Abstract

The aim of this study was to determine the effect of tempe drink intervention on blood pressure of hypertension and also hypercholesterolemia subjects. This study used a Randomized Controlled Trial (RCT) design with 30 males and females subjects, who were divided into three treatment groups-tempe drink of A formulated from local sprouted soybean (TDA), tempe drink of B formulated from imported soybean (TDB), and control. The inclusion criterias were adults aged 25-55 years, not being menopause and pregnant, total cholesterol levels ≥200 mg/dl, systolic blood pressure level 121-139 mmHg, diastolic blood pressure level 81-89 mmHg and willing to partcipate in research by signing an informed consent. The tempe drink was given three glasses a day for four weeks continuously, contained at least 25 g of protein/day. The control group was not given the tempe drink. Blood pressure data were collected every week during intervention. The results showed that the effect of TDA and TDB compared to control subjects on systolic blood pressure was significantly different. Other ways the effect of TDA and TDB compared to control subjects on diastolic blood pressure was not significantly different, but the trend was decreasing.

Abstract

This study aimed to develop high antioxidant cake product with red palm oil (RPO) content to substitute the use of margarine as a potential functional food. This study used a complete randomized design with four levels of RPO substitution for margarine, namely F0 (0:100), F1 (80:20), F2 (90:10), and F3 (100:0). Organoleptic results showed that high antioxidant cake F3 was best in which also contained the highest RPO addition level. The high antioxidant cake F3 had yellow colour, hardness of 650.67 gf, bulk density of 0.27 g/ml, 4.31% moisture, 1.48% ash, 21.66% fat, 9.76% protein, 62.80% carbohydrate, 40.74 ppm/100 g β-carotene, and the 470.44 mg/100 g antioxidant activity. Thus the product can be categorized as high in β-carotene. Therefore, this product has a potential to be a functional food options, especially for atherosclerosis prevention.

Abstract

This study aimed to develop an organoleptic acceptable cream soup formula made from combination of black soybean (Glycine soja L. merrit) and red rice (Oryza nivara) which met the nutritional requirements and contained antioxidants in the form of snack as a functional food for menopausal women. This study used a completely randomized design (CRD) with three treatment levels combination of black soybeans and red rice, namely F1 (80:20), F2 (70:30), and F3 (60:40). The results of the hedonic organoleptic test showed that the selected formula was F1 functional cream soup product. The nutrient content analysis showed that the product contained 1.98% water, 1.88% ash, 4.00% fat, 13.36% protein, 78.76% carbohydrates, 17.87% total dietary fiber, 10.71% soluble dietary fiber, 162.59 μg/g total isoflavones, and 254.58 μg/g total anthocyanins. Each portion of the F1 product could contribute 10.66% and 11.73% of the recommended dietary allowances (RDA) for energy and protein for women of menopausal age, respectively. Each portion also had an antioxidant activity of 723.73 mg/100 g (AEAC). The product is safe to consume because its total microbial content was 3.4 x 102 colonies/g. The resulting product has the potential to be a functional food due to its fiber, total isoflavones, and total anthocyanins contents, as well as its antioxidant activity.

Abstract

The objective of this study was to analyze the associations between nutritional status, health status, other determining factors with work productivity of cocoa farmers. This cross-sectional study involved 58 male cocoa farmers aged 18–65 years old in two districts of Polewali Mandar. Data on food consumption and habit as well as health status were collected via structured interviews. While, blood pressure and anthropometric parameters were measured using standard equipment of blood pressure meter, weight scale, and height scale. Spearman’s test and Principal Components Regression (PCR) analysis were implemented to explore factors associated with farmers’ work productivity. There was no relationship between Body Mass Index (BMI) and work productivity. However, there was a significant positive association between central obesity with days of absent (r=0.275; p=0.037). We also found negativeassociation between blood pressure and the amount of cocoa picked daily (r=-0.366; p=0.005). PCR statistical analysis results showed that the amount of cocoa picked per day were significantly associated with smaller waist circumference, coffee consumption, and good exercise habit. While, decrease in consumption of fruits and vegetables was significantly associated with the number of absence days due to health problems. Thus, it can be concluded that work productivity of male cocoa farmers was associated with food consumption, physical activity, and lifestyle factors.

Abstract

This study aimed to analyse the antioxidant activity, total phenols, and flavonoids of kersen leaves (Muntingia calabura L.) extract (KLE) and determine the hepatoprotective activity of KLE in soft drink induced mice. Soft drinks induction causes liver injuries which increases the serum glutamic oxaloacetic transaminase (SGOT) and serum glutamic pyruvic transaminase (SGPT) levels. Mice were divided into five treatment groups (n=5) and were given Tween 80 (1%) (normal control), Tween 80 (1%) and 7 ml soft drinks (negative control), KLE (1000, 1500, and 2000 mg/kg), and 7 ml soft drinks per oral once daily for 4 weeks. Antioxidant activity was measured by 2.2-diphenyl-1-picrylhydrazyl (DPPH) method. Total phenols and flavonoids were analyzed by Folin-ciocalteu colorimetric and aluminium chloride (AlCl3) method. The blood samples were collected for biochemical analysis. The result showed that the KLE antioxidant activity were 11.11+0.50 ppm. Total phenols and flavonoids detected in the KLE samples were 2.19+0.12 mgGAE/g and 2.43+0.24 mgQE/g respectively. Mice treated with KLE had a significantly lower (p<0.05) serum SGOT and SGPT levels than negative control group. In conclusion, KLE has a potential hepatoprotective activity that works in synergy with its antioxidant activity.

Abstract

The aimed to analyze the effect of protein-sourced supplementary foods for pregnant women with CED to improve fetal growth. The pre-post study test involved 44 pregnant women with a Mid Upper Arm Circumference (MUAC) of <23.5cm in Bogor City, West Java. The subjects were divided into two groups, first was the PG group, consist of pregnant women who received the protein-sourced supplementary foods. The second was the PCG group where the pregnant women recieved the standard government supplementary food (GSF) for eight weeks. Data regarding the fetal growth was obtained using USG, the inidactor measured were the femur length and estimated fetal weight. The increase of femur length and estimated fetal weight were used as the fetal growth parameters. Analysis of Covariance was applied to obtain the effect of intervention by controlling other covariate variables. The result showed that the improvement of estimated fetal weight (EFW) and femur length (FL) in both groups were similar (p>0.05). Despite the fact that the PG group showed lower compliance compared to the PCG (p>0.05). The findings suggest that our protein-sourced supplementary foods had a similar effect with the GSF on fetal growth of pregnant women with CED.

Abstract

This study aims to evaluate calcium bioavailability through serum calcium level in pregnant rats treated with two Milk-Based Drinks (MBD) containing Lactic Acid Bacteria (LAB), i.e Lactobacillus Casei Shirota Strain (LcS) drink, and Four Strains Bacteria (FS) (Lactobacillus rhamnosus, Lactobacillus paracasei, Lactobacillus delbrueckii subp. bulgaricus, Streptococcus thermophiles). It was a completely randomized experimental study using 24 Sprague Dawley rats. Rats were divided into one negative control group with a normal nutritional status (A0) and three undernourished groups. The undernourished groups were divided into one positive control group (A1), one group receiving MBD containing LcS group (A2), and another group receiving MBD containing FS (A3). All rats received high protein diets during pregnancy. The intervention was started in early pregnancy (D0) until 19 days of pregnancy (D19). Blood samples were collected at the D0 and D19. No significant differences in food intake were found among the rats in all groups. Administration of MBD containing LAB in A2 and A3 showed significant (p<0.05) increment of calcium bioavailability (30.79±6.88%; 20.44±9.04%). Both MBDs treatment containing LAB showed no significant difference in serum calcium bioavailability (p>0.05). The results suggest that MBDs containing LAB are useful in enhancing calcium bioavailability.

Abstract

Culture plays an important role in food availability and consumption pattern, which then affects nutritional status and health. The objectives of the study were to analyze (1) socio-economic characteristics of household, (2) nutritional status of children, and (3) coping mechanism to support food access. The study was conducted in Ciptagelar Traditional Community, West Java from March-October 2013. Total sample was 65 households. The average income per capita per month was Rp285.753,00 and total expenditure was Rp393.590,00. The underweight prevalence among children was 12.5%, stunting 31.2%, and wasing 12.5%. Coping mechanisms to face income constraint were buying cheaper foods, reducing kinds of food consumed, and changing food priority.

Abstract

Phytosterol may reduce the absorption of cholesterol, and used for preventing atherosclerosis. It is limited in soybean, but potentially abundant in wheat germ. Research on the utilization of wheat germ sterol had not been reported so far. Many aspects of germ sterol extraction from wheat germ and its characteristics were still unknown. In this research, the best extraction method, kinds and content of phytosterol from wheat germ were investigated. This research consisted of two steps: (1) extraction of phytosterol directly form whole germ and ground germ using hexane, and indirect extraction through germ oil using hexane and mixed solvent of hexane and ethanol, and direct extraction from ground germ using ethanol; (2) analysis of the type and content of phytosterol in the crude extract through the following steps: preparation of crude extract, fractionation, and analysis. Results showed that indirect extraction through germ oil was considered as the best method which yielded 1.37% of phytosterol. The highest yield was obtained when extracted using a mixed solvent of hexane – ethanol 82:18. However, the odor of ethanol and hexane (gasoline like odor) was still detected. The solvent’s ratio of hexane to ethanol at 1:2 resulted better odor of the extract. Extraction of sterol using ethanol yielded 18.39% of sterol when the ratio of germ to ethanol at 1:10 (w/v) was applied. Results of quantitative analysis on the main component of crude extract of wheat germ sterol showed that the total content of sterol extracted with mixed solvent was higher than those extracted with ethanol. The ratio of hexane to ethanol at 1:1 (v/v) gave higher content of total sterol, stigmasterol and campesterol, whereas higher content of -sitosterol was produced at the solvent’s ratio of hexane to ethanol at 1:2 (v/v).

Abstract

Margarine is a water in oil (w/o) emulsion product which is widely used for household cooking and baking industry. Consuming of margarine, which contains trans fatty acid may cause health problem due to the increase of LDL cholesterol. Since margarine is also a good carrier of phytosterol which prevent the absorption of cholesterol, there is a possibility to formulate a healthier margarine. In this research formulation and characteristics of products was investigated. The research work consisted of two steps: (1) supplementation of wheat germ sterol into margarine (two methods) and  (2) analysis of physical, chemical characteristics and hedonic score. Parameters of physical characteristics were melting point and emulsion stability, whereas chemical characteristics were water and oil contents. The hedonic test was carried out based on product’s color, odor, taste, texture, and spreadability. Results showed that method II of supplementation produced better margarine than method I, in which the concentration of sterol in the margarine was higher with a melting point similar to that of control, better emulsion stability, and higher hedonic score. Supplementation process was carried out by mixing sterol into fat phase melted at 50 0C, followed by mixing with aqueous phase at 4 0C. Sterol used for method II was extracted using mixed solvent of hexane and ethanol at the ratio of 1:2 (v/v), which was resulted from previous experimentation.
