Abstract

Latar Belakang: Tercukupinya kebutuhan asupan asam lemak tidak jenuh ganda (polyunsaturated fatty acids, PUFA) ibu menyusui diketahui memiliki peran penting dalam mendukung pertumbuhan dan perkembangan otakbayi. Peran asupan PUFA ibu menyusui dalam mendukung tumbuh kembang bayi adalah melalui perantara ASI. ASI merupakan sumber utama zat gizi bayi baru lahir, salah satunya adalah PUFA. Studi menunjukkan bahwa asupan PUFA ibu menyusui di Kota Bogor masih sangat rendah terutama EPA dan DHA. Rendahnya asupan PUFA ibu menyusui  diduga berpengaruh terhadap pertumbuhan otak bayi yang dalam penelitian ini diestimasi dengan ukuran lingkar kepala.Tujuan: Penelitian ini bertujuan menganalisis hubungan asupan PUFA ibu menyusui dengan kandungan PUFA ASI dan lingkar kepala bayi baru lahir.Metode: Analisis data sekunder menggunakan data hasil penelitian hibah BASF South East Asia yang telah dilakukan pada bulan April-Oktober tahun 2018 di Kota Bogor oleh tim SEAFAST CENTER IPB. Subyek merupakan ibu ibu menyusui berusia 18-45 tahun yang melahirkan bayi tunggal . Total terdapat 79 data ibu dan bayinya yang meliputi data asupan PUFA saat menyusui , kandungan PUFA ASI, lingkar kepala bayi, karakteristik ibu dan bayinya, kondisi sosial-ekonomi ibu, dan IMT pra-hamil. Analisis data dilakukan menggunakan uji korelasi Spearman.Hasil: Rata-rata asupan PUFA ibu saat menyusui  tergolong rendah (< 80% tingkat kecukupan) serta belum memenuhi rekomendasi asupan PUFA. Asupan LA ibu berhubungan signifikan positif dengan kandungan LA ASI (p = 0,012), sedangkan asupan ALA ibu memiliki hubungan signifikan negatif dengan kandungan ALA ASI (p = 0,027). Lingkar kepala bayi tidak berhubungan signifikan dengan asupan ibu saat menyusui dan kandungan PUFA ASI (p > 0,05).Kesimpulan: Asupan PUFA ibu menyusui tidak berhubungan dengan kandungan PUFA ASI dan lingkar kepala bayi.

Abstract

The unhealthy Lifestyle of office employees may affect cardiovascular disease risk and other chronic illnesses. In this ongoing COVID-19 pandemic, there’s a decrease in physical activity and exercise intensity in-office employees, while increasing psychological stress may reduce physical fitness. One of the solutions to these problems is by implementing tele-counseling and tele-exercise technology. The purpose of this study is to test the effects of tele-exercise and tele-counseling intervention against obese employees’ fitness levels. This study uses a pre-post-test quasi-experimental design on one group without a control group, with subjects consisting of males and females with BMI 25-30 kg/m2. Subjects received tele-exercise intervention for 30 minutes per session, three sessions per week for 12 weeks, while tele-counseling was done by Zoom and WhatsApp every day. Fitness tests include 1-minute push-up and sit-up count, sit-and-reach, and bleep test. Subjects experience significant improvement on all aspects of fitness level (strength, flexibility, and cardiorespiratory fitness), with the most significant improvement being flexibility. This study proves that tele-exercise and nutrition tele-counseling is an effective program to improve obese employees’ wellness. Moreover, this method is a good alternative for substituting direct, face-to-face exercise and nutrition counseling in this pandemic time.

Abstract

The problem of overnutrition and obesity tend to increase year by. Office employee are susceptible to physical inactivity and obesity. In context of current pandemic, exercising via online media, termed ‘tele-exercise’ may be an effective alternative intervention. However, the effect of compliance and timing of exercise on overall health-related output are still not often discussed. The purpose of the study is to compare the effect of tele-exercise done during working hours vs. after working hours on obese office employee’s weight loss and improvement of body fat percentage, as well as their relation to compliance level. The design of this study is quasi-experimental design, with obese office employee as participants, which then grouped into after work exercise (AW, n = 36, 1-hour duration) and mid-work exercise (DW, n = 21, 30-minute duration). Total sampling was used since the target population were under 100 people. Exercises were done 3 times/week for 12 weeks. Data collected were sample characteristics, bodyweight, and percentage of body fat. Both timing of intervention is effective on reducing body weight significantly (p<0.05). Significant reduction (p<0.05) on percentage of body fat is only occurring in DW group. Compliance level for AW and DW group are 63.75% and 61.23%, respectively, and being insignificant to each other (p>0.05). The contribution of compliance in shorter exercise/DW on body fat loss and weight loss is 23.1% and 20.9%, respectively; while the contribution of compliance in longer exercise/AW is 11.3% on body weight loss. A short, mid-working exercise have the similar or even better effect than 1-hour after-work exercise session on weight loss and body fat loss. We recommend tele-exercising during working hours for at least 30 minutes to achieve significant body weight and body fat loss.

Abstract

This review assessed the effect of Ready-to-Use Therapeutic Food (RUTF) on children under five years with Severe Acute Malnutrition (SAM). The reviewed studies were obtained from six databases. Using the search strategy, 3,521 studies were selected. After title and abstract screening, 75 studies were obtained for further full article screening. The inclusion criteria were types of study (RCT, quasi-RCT, or crossover), participants (SAM children aged 6−60 months with no complications), interventions (locally produced RUTF and standard RUTF), and outcome measures (recovery rate, mortality rate, weight gain rate, height gain rate, length of stay, weight-for-age z score, height-for-age z score, weight-for-length z score, anemia status, blood iron status, serum albumin, plasma amino acid level, adverse effects and acceptability of RUTF). A total of 33 studies were included in this review. Nine out of twenty-two studies that used standard RUTF had positive effects on recovery outcomes in children with SAM. The alternative RUTF produced from local protein sources showed slightly lower positive effects on SAM treatment than those of standard RUTF. Since the studies used different methods to assess the outcome, no formula could be selected as the best formula and selection should be made based on individual research objectives. In conclusion, both standard and the alternative locally produced RUTF can be applied for treatment of SAM by considering the local preferences, ingredients availability, production sustainability and product safety.

Abstract

Food labelling is an effective tool in protecting consumer health with respect to safety and nutrition. Complying with labelling regulations is essential in preventing product recalls. Thus, the objective of this study was to determine the extent of adherence to food labelling regulations by micro and small-sized enterprises (MSEs) in Wonosobo District, in accordance to the existing guidelines. Primary data were collected through a market survey approach, with analysis conducted through purposive sampling in shops, stalls, home industries, markets, and supermarkets. Content analysis was employed to evaluate four categories of processed food: flour/starch-based products, water-based flavored drinks, processed fruit products, and processed grain, nut, and tuber products, totaling 92 products. The compliance level with labelling regulations was evaluated based on the principal display panel, labelling formats, general labelling requirements, and prohibited statements on the label. The results revealed that the compliance level of labelling flour/starch-based products was good, with an average of 75%. In contrast, the average compliance level for water-based flavored drink products was 58%, while the average compliance levels for processed fruit products and processed grain, nut, and tuber products were 54 and 59%, respectively, indicating a lower level of compliance compared to flour/starch-based products.

Abstract

This study aimed to determine the nutritional content of the block, crystal, and liquid coconut sugar, along with the preferred coconut sugar type, through sensory analysis. The design of this research was descriptive analysis. The nutrient content analysis method was carried out proximately, while sensory analysis used a hedonic test and a hedonic quality test. The results showed that crystal coconut sugar had the highest energy, fat, protein, and carbohydrate content of 377 kcal/100g, 0.56 percent, 1.29 percent, and 91.7 percent, respectively. Block coconut sugar presented energy of 363.14 kcal/100g, 0.46 percent fat, 1.2 percent protein, and 88.55 percent carbohydrates. Meanwhile, liquid coconut sugar showed 293.7 kcal/100g of energy, 0.22 percent fat, 1.24 percent protein, and 71.69 percent carbohydrates. The results of the sensory analysis showed no significant differences between each form of coconut sugar in aroma (p=0.66) and texture (p=0.08) elements from the hedonic test. Additionally, there were significant differences in the color and taste attributes (p=0.00). Contrastingly, the hedonic quality test showed significant differences in all attributes of all forms of coconut sugar. Besides, crystal coconut sugar was preferred over the block and liquid coconut sugar. It has a slightly typical brown sugar aroma, insignificant fine to fine texture, dark brown to light brown color, and slightly sweet to sweet taste. Therefore, crystal coconut sugar is the most preferred form with the highest nutritional content.

Abstract

Sebanyak 25 tikus jantan Spraque Dawley umur dua bulan digunakan dalam penelitian ini. Tikus dibagi atas lima kelompok perlakuan yaitu A (normal + diet standar), B (hiperglikemik + diet standar), C (hiperglikemik + 20% bubuk tempe segar), D (hiperglikemik + 20% bubuk tempe instan), dan E (hiperglikemik + 35% bubuk tempe instan). Tikus dikondisikan menjadi hiperglikemik dengan induksi streptozotocin dosis tunggal 45 mg/kg bb intraperitoneum. Diet tempe diberikan selama 8 minggu. Hasil penelitian memperlihatkan bahwa rata-rata kadar MDA kelompok A; B; C; D; dan E masing-masing adalah 2,16; 3,67; 3,13; 3,08; dan 2,98. Substitusi 35% bubuk tempe instan pada diet standar dapat menurunkan kadar MDA serum tikus hiperglikemik yang paling tinggi.

Abstract

Abstrak Tujuan penelitian ini adalah menguji metode in vitro yang paling potensial digunakan dalam skrining indeks glikemik (IG) pada nasi yang menurut literatur memiliki IG berbeda (rendah, sedang dan tinggi). Metode Englyst et al. (2003) dan Argyri et al. (2016) menjadi metode in vitro terpilih yang diuji validitasnya untuk mengetahui kemampuan keduanya dalam menggolongkan pangan sesuai hasil pengujian IG in vivo. Sebanyak enam varietas beras dimasak menggunakan rice cooker kemudian nasi diuji kadar proksimat (protein, lemak, air, abu, karbohidrat), serat pangan total, amilosa, amilopektin dan pati. Sebanyak 20 orang yang memenuhi kriteria inklusi dibagi dalam dua kelompok sebanding untuk diukur kadar gula darah 2 jam setelah mengonsumsi makanan. Nasi hitam Cirebon, Cisokan dan Inpara 5 memiliki IG sedang, sedangkan nasi Inpari 24, Sintanur dan ketan Grendel tergolong IG tinggi. Kadar glukosa nasi pada metode Englyst et al. (2003) menit ke-20 dan Argyri et al. (2016) menit ke-120 apabila dibuat pemeringkatan terendah hingga tertinggi menunjukkan urutan peringkat yang sesuai dengan urutan nilai IG in vivo. Kesimpulan penelitian ini adalah metode Argyri et al. (2016) menunjukkan hasil yang lebih mendekati nilai IG in vivo dan prosedur pengukuran yang dilakukan lebih mirip dengan proses pencernaan pada tubuh manusia, sehingga metode ini lebih direkomendasikan dalam memperkirakan pengkategorian IG in vivo pada sampel berupa nasi (r2=0,461, p<0,01).Kata kunci: indeks glikemik, in vitro, nasi Abstract  The aim of this study was to test the most potential in vitro methods to used in screening the glycemic index (GI) of rice which according to the literature had different GI category (low, medium, high). Englyst et al. (2003) and Argyri et al. (2016) became the selected in vitro method that tested their validity by determine their ability to classify food according to the results of in vivo GI. Six rice varieties were cooked using a rice cooker then tested for proximate analysis (protein, fat, water, ash, carbohydrate), total dietary fiber, amylose, amylopectin and starch. A total of 20 subjects who met the inclusion criteria were divided into two comparable groups to measure their blood glucose levels for 2 hours after consuming test food. Cirebon black rice, Cisokan and Inpara 5 have moderate GI, while Inpari 24, Sintanur and Grendel glutinous rice were classified as high GI. Glucose levels of rice as measured by Englyst et al. (2003) at 20th minute and Argyri et al. (2016) at 120th minute has a comparable rank with in vivo GI. The conclusion of this study is method by Argyri et al. (2016) showed results that were closer to the in vivo GI and the measurement procedure was more similar to the digestive process in the human body, thus its became more recommended method to estimating the categorization of in vivo GI in rice samples (r2=0,461, p<0,01).
