Abstract

Pliek u obtained by traditionally fermentation of coconut meat is a potential source of antimicrobial compounds. This research was aimed to detect of their active compounds by bioautographic method and to analyze their chemical composition by GC-MS. For this purposes, pliek u was extracted with ethanol 96% to get crude ethanol extract of pliek u (EEP) and to get ethanol extract of residual pliek u (EERP) which was previously extracted by hexane. Crude EEP was separated into four bioautographic spots with different Rfs (0.93, 0.71, 0.19, and 0.10) which were all shown to be active against Staphyloccoccus aureus. Similar result was shown by EERP, but only resulted three bioautographic spots (Rfs 0.77, 0.63, and 0.4). Crude EEP consisted of 22 components representing 99.98% with fatty acids, ester, alcohol as major constituents and aliphatic hydrocarbon. EERP consisted of 9 components representing 99.80% with alcohol as major constituents and fatty acids, ester, 4-Dibenzofuramine and amine as minor constituents. The present of many active compounds in pliek u supports the use of pliek u as spice to improve the quality of food and encourages further studies to determine those active compounds. Key words: antimicrobe detection, chemical composition, pliek u

The results of this study showed that most of the costumer's belief that the chicken meat was sold with halal standard. The majority of consumers mentioned that their beliefs was based on the basis of knowing the butcher which is a Muslim (36.69%). In addition, most consumers ( 90%) expressed confidence in the status of thayyiban (safe, healthy and intact) of broiler chicken which sold in all three markets. Age, level of education, and occupation are the factors that affect the mindset of consumers perception in choosing chicken meat that halal thayyiban. On the other hand, the economic status of consumers also can affect the consideration of the halal, thayyiban, when buying chicken at the market. In conclusion, the status of halal and thayyiban of broiler chicken meat is very important for consumers.

Abstract

The aims of this research were to compare the physical charateristic of meat with or without the addition of curry leaf and to find out the organoleptic of meat added with curry leaf. This research used complex randomized design method. 500 grams beef sample were cut into square-shape at 2x2x2 cm  and divide into 3 groups and  then added a curry leaf infuse with different concentration of 0%, 25%, and 50%. Then, the meat was boiled at 70-80oC for 45 minutes. The parameters observed were pH, water holding capacity, cooking loss, and organoleptic (colour, taste, and aroma). The result showed that the use of curry leaf infuse in various concentration did not have significant effect on pH, water holding capacity, and cooking lost, but significantly effect (P0,05) on organoleptic value. Fresh meat that was added the curry leaf infuse 50% was well-liked for the colour, taste, and aroma  compare to the meat without the addition of curry leaf infuse.

Abstract

This study aimed to determine early spoilage of beef after addition of curry leaf extract. The sample used is beef Semimembranosus muscle which is divided into 42 parts each weight is 5 grams. This research used experimental method which consists of three treatments with two repetitions. P1 group is without curry leaf extract (control), group P2 with curry leaf extract 25% used and group P3 with curry leaf extract 50%. The entire sample is stored in a refrigerator at 4 ° C. For 7 days early spoilage test is conducted every day at 9am and 4pm. The result showed difference early spoilage time between each treatment. In P1 positive result of early spoilage time is on the 4th day and P2 positive result of early spoilage time is on the 5th day. While in P3 has not obtained positive result of early spoilage time at 7 days storage. Based on the results of this study we concluded that curry leaf extract can slow down the early spoilage time of beef

Abstract

The aim of this research was to study the effect of jaloh leaf extract combined with turmeric extract on the quality of broiler meat infected with Eimeria tenella (E.tenella). Sample used in this research was 20 broilers, strain Cobb aged 15 days and given treatment of jaloh extract and turmeric extract for 10 days. Meat examination was conducted after 5 days of E.tenella oocyst inoculation. There were 5 groups in this experiment (n=4), P1 as negative control was given mineral water, P2 was given commercial anti-stress 5mg/L per day, P3 was given jaloh extract 1000mg/L per day, P4 was given turmeric extract 250mg/L per day, and P5 was given jaloh leaf extract 1000mg/L combined with turmeric extract 250mg/L per day. After 25 days, all groups were infected with 1x104 concentration of E. tenella oocyst per chicken. Parameters observed in this research were organoleptic test and Postma test. The result showed that jaloh leaf extract combined with turmeric extract did not affect the quality and meat decomposition after infected with E. tenella.
