phoma, and Fusarium. The high proportion of genera and new compounds showed that the fungi isolated from the sponge could develop.

Abstract

This study aimed to evaluate the potential antibacterial and antioxidant activities of Sinulariasp. and Sarcophyton sp. from the Palu Bay, Central Sulawesi, Indonesia. Soft corals were identified as Sinulariasp. (SC1), Sinularia sp. (SC2), andSarcophytonsp. (SC3). Antibacterial activity was examined using agar diffusion well method. Antioxidant activity was measured by the DPPH radical scavenging method. The samples were macerated in MeOH: DCM. The crude extracts were partitioned with DCM, EtOAc, and BuOH. The crude extract of Sinulariasp. (SC2) showed a very strong antibacterial activity as it was able to inhibit the growth of Staphylococcus aureusand Escherichia coliup to 10 mg/mL. Sinularia sp. (SC1) crude extract showed strong activity againstS. aureus, whereas it showed moderate against E. coli.Sarcophyton sp. (SC3) crude extract showed moderate activity against S. aureus, whereas it showed weak against E. coli. The partition fractions of the three soft coral extracts had the potential to be a potent antioxidant agent.

Abstract

There is a growing need for new antibacterial agents, in particular because many antibiotics are becoming ineffective due to the emergence of resistant bacterial strains. Soft corals of the Genus Sinularia, Family Alcyoniidae, have potential as a source of terpenoid and steroid compounds with antibacterial activity. These corals may vary in external morphology (shape, colour, size).The aim of this research was to identify extracted fractions with high antibacterial activity. Sinularia sp. specimens were extracted, fractionated based on solvent polarity, and tested for antibacterial bioactivity against pathogenic bacteria (Escherichia coli and Staphylococcus aureus). Antibacterial activity of the three fractions varied in strength. The dichloromethane fraction showed strong antibacterial activity, inhibiting S. aureus and E. coli growth at a concentration of 1 mg ml-1, while the ethyl acetate and ethanol fractions were effective at 10 mg ml-1 and 100 mg ml-1, respectively.

Abstract

Soft coral genus Sinularia be a sources of terpenoid compounds that show efficacy in vitro cytotoxic test using cancer cell lines. The study looked at the morphological changes that occur in fungal mycelial growth of Pyricularia oryzae, such as curling effect indicating antimitotic activity. Four extracts of soft coral genus Sinularia have been examination and this is an primary test to obtain information about the soft coral genus Sinularia that used as sources of compound antimitotic. This research was conducted in several stages, ie extraction of bioactive substances, P. oryzae fungal culture test, and biological testing antimitotic activity with a qualitative assessment methods. From the examination the Sinularia 3 ethyl acetate fraction show the strongest antimitotic activity (to concentration 1,5 μg/ml). Ethyl acetate fraction was purified using column chromatography. From the examination show that fraction of ethyl acetate 1 is the best fraction because still show curling effect on concentration 0,7 μg/ml.Keywords : Antimitotic, Soft Coral, Sinularia, microtubule, Pyricularia oryzae

Abstract

ABSTRACTMangroves are plants with good tolerance to salinity changes, developing a chemical defense system with pharmacological value. This study aimed to obtain a GC-MS profiles of Rhizophora apiculata mangrove leaves extract, which could scavenge DPPH radicals and inhibit the growth of Listeria monocytogenes, Salmonella typhimurium, and Pseudomonas aeruginosa. The research included sampling, extraction (maceration with MeOH:DCM), identification of chemical profiles using GC-MS spectra analysis, assaying for antibacterial activity (well diffusion method), and antioxidants (DPPH radical scavenging). Mangrove leaves sampling was carried out on Laemanta, Parigi Moutong, Central Sulawesi. Based on the leaves’ characteristics and tips, the types of roots, fruits, and flowers, the mangrove leave samples were identified as R. apiculata. The GC-MS profiles of R. apiculata leaves extract was dominated by mome inositol (75.6%). The antibacterial assay showed at a concentration of 100 mg/mL of R. apiculata leaves extract showed weak to strong antibacterial activity, with the inhibition zone diameter of P. aeruginosa (1.22 ± 0.39 mm), S. typhimurium (3.00 ± 1.20 mm), and L. monocytogenes (17.22 ± 1.26 mm). The leaves extract of R. apiculata showed antioxidant activity, with an IC50 value of 96.68 ± 0.68 µg/mL. Based on the results, the mangrove leaves of R. apiculata extracts showed potential antibacterial and antioxidant activity. This study indicated that R. apiculata from Central Sulawesi were potential mangroves to discover and develop antibacterial and antioxidant agents.Keywords: GC-MS, Listeria monocytogenes, Parigi Moutong, Pseudomonas aeruginosa, Salmonella typhimurium.ABSTRAKMangrove merupakan tumbuhan dengan toleransi baik terhadap perubahan salinitas, sehingga mengembangkan suatu sistem pertahanan kimia yang bernilai farmakologis. Penelitian ini bertujuan mendapatkan profil senyawa dengan GC-MS dari ekstrak daun mangrove Rhizophora apiculata yang dapat menangkap radikal DPPH dan menghambat pertumbuhan Listeria monocytogenes, Salmonella typhimurium, dan Pseudomonas aeruginosa. Penelitian meliputi pengambilan sampel, ekstraksi daun mangrove (maserasi dengan MeOH:DCM), identifikasi profil senyawa dengan analisis spektra GC-MS, pengujian aktivitas antibakteri (metode difusi sumur) dan antioksidan (penangkapan radikal DPPH). Pengambilan sampel daun mangrove dilakukan di pesisir Desa Laemanta, Kabupaten Parigi Moutong, Sulawesi Tengah. Berdasarkan karakteristik bentuk dan ujung daun, jenis akar, buah, dan bunga, sampel daun mangrove terindentifikasi Rhizophora apiculata. Profil GC-MS dari ekstrak daun R. apiculata didominasi oleh senyawa mome inositol (75,6%). Hasil pengujian antibakteri pada konsentrasi 100 mg/mL ekstrak daun R. apiculata menunjukkan aktivitas antibakteri yang lemah sampai kuat, dengan diameter zona hambat pada P. aeruginosa (1,22 ± 0,39 mm), dan S. typhimurium (3,00 ± 1,20 mm), L. monocytogenes (17,22 ± 1,26 mm). Ekstrak daun R. apiculata menunjukkan aktivitas antioksidan dengan nilai IC50 sebesar 96.68 ± 0.68 µg/mL.  Berdasarkan hasil pengujian ekstrak daun mangrove R. apiculata menunjukkan aktivitas antibakteri dan antioksidan. Abstract

Mangrove Avicennia sp. merupakan spesies mangrove yang penting, karena telah digunakan sebagai obat tradisional. Tujuan penelitian ini, yaitu mendapatkan fraksi ekstrak daun mangrove Avicennia sp. yang memiliki bioaktivitas antibakteri terhadap S. aureus dan E. coli. Sampel daun mangrove dikoleksi dari pesisir pantai di Kelurahan Kabonga Besar Kabupaten Donggala Sulawesi Tengah. Metode Pengujian antibakteri menggunakan difusi sumur agar. Hasil penelitian menunjukkan kehadiran senyawa steroid, triterpenoid, flavonoid, alkaloid dan polifenol. Aktivitas antibakteri ditunjukkan fraksi etil asetat (S. aureus 16.97 ± 1.15 mm dan E. coli 14.40 ± 0.46 mm) dan etanol (S. aureus 12.20 ± 2.12 mm dan E. coli 8.13 ± 0.42 mm) pada 1,000 mg/mL. Penelitian ini telah mengeksplorasi kemampuan antibakteri ekstrak daun Avicennia sp. dalam pelarut n-heksan, etil asetat dan etanol. Analisis fitokimia dari berbagai ekstrak pelarut menunjukkan bahwa flavonoid dan tanin adalah umum dalam semua ekstrak tanaman dengan sifat antibakteri. Ekstrak daun Avicennia sp. dapat digunakan untuk menemukan produk alami bioaktif baru dan dapat digunakan sebagai sumber potensial yang dapat mengendalikan bakteri patogen.Kata Kunci : Escherichia coli, Staphylococcus aureus, Bioaktif, Donggala, Sulawesi Tengah ABSTRACTMangrove Avicennia sp. an important mangrove species, because it used as traditional medicine. The results showed the presence of steroid, triterpenoids, flavonoids, alkaloids and polyphenols compounds. Antibacterial activity showed by ethyl acetate fraction (S. aureus 16.97 ± 1.15 mm and E. coli 14.40 ± 0.46 mm) and ethanol (S. aureus 12.20 ± 2.12 mm and E. coli 8.13 ± 0.42 mm) at 1,000 mg/mL. This study has explored the antibacterial ability of Avicennia sp. leaves extract in n-hexane, ethyl acetate, and ethanol. Phytochemical analysis of various solvent extracts shows that flavonoids and tannins are common in all plant extracts with antibacterial properties. Avicennia sp. leaves extract can be used to find new bioactive natural products and can use as a potential source that can control pathogenic bacteria.Key Words : Escherichia coli, Staphylococcus aureus, Bioactive, Donggala, Central Sulawesi
